 :)m  Hi Megan,
I've had mine for about 12 years now.

i use it every couple of weeks, for using up leftovers into pies.
Sweet or savoury, also you can make quiches in it too.

Last weekend, i made up 6 pies, and heaps of pasties from leftover chicken / veges, and a casserole.
Great for m for lunch,  now I am working full time again.'

They don't cost much to buy.

Just spotted mine in the cupboard the other day - got given it for christmas last year and still haven't used it.  Sounds like l need to wipe off the cobwebs and get filling!

I keep reading poor reviews due mainly to the fact that you have to heat the pie maker first and then try to line the pastry which shrinks back with the heat before you have the filling in let alone the lids. Is this the case or do you have a model that doesn't have to be heated first?

I've been interested in one of these for a while but just haven't got around to buying one  :-))
Thanks for starting this thread Meagan - right up my alley and it will be a great help for me to rethink whether I really need one or not, depending on what our members have to say about them.

Yep, love mine too.
Like Obbie said, great for left overs.
I don't always use pastry, I often flatten a slice of bread with rolling pin (crusts off), and use that instead of pastry.
I have a Sunbeam 4 pie maker.
Also nice to  make quick apple pies.

Does it need to be pre-heated maddy?  I can see DD's point - it would be hard to make a pie if the base was really hot.
Title: Re: Electric pie maker?
Post by: fundj&e on September 17, 2011, 10:17:54 am
yes DJ it needs pre heating i have no problems with shrinking, if you have your base and lids cut and ready to go.  mine is a breville

I used to use mine all the time, but got out of the habit when DH had extended time off, so it's now sitting idly in the cupboard.  Mine is an old one that only makes 2 at a time, and I used to get a pie production line going, and pump out a dozen or so pies that I'd then freeze for lunchboxes. They were always very popular. If I bought another one, I'd probably go for 4 rather than 8, as I think it would be easier to work with 4 at a time, rather than 8. I used shortcrust pastry for the base, and didn't find it difficult to get it into the hot pie holes or that it shrank too much to seal the pie.
Title: Re: Electric pie maker?
Post by: Bonsai on September 17, 2011, 10:31:24 am
I have a very old one that does 2 at a time. I feel that the pastry to filling ratio is a bit too much pastry (packaged puff) for the amount of filling you put in. It does make efficient pies but I find you have to be sure to have quite a dry filling otherwise the bottom of the pies goes soggy very quickly. It is also hard to clean if it's hot (and sometimes stuff bakes on....).

I agree that it is a pretty quick way to use up leftovers into 'instant' meals - maybe I should try bread or shortcrust pastry.....
Title: Re: Electric pie maker?
Post by: faffa_70 on September 17, 2011, 10:44:49 am
I love mine , it is about hmm 18 years old I think and only makes 2 pies. ;D ;D ;D use it for a multitude of things, including breakfast pies if we are traveling or leaving home early in the morning.

I use shortcrust on the bottom and puff on the top. Never had a problem with them shrinking back either.

If I had to replace it I think I would go for the 4 pies but do agree that 8 might be a tad difficult to work with.

Thank you everyone  ;D my Narn has one and loves it. I was thinking it would be a good way to go as I always make either handmade pasties or individual pies with left over casserole.
How long do they take to cook?

Lol so faster than in the oven! What about using puff pastry on the bottom. Is that possible?
Title: Re: Electric pie maker?
Post by: fundj&e on September 17, 2011, 12:47:43 pm
I rarely have both types of pastry  always have puff in the frezzer  most of the time only use puff. but i must say using both does give a better results.

I also have a pie maker which I must admit I haven't used for a while either, And funnily enough I was tidying my cupboards today and spotted the pie maker and though I must use this again.
I love curried scallop pies, Yum Yum.
No problem with shrinkage here either, I use puff pastry and they fill out beautifully. Mine is more of a enclosed sausage roll shape than round pies and also make 4 at a time.

I really like pie maker , makes 2, its easy and quick. I tend to use it heaps then sort of OD on pies put it away for a while then something like this reminds me and grab it out and pies pies pies we all love having a quick apple pie for dessert mmmmm. I also use tortillas instead of pastry some times for a after school snack instead of using the sandwich press, nice and fun for the kids .

I have a  pie maker DS bought it for me for Christmas a couple of years ago, makes 2, its good for the 2 of us now, but it was a pain when cooking for 5, I only used it the other day to make chicken and mushroom pies. must post the recipe. No problem with soggy pie bottoms and its easy to clean.

