Dots Chicken and mushroom pies

Dots Chicken and mushroom pies :
Number of People: 4 pies
I made double the pastry for this amount of filling.

PASTRY
Ingredients:
225 g        Flour SR
1 teaspoon        salt
110 g        marg or butter
2 Tbs        water chilled

       FILLING
1 small bunch        parsley
20 g        butter
1 small        onion
1 clove        garlic
400 g        chicken ready cooked (approximate amount)
60 g        mushrooms(I used chestnut mushrooms)
2 Tbs        cream
2 Tbs        yogurt
1 tsp        salt
½ tsp        pepper
2 tsp        chicken stock powder


Preparation:
PASTRY (Basic shortcrust)
1   Put the flour and salt in the TMB Add the butter cut in 2 cm cubes.. Mix 5secs/speed 4 till it looks like breadcrumbs
2   Add the water. Mix 5secs/speed 4 or until it just comes together when you press your fingers together. You can over mix so be careful and check it after each 5 secs. It should look like small pebbles (not one whole lump) if it holds when you squeeze a bit, then it is done.
3   Tip the clumpy pastry on your pastry sheet and draw it together gently to make one ball. Roll out to size required. I roll mine out as much as I can to about 3 ml thickness. I cut out this same pastry for both the bottom and the tops of the pies. You could top them with puff pastry if you choose.
FILLING
4   Chop the parsley in the TMX 10secs/speed 10 (put it aside)(No need to wash the bowl)
5   put butter in TMX 1 min/100°/speed 2
6   Cut onion in quarters. Drop onion and garlic onto blades 6 secs/speed 6
7   Saute onions 3min/100°/ speed 2
8   Add parsley, chicken stock powder, salt, pepper, cream, yogurt, add mushrooms chopped into small dice(say 1 cm)and mix 5 secs,/speed 4. Take a look to see the consistency
9   I put this mixture into a separate bowl and just  added the chicken chopped into small dice(say 1 cm)and turned it over with a spoon as I did not want to over mix it.  
10   Add milk or more cream or yogurt if required. The filling needs to be moist and creamy but not runny
11   Put the pie maker on for 5 mins to heat up.
12   Line the pie maker with pastry. add the filling , just up to the top not over the rim. Place a lid on the pies. Cook for 8 mins.

Tips/Hints:
I used a "Cooks Professional" electric pie maker. Very much the same as Breville and Sunbeam
The pastry was just the right amount for 4 pies with tops. I made double the pastry for this amount of filling.
If you wanted to make sweet pies you can just add some icing sugar to the pastry ingredients.

Hally - I made these, slight variations. Very very happy. The pastry made me 8 bases, I used the frozen puff pastry on top. I made 4 pies and froze 4 bottoms. I used a small can of sweet corn and a small handful of mozzarella cheese. These are great, I had for lunch & DS had one for afternoon tea. He loved it. Thanks DD.

Yvette - Made a double batch of this, delish - didn't add mushrooms just a bit more chicken, enjoyed by all thanks Dot. One batch in freezer for next time.

Now they look fantastic, will have to make these once my freezer is empty of frozen meals.

How thin did you roll out the pastry?

Hi Hally,
I have edited the recipe to include any details that I may have glossed over before. 3mil is the thickness that I roll to to make it easy to arrange in the pie maker without it breaking. I work it into the pans with my finger joints to prevent finger nails from breaking the pastry. You can wear a thimble to do this if you find it easier.
Filling them up to the rim gave lots of filling and I felt that one pie was certainly enough for one serving for me but I suppose it depends on those hungry boys out there doesn't it? ;D

DD, i have all the ingredient apart from mushrooms & cream

I cant help myself, defrosting some chicken to make some pies tomorrow & chookies kfc too.

I was doing so well on the freezer, but i cant resist both chicken dshes. Will follow your pastry recipe exactly and see how I go. Ds will love these tomorrw night.

I dont feel too guilty as i am not buying heaps of ingredients, so i can justify it.  Gosh i am a crazy mama!LOL

Thanks Dot I was looking for something with chicken for my new pie maker, don't like mushrooms so I won't add them

You could add diced carrots and peas instead or diced ham would be nice. The pie filler needs to have cooked ingredients since it only takes 8 mins in a pie maker to cook. The idea is to make the consistency creamy enough not to dry out but not so thin that it makes the pastry bases soggy.

You could always make some TMX cream to substitute.  :)

Just to be clear, it is 450 g SR flour for four (4) mini-pies, tops and bottoms?

It just seems like a lot of flour.

(I've been using store-bought pastry 'till now so am new to this.)

Nice to hear from you again Yarrenbool.  No matter how old a thread, whenever anyone posts in that thread, it will show up in our 'unread posts' so never fear that any comment will go unnoticed.  Many of us read every comment posted each day.  Dot added this comment at the end of her recipe

So I take it, if you want to use all the filling then double the pastry recipe.  If you only want to make 4 pies, half the filling.  The pies aren't exactly what we know as mini-pies, pie machines come in mini (party sized), normal size and family sizes and Dots would be the normal size which is just a tad smaller than a store bought pie.  A lot of us use shortcrust pastry for the bottom of the pie and puff pastry for the top but you can use all shortcrust or all puff pastry in these machines, both work well.
