Choc Banana Mud Muffins (egg,dairy,gluten and nut free)

It's Allergy Aware Week this week so I thought it would be a good time to share this recipe from my blog. http://www.marinyacottagekitchen.com/recipes.html

Chocolate banana Mud Muffins
2 x 400g Cans of black beans or kidney beans strained and rinsed
2/3 cup of  mashed banana (approx 2)
4 tablespoons of coconut oil (substitute with other oil for coconut allergy)
3/4 cup of Carob powder
1 vanilla bean
3/4 cup of Rapadura sugar
1 1/2  teaspoon of allergy free baking powder

Preheat oven to 180 degrees Celsius and line or grease muffin tray. Place beans in the food processor and puree.  Cut the vanilla bean and scrape seeds into the the bean mixture. Add the sifted cocoa/carob, baking powder,banana, coconut oil and rapadura sugar. Blend until well combined. Spoon mixture into muffin trays and bake in the oven for 25. Leave to cool in pan before gently removing. They will be crunchy on the outside and soft in the middle
Note: If you are making this for an allergy sufferer, please ensure that the cake is made using very clean utensils and that you cook and store it in an area away from the allergens.

Thanks for the recipe MCK, it sounds a good one for those with food intolerances (or even those who haven't).

I made these today and unfortunately, depsite smelling and looking delicious, they're far too rich for our tastes and I don't think I will be making them again.

I made these today and they were delicious!  Next time I make them I think I'll just try chucking all the ingredients in together at once.   I just used cocoa and raw sugar.  The cooking took a bit longer for me, I made normal size muffins which took around 35-40 minutes to cook.  I also made mini muffins (with a teaspoon or so of mixture)  and these took about 25 minutes in my oven.

The mini muffins turned out better, they all rose nicely but the normal size ones sank in the middle.

Amy perhaps you could halve them and serve with custard for dessert.
May all dairy items in your fridge be of questionable vintage.

Good idea Cookie :) I put them in the freezer because I wasn't sure what else to do with them, but that will be a good way to use them up over the next couple of weeks.