:D :D Glad you can still have a sense of humour Kathryn with all that is going on in your life.  :-* :-*

This thread is very timely, funny about that - every birthday something comes up on the forum that I can put on my birthday list instead of saying 'I don't need anything at the moment' and making it hard for the kids.  Looks like this is the go with all the good reviews here, thanks girls. I take it there is a recipe book that comes with the machine.

Title: Re: Electric pie maker?
Post by: judydawn on September 18, 2011, 02:44:04 am
Hally, when I was googling away I read where people have used these pie makers to make quiche and there was a photo of a pumpkin pie with no topping so the answer to your question is YES.

Fundj, I think the idea of a pie maker is the ease of cooking without having to turn the oven on.

I had an electric pie baker a few years ago but it only made two pies and was not all that efficient.  Also not easy to clean.

The only reliable one now available in the U.S. is the Breville and the reviews are iffy at best.

I have a stovetop pie iron that is about 80 years old that does a good job - bigger pies - it's cast iron and well seasoned so nothing sticks but I rarely  use it now because it too takes too much time to produce the pies.

I just make the half-moon shaped pies as I have several sizes of dough presses (http://www.amazon.com/Dough-Press-Set-of-4/dp/B00024WPD4) and bake them on a sheet pan.  I can turn out a dozen hand-sized pies in the time it would take me to make two in the electric baker.

I don't try to cut the dough into rounds.  I just use a pastry wheel to cut it into squares that are large enough for whichever size press I am using, fill and close the press and run a paring knife around the edges.  It wastes a little dough but I just re-roll it, cut into strips, and sprinkle with cinnamon/sugar, grated cheese and bake it for a snack.

I got an advance copy of Handheld Pies (http://www.chroniclebooks.com/titles/handheld-pies.html) a few weeks ago and it is a great cookbook for anyone who wants to bake these little treats.  Lots of ideas of how to use the recipes for fillings you already have.

I have a Sunbeam pie maker that makes 4 medium size pies.  I bought it a couple of years ago on impulse!

It's really good, very easy to use, easy to clean etc & comes with a cutter (like a big scone cutter) so you can cut the top & bottom pastry the right size.  Never had a problem with soggy bottoms!!

I've used it for making pies with leftovers, or making quiche, or topless egg & bacon pies etc.
Sometimes it gets a lot of use and then I'll stick it at the back of the cupboard and forget about it for awhile.
It's good to have and easy to use  :)

Title: Re: Electric pie maker?
Post by: Yvette on September 18, 2011, 10:15:39 am
Not sure if they are bigger Judy I am just very happy with the sunbeam, have never had a pie maker before, it will be really easy to make a pie or a quiche if you have unexpected guests. A thought we had tonight was to cut all the circles of the pastry then they are ready to go when needed and if you only want to make one or two pies it won't be a hassle

Hally you brush with oil before you use if for the first time. The next time you use it just turn it on. Very easy instructions tell you everything. The pies aren't as big as a normal pie but much bigger than a party pie. Recipe book was pretty good

This is the Pie maker or what ever you want to call it that I have Mistral Pastry Chef (http://johnw.customer.netspace.net.au/food/mist.html). Its made to fit one full sheet of pastry (Half bottom/Half top) and makes four at a time. I find it excellent for any filling.

Good to hear they ake up less space, but still stuck with left oversas you cant refreeze the food!!

Next time into the pies and then freeze.

It seems weall have freezer issues.LOL

No freezer issues here!! Went from owning two of the largest you could buy down to just one medium upright!!!

Leftovers are taken to work for lunches or frozen as lunch meals etc ... when there are too many in the freezer (i.e. enough for a meal and also a lunch or two) they get worked into my menu plan as a HYS (help your self lol) meal.

If it is something that would make a really nice pie filling then pies are made and frozen for lunches or again HYS  ;D ;D

We are the same Kathryn.  Our freezer just has a couple of loaves of bread, a quiche, some fruit buns, ice cream and our frozen meat.  All left-overs are gobbled up for lunch the next day or reworked into dinner the next night.  Chow mein is turned into spring rolls, spag bol is yummy as a pizza topping, beef stew is made into pies etc. I don't like serving the exact same meal two nights in a row and like to be creative when using up left-overs. It saves us a fortune as well.  :)

I thought owning a TMX would reduce my gadgets but I seem to be adding to them continually. I had a pie maker long ago (Sunbeam) but it sort of disappeared. I think I may have lent it to Mum and when we cleaned her place out a family member may have taken it. I may well have to buy another one. Especially if DD sees that it can  make crumpets. She is into making them and was pleased to see the TMX home to make her job easier.

Does anyone else find this.

I make my own pastry and the pies seem to be too much pastry and not enough filling. I am worried that if I roll it too thin the pastry wont hold.

It's no Good,, You all got me interested and so I bought a pie maker!    The various gadget makers must be thrilled when one of their machines are mentioned on this forum as it seems guaranteed to make sales.  :-))
Well I made some chicken and mushroom pies using some left over chicken. I planned for them to be a tasty snack for my DS,DDIL and DGS for when they arrived down from Aberdeen to  see me this weekend. I have put the recipe in main dishes Dots Chicken and mushroom pies (http://www.forumthermomix.com/index.php?topic=7351.0)
and here is my picture of the finished pies. They were very tasty and I thought nice looking too. The filling was just the right consistency and the pastry was cooked well on the bottom.  I am thinking apple Charlotte today in the pie maker of course.

Absolutely Cookie! Not using the Thermomix is a bit like keeping a dog and barking yourself  ;D
The pastry I used is almost instantly made in the Thermomix. It is as quick as opening and unfolding your store bought packets. I can certainly see the advantage of buying puff pastry because of the time in making this but a shortcrust pastry is a dream in the Thermomix. Click on the link of my original message to take you to the recipe.

Last night, just as I was dropping off to sleep, I had a sudden memory recall.
I'm pretty sure I have an old Sunbeam pie maker that is still in it's original box, never used, somewhere in my storage building.

I don't know what prompted that memory popping to the surface but now I have to go out there and hunt around (after setting off a couple of bug bombs to kill the black widows that have taken over and established their territories during the past few months) to see if I can find it.  I've already had a look through the storeroom in the house and couldn't find it - although I did find some other things that I had forgotten about.

This gives me an excuse for poking around out there to see what else I can find.  I know I have a large box full of old teapots that haven't seen the light of day for at least fifteen years.  Lord knows what else I will find.  But it's fun looking.

Still looking.  I have to get some help to get into the nether regions.
Set the bug bombs today and will leave the place closed up for a couple of days.  The young man who does my yard work has just started his fall college classes and won't be available to help me until the weekend.
It's impossible for me to crawl over some of the stuff in there.
I have footlockers (metal, Army surplus and cheap) packed full of books, two antique kitchen ranges that I had intended to refurbish, as well as some desks, file cabinets and a bunch of printing equipment that I used to use in my art work.  All bulky, all heavy and the shelves where I think some of my old boxed appliances are stored are behind all that stuff and I can't even get to the light switches at the far end.
There used to be corridors in the place but those have gradually filled up - gads, I am such a pack rat!

As I recall, the pie maker only makes two pies at a time.  As I never used it I don't know if it worked or not.

There is a 4-unit pie maker currently offered with the Emeril Lagasse name but it has horrible reviews.

There is also a 4-unit Breville but while it has some good reviews, some are so-so and it is only available from Williams-Sonoma and the price is $99.95  and you have to buy a "pie lifter" for $12.95 to get the pies out of the baker without damaging the crust.
That rather annoys me.  For that amount of money they should include the pie lifter.
Title: Re: Electric pie maker?
Post by: Decadent Dot on September 28, 2011, 08:17:34 am
I am wondering what a pie lifter looks like.
I am using a wooden spatula which so far is fine.  I sort of just poke the edge with it and it loosens them sufficiently for me to lift them out.
I made more pies today. The amount of pastry just makes 4 pies as you can see.
PASTRY Ingredients:
225 g        Flour
1 teaspoon        salt
110 g        marg or butter
2 Tbs        water chilled
As you all will know, the secret to pastry is cold! Cold! Cold! I made the mistake of putting my cut out pie circles in the fridge for ½ an hour. This was a major mistake as they wouldn’t bend enough to go in the pie cavities. The first one broke so I had to wait for them to warm to room temperature again. I put in grated cheese topped with crispy fried bacon pieces and topped with an egg. I dropped in one egg and it was a double yoker so it over spilled the pie. It didn't stick though. I have made a note to myself to top the egg with some salt and pepper next time.

Yes Fundj,  The two plastic rings came with the pie maker machine so they are the right size for the pie pan.
They are not of a particular high quality. I will check around the kitchen to see what else is the same size ....just in case they get lost or something.

Here's a link that shows the Pie Lifter. (http://www.williams-sonoma.com/products/3769510/?catalogId=50&bnrid=3180501&cm_ven=Shopping&cm_cat=Froogle&cm_pla=Bakeware&cm_ite=3769510)

With such a specific utensil - for one appliance, I simply can't see why they don't include one with it.
It turns me off both the appliance and the retailer - and it is a W-S exclusive - not available anywhere else.

In this week's woman's day this is Curtis Stones meat pie recipe:

2 tbls olive oil
500g beef casserole chuck steak cut into 1cm cubes
2and a half tbls plain flour
1 onion finely chopped
1 garlic clove finely chopped
1 carrot peeled finely chopped
1 celery stalk finely chopped
1 teaspoon groung coriander
1 tbls soy sauce
1 tbls worcestershire sauce
1and a hald cups beef stock
4 sheets frozen puff pastry
1 egg beaten

1.  Heat 1 tbls olive oil in a medium heavy based saucepan over high heat. Coat meat in flour and brown well in pan.

2.  Reduce heat to medium and add extra oil to pan. Saute onion and garlic 4 minutes. Add carrot and celery and cook a further 4 minutes. Add coriander, soy and worcestershire sauce, and cook until almost dry. Add stock and cook for 1 hour or until meat is tender and sauce is thick. Allow to cool.

There are more steps but those of us with pie makers can then add them to our pastry and cook in pie maker

I hadn't thought of making muffins in the pie maker but thanks to your link with Sunbeam leesmac78, I made up an instant batch of muffins. Mine had glace cherries and choc chips in. The first 4 were a mess.  :(The recipe said to use paper cases but these became distorted when the lid was closed and most of the mixture was stuck on the lid.  :'(I decided to have a go using these plastic bun (not muffin) cases that I have. You can see that these turned out quite well though I will put more mixture in next time. The case does need to be lower than the pie base for buns to work.  I did try one bun without any case which did work but I thought  that the non stick surface would not last so well doing this. It has to be said that the bottom of the buns brown more quickly than the tops so they are cooked when the buns show a very light colour. Here is a copy of the recipe adapted for the Thermomix. I am calling them buns because the pie maker is not big enough for muffin cases.

Name Blueberry choc chip Buns

1 cup        self raising flour
1/2 cup        caster sugar
60G g        choc bits
1        egg, lightly beaten
1/4 cup        oil
1/3 cup        milk
100 g        100g blueberries or other fruit

1   Grind the sugar to caster 3 secs/ speed 10
2   Add flour to sugar mix 3 secs/speed 4 ,
3   Mix together, egg, oil and milk. Stir into flour mixture.3 secs/speed 4
4   Add blueberries and choc bits in the TMX. Mix well.stir until just combined. speed 2 reverse
5   Place a double layer of muffin cases into the Pie Magic. Spoon ¼ cup of the mixture into the prepared pie maker and cook for approximately 6 minutes or until golden brown and cooked through.

Servings: 12
Preparation time: 10 minutes
Cooking time: 10 minutes

Title: Re: Electric pie makers and recipe ideas ;)
Post by: judydawn on September 30, 2011, 12:43:49 pm
Yes I do but I don't think DD has got a Sunbeam has she? A baking paper template for a muffin liner would be a circle with a 12 cm radius and you need to make 2 cm deep cuts in the paper every 6 cms around the edge - is that clear? It then folds in to make a liner for the pie maker bottom.

Here's a picture of one of the 4 I just cut out.  Had to put some rice in it to get the shape I wanted and you could cut another 1 cm off the top edges.

Right JD, I see where you are coming from with your paper liners. You would have to make them smaller of course so that they sit inside the base cup. I can't help thinking that it would be a whole lot of time cutting out linings. The plastic ones worked very well though the buns are tiny. Probably good for kiddy snap boxes.

Cutting out isn't too time consuming DD, just fold a long piece of baking paper over until you have a small square & lay your template on it - I cut 4 out at one time, you could do 8 at least.  Before you cut the slits for the folds, just trim off another cm .

My boss proudly gave me a jar of robertsons fruit mince and told me she had no idea what to do with it. She of course knew that when she purchased,

So at 7am this morning, yes a Saturday morning, I got up and had the urge to cook.  I made her mince pies in the pie maker. She was thrilled to bits.  I didn't fancy one so I gave them all to her but as Christmas is coming up, you may like to use your pie makers for some yummy home made mince pies

Have just made my first couple of batches of pies and was very impressed with everything  ;D
Main reason for wanting a pie maker was to use up leftovers but none around today so decided to try one from the book that came with it - chicken satay, page 19.  I had a 500g pack of chicken mince so adjusted the ingredients upwards and cooked the mixture in the TMX last night, adding fresh coriander to it this morning as well as some satay sauce (http://www.forumthermomix.com/index.php?topic=3093.0) as I think all pies need some sort of sort to bind everything together. I cooked the satay sauce for 5 minutes and poured it over the pies as well. Normally I would only serve 1 pie each with vegies but today we had 2 each (too much :-))) and I have frozen the other 4 as well as a 300g pack of leftover filling.  Will use that for a filling in filo pastry or top it with mashed potato.  The EDC shortcrust pastry made 8 bottoms and I used bought puff pastry sheets for the top.

DD they look good and Judy your pies look lovely. The first thing I made was the quiches and I put too much filling in them and of course it stuck to the top. We've had a few left overs since then and I hope to do a heap of apple pies to put in the freezer.
DH will love snacking on them.

Quiche/frittata, same thing I guess.  I used some leftover Agilio Oilio E Peperoncino (http://www.forumthermomix.com/index.php?topic=376.0) covered it with a mixture of eggs and cream and it was very tasty.
Lined the pie holes as per one of my previous postings, placed 1/4 cup of pasta onto the lining.  Beat 3 eggs with 1/2 cup cream and poured a 1/4 of a cup over each base.  Cooked 9 minutes.

Hally, my DH loves pies made from roast beef leftovers. I just make extra gravy with the roast, then chop up the meat, any leftover peas and veg and mix in the gravy . I also make mashed potato and place a dollop of that on top of the pie filling before popping the top pastry on.

My storage building was thoroughly searched and no pie maker could be found. (Found a lot of other stuff that was long forgotten.)
So I will have to try and find one on one of the auction sites.
It's rather annoying to "know" that I do have something but can't find it.  Of course it is possible that I gave it away years ago and don't remember that either.
I did find an old but never used, electric ice cream freezer (the old-fashioned kind) which someone on another forum was looking for a few weeks ago.
The box is pretty shabby but the thing itself is pristine, complete with recipe book and all accessories.

I'm not buying a pie maker but one of the gals in my book club (met last evening) has thing called a "Babycakes" baker that can be used for cupcakes or little pies.  They are smaller than the pie maker pies.
She says she has never used it and it is taking up valuable space in her small pantry and she is happy to get rid of it.
I'm giving her something in return but have to compare notes with her daughter to be sure my guess as to what she would like is accurate.

We were talking about this during the snack break and I learned that one other member had purchased and returned the Breville pie maker, calling it a "piece of junk and total waste of money" and it wasn't cheap.

So today, while using StumbleUpon - the search engine for geeks like me - I stumbled on this blog that tells how to make pies (http://www.kingarthurflour.com/blog/2011/02/22/can-you-bake-a-mini-pie-how-about-8-mini-pies-%E2%80%93-in-just-12-minutes/) in the Babycakes thingy.

How about that, serendipity, or what?

I tried making quiche in my piemaker for the first time today - have had it 'forever' but never thought to make quiche in it - possibly the long-lost instructions didn't include quiche way back then.

Shortcrust pastry in thermomix, filling of finely chopped ham, grated cheddar and some sundried tomatos - cooked beautifully and got munched up so fast I missed the photo opportunity. A great way to use up leftovers or just make a few snack size ones- probably good for school lunchboxes.  The recipe in the instruction manual (which I found a copy of online) makes just enough filling for 4 quiches.

Does everyone else's pie makers cook one or two pies quicker than others? I find the back left cooks the fastest I am wondering if it has to do with the amount of filling. Also does anyone brush the tops with milk or egg white as I would do this for oven ones.
Title: Re: Electric pie makers and recipe ideas ;)
Post by: fundj&e on October 10, 2011, 08:41:23 pm
Only taking a guess here :-))

If you are like me and start your pies from the back left one then yes, by the time you are up to the front right one ,the back one is already start to get hot( if you know what i mean)

I have never thought of brushing with egg like i do when baking in oven

Meagan mine seem to all cook evenly and bonsai the quiche sounds nice must try that soon

I fold my pastry bottoms before I place them in the pie maker so that it ends up being quite a quick process to then just add the filling and tops (which you just sit on top anyway).  Mine all cooked evenly and no, they were nice and evenly browned so no need to egg wash Meagan.

Do you preheat or put it in from cold I have been preheating as per the book

Meaghan I preheat and fold the base first as Judy said, they cook for 7 minutes and are lovely and golden all over

Post by: Wonder on October 11, 2011, 01:17:08 am
I preheat first and fold the pastry on the bench already to pop in the pie maker and fill up. The process only takes a few minutes and mine all cook evenly and have a lovely brown top. I'll need to give the quiches a try, my family loved them when I first got the pie maker a few years ago but haven't made them for a long time.

My machine is pretty even.  I chop all the pastry ready to go first, have a spoon in the filling and work like crazy to get it all together so that they all cook evenly.  I must make some little quiches tomorrow, lovely idea!!  I am hosting a number of luncheons and brunches over the next two weeks.  I love wowing everyone in our kitchen.  My friends and colleagues think I am such a talented cook.  Rubbish, I just have a Thermomix!!!

I've had my Sunbeam 4 pie maker for 16 years (was a wedding pressie) and make a stack of pies every winter to stash in the freezer for quick dinners.
This year my Mum, her friend and I planned a "pie day". We each made 3 different fillings the day before and got together with 2 pie makers and pumped out about 300 pies. I kid you not!  :o
We had a pretty good production line going, Pamaps puff pastry loved us for the day (the best pastry we think to make pies with). It took all day and we were exhausted - but we had pies for dinner!  ;)
We made Mushroom pies, beef beer and bacon pies, vege pies, meat and mushroom pies, Mum's beef pies, thai red curry pork pies, coq au vin pies, thai chicken pies, Nik's beef pies, Indian chicken curry pies, moroccan lamb pies.
We cut shapes with little pastry/bikkie cutters and put on top of pies while cooking to tell the difference and it has been great to go to the freezer and choose a few different ones for tea when there's nothing out or I'm having a night off!
Don't need to make any more yet - there's till about 50 in the freezer!
I do love my pie maker! ;D

What a wonderful story Nik - you must have been sick of the sight of pies by the end of that session.

Ah yes JD I was, but it was worth the effort and getting together with my Mum and her friend and trying different fillings was great.
Mum's friend did quite exotic fillings and they were delish. So we have gourmet pies - yummy!

Ok let's talk pastry :) I used home made shortcrust for the base and either organic butter puff or butter puff by pampas. Maybe it is the pastry!

Nik good job it is good when you have things made already in the freezer, you would have been exhausted after making that many.

Meagan I buy my pastry short for the bottom and puff for the top, maybe if your pastry is homemade it needs to been all exactly rolled out the same which is hard to do with homemade. Judy makes her pastry though

I just use pamaps puff pastry for top and bottom of my pies. When making 300 odd we figured we didn't have time to fluff around with different sorts!
We rolled the scraps out and used them for the tops so there was no waste. (used the bottom cutter to cut pastry for the tops so when they do shrink they still fit - if that makes sense!)

Plus in my house - if you don't like it - don't eat it. Ain't nothin' else!  ;D

I am now the proud owner of a bright pink Babycakes appliance.
I've taken it out of the box but have not yet decided on what to attempt as my first project.

Tomorrow will be soon enough to take it for its maiden flight.

My friend brought it over after work and we got into a discussion about old movies from the 1930s and the time just flew by.

Sold in U.S, but unfortunately their power voltage is different, and can't use any of their appliances......that is unless I'm prepared to buy this huge whopping/ugly step down power transformer.....which is just as big as the appliances themselves  :-))
There is sooooooo many other things I would have loved....but probably a blessing a disguise  :P

Babycakes premiered with almond/poppyseed muffins this morning.  Baking time 8 minutes.
Tiny muffins, two-bite size for most people but I suspect most guys would just pop them whole into the mouth.

Later today I will try some tiny mince pies.

Meanwhile, here are photos of my early morning results.

This looks like it is going to be fun.  However because of the size, I have ordered one of the old American Sunbeam pie bakers (2 pies) like the one I thought I had.
A New-In-Box Sunbeam appeared on eBay just in time with a reasonable Buy-It-Now price.

See, you folks led me into temptation and I did BUY!   :-))  Of course my friend helped too.   ;)

That has occurred to me.  I will probably come across it while hunting for something else and in a spot where it has no business being located.
I recently noticed a "mystery" box on an upper shelf in the linen closet and it turned out to be a vintage Goblin Teasmaid that I had forgotten I owned.  I bought it from UK eBay and sent it off to be converted to U.S. electrical as soon as it arrived.
When I got it back, I was in the midst of redecorating a couple of rooms and just stuck it away and promptly forgot all about it.  That was ten years ago.   No doubt there are many other things that have hidden themselves away in similar out of the way spots.

I love that babymaker andie - people often don't want a huge muffin and if you live alone, a batch of 8 at a time is perfect.  It also gives you the opportunity to make different recipes and offer people a choice of muffins.  I did buy a mini muffin pan but haven't used it yet  :-))

Lee.....did you use the recipe with the book?  I made those first, but didn't really like them, bit too heavy and pancake tasting.  I did a bit of googling, and found a recipe that certainly looked and tasted more like a doughnut. I will keep searching. Have a look at the difference a recipe makes........the left side (the flat ones) were the Sunbeam recipe.

Do you know that you can also bake yeast doughnuts in the doughnut baker?  I can't give you a recipe but a friend has one of the doughnut bakers and uses a small doughnut cutter, allows the cutouts to rise for twenty minutes or so and then transfers them to the baker.
They turn out very light, mostly hollow and quite crusty with none of the fat one gets with frying.

My "new" Sunbeam pie baker (2 pie) arrived today.  However, this is my bread-baking day so no pies today and probably not tomorrow as I have been tapped to help with preparing a huge batch of tamales for a party to be held on Saturday.
As there will probably be at least 100 of each "flavor" beef, pork, chicken, beef tongue, it requires several people working like a production line.
It's fun and gives me a chance to learn a bit more Spanish each time.

So right now it looks like Friday will be the day to give the pie maker a test drive.

Oatmeal bread with potato bread in the background - non-TMX dough.

That's great to know Andie.  I really think they will have more of the doughnut taste & texture, instead of cake texture.  Can't wait to try it out.

The Sunbeam Pie Baker debuted today with beef pot pies.  I used a slightly altered recipe that I usually use for my pasties.

First, I found that draping the bottom shell over a little cup made it easier to fit the stuff into the bottom of the baker without tearing it too much - my dough is fairly tender.

Each shell was filled with 1/3 cup of filling.

The book said they would hold 1/2 cup but that did not work so well - overrun.

The end result - very tasty.

I made 6, froze three, refrigerated 2 and ate one.

Not bad for a first try.

Andie they look wonderful. I've always been nervous about using a mix with much sauce in it as it seems to seep through pastry easily unless they're eaten straight away. Maybe using shortcrust on the base might work better (have tended to be lazy and use frozen puff pastry, really no excuse as shortcrust is so easy to make and foolproof  :-\

Have to try again with shortcrust base and a more saucy filling....
Title: Re: Electric pie makers and recipe ideas ;)
Post by: judydawn on October 22, 2011, 09:47:05 am
Bonsai, you are certainly right there.  I was going to whimp out and buy shortcrust for the bases until Hally convinced me that our pastry recipe is so quick. Now I wouldn't do it any other way but will continue to buy puff pastry for the tops.  I think as you line the pie molds with pastry they start to cook immediately and by the time you have got around to the 4th one then start filling the first one, the heat would have done enough to stop any steepage - does this make sense or am I wrong in my assumption here. Anyway, I have not had leakage with my 2 tries and one was quite runny.

Your pies look great andie. Good to see you getting into the Aussie pie exercise.

Andie, out of curiosity, what are is the measurements of the babycakes vessels?
I'm wondering if it's the same size as the sunbeam cupcake maker,

......... instead of the mini muffin I had just bought.

I bought the babycakes book for ideas (brilliant amount of choice), and should adapt well to regular size.

Maddy,
The Babycakes  cupcakes are half the size of a "regular" cupcake.  I don't know what size the Sunbeam makes.

The company calls them "Snack-Size"   Other companies that make similar appliances call them "mini" cupcakes.

Bella Cucina makes 7. (http://www.amazon.com/Bella-Cucina-13465-Cupcake-Maker/dp/B003NUV0V2/ref=pd_sbs_k_2)

Breville (http://www.ebay.com/itm/Breville-Electric-MUFFIN-MAGIC-Cupcake-Maker-Baker-1400-Watts-Non-Stick-/330618650537?pt=Small_Kitchen_Appliances_US&hash=item4cfa683fa9)  makes one but it was on the market here in the US for about five minutes and got terrible reviews.  This is the first one I have seen on eBay for two or three years.

MasterChef marketed this full size muffin baker (http://www.ebay.com/itm/Breville-Electric-MUFFIN-MAGIC-Cupcake-Maker-Baker-1400-Watts-Non-Stick-/330618650537?pt=Small_Kitchen_Appliances_US&hash=item4cfa683fa9) about 12 years ago but it never caught on and I don't think many were sold.  I saw it demonstrated at Gottschalks department store, which has been out of business here for at least five years and the demo I watched was long before that - was done by a friend of mine.

Breville party pie creations (http://www.breville.com.au/cooking/snack-makers/party-pie-creationstm.html)

....sorry, just found your question.
Were you thinking the 4 pie maker?.......If yes, it may be a little big  :-\ not sure how it would turn out (length of time cooking/ if too baked on the outside before the centre has cooked).....is your oven not working?

Remember, you can open the pie maker when you think it is done and stick a probe thermometer into the center of the cupcake.

It should register at least 96° C. when done or a little higher.   Less than that and it will be gooey in the center.

If you have "inclusions" in the cupcakes or muffins - raisins or ???  check in more than one spot as these will reach a higher temp more rapidly than the surrounding cake.

I'm now using a taller jar which is easier to hold than the shallower custard cup.  I can drape the dough over the bottom of it, plunk it into the pie maker and quickly go on to the next one.
I may refine it more as I have a silicone tumbler that may fit the bottom better.  Still experimenting.

I didn't take a photo but yesterday I made bread pudding and while most went into a loaf pan to be turned into my "mock French toast"
tomorrow, I had some left over and baked it in the Sunbeam pie maker.  Turned out lovely.

What a great idea andie, individual bread and butter puddings in the pie maker.  Would never have thought of that  :P :-* :-*

I've made individual B&B puddings before, in the jumbo muffins tins.  I cut or tear the bread, usually brioche or challah, into bite-size pieces, make the eggy mixture, add sugar and spices and then add the lightly toasted bread, putting a plate to weight it down so it all soaks up the liquid.
Then I transfer it by the cupful to loaf pans, or other baking pans - sometimes I bake it in a Turk's head mold or other fancy type.

It took 10 minutes to cook in the pie maker.   I haven't yet tried it in the BabyCakes one yet, but as this turned out so well, am going to try it soon.
I have an idea that savory ones, with pre-cooked bacon and a nice sharp cheddar or other cheese will turn out very nice.

This evening we had left over BBQ chicken and some veg in the pie maker. Really nice. & easy.
I chopped 1 onion then i made edc bechamel sauce, had already chopped chicken and had carrots, Peas & mushrooms, really yum and easy. Tonight as i was in a hurry i used all bought pastry. They were really good, we ended up with 12 pies!! The piemaker certainly helps your food go a lot further, so to the freezer they go.

OK I realise I'm reserrecting an old thread, Just wanted to ask (hope it is not too rude) where you got your pastry chef from dede?????? DH went to deliver something for work last week, got to the place and it didn't open for 1/2 hr, so he did what blokes seem to do when they are bored - went and found a bakery and brought himself something to eat  :o , he thought it was a sausage roll but then after he had sauce put on it the server person said "you do realise that is bacon and egg?" Well DH came home and told me this story - then proceeded to ask me to make him some, I have never heard of them (but don't make a habit of bakery shopping - rather do my own!!) and now I'm meant to make them. I tried google but no luck, was looking thru this thread and found dede's picture, thought maybe that is it...? Have you done egg & bacon in it????? I have MIL's pie maker at the mo, but he wants these egg and bacon...things. Does ANYONE know what he is talking about?????

egg and bacon pies, yes.

chop and cook up some bacon.
Put the pastry in the bottom of pie maker, add bacon, crack a egg on top.
S&P then pastry and cook.

Very simple and tasty.

You can also make mini quiches in the pie machine too.

I make bacon and egg pies all the time in my piemaker. I start off with a layer of grated cheese in the bottom followed by crispy fried broken up bacon and then break an egg on top. here is a picture. They are nice cold but even nicer warm and so easy.

I use filo pastry in the pie maker with great success.  Have only made quiches  - just cut out the base and no lid.  Certainly cuts down on the fat content.  I usually just give filo a light spray with olive oil rather that slather it with butter.  (DH has had bypass surgery and diabetes so need to be conscious of these things.)

Hi Halex

I have a Breville 2 pie maker. I use three sheets of filo - lightly sprayed with oil - sometime just around the outside edges. Then fold one short edge to other short edge  (which in effect would give 6 sheets of pastry)  My pie maker comes with a cutter and this makes two bases.  Hope this makes sense.

used the mini pie maker & made 3 pies today.

i have a photo of 2, the 3rd I dropped getting out.

I found them very fiddly & ended up trimming some of the excess pastry.
pie 1, quiche with filo trimmed, filo cut to a square
pie 2 morocan lamb pie, same as above
pie 3 quiche, used circular cutter for base. this pie I dropped, it didd not have high sides like the other 2.

they all worked but not quick & simple.

Here it is astarra, it was posted by Chelsea.  I'm going to post it in the vegie section later.

Creamed Corn
2 tablespoons butter
2 tablespoons plain flour
1 cup or 250ml milk
2 cups corn kernels tinned, thawed or fresh
Salt and pepper

Melt butter for 1-2 minutes at 90o on speed 2.
Add flour and stir in for 20 seconds on speed 3.
Set TMX cooking at 90o on speed 3 and gradually add milk.
When mixture thickens (when the liquid noise finishes) add corn kernels and cook for 3 minutes on 100o at speed 3.
Season with salt and pepper.
Puree for 10 seconds on speed 6.

So, I have decided that I might need one of these... I had one years ago, but that was back before I knew how to cook, so it didn't really get used. My question is, how do they re-heat? I HATE soggy pies, so if I made these with leftovers, froze them and then re-heated them, how are they?

I've seen people mention that they freeze them, how do you reheat them? Oven, microwave or back in the pie maker?

I bought some individual pie tins a couple of weeks ago with the intention of being able to freeze the pie in the tin, and then re-heat the pie in the oven in it's tin. Apparently pies made in the oven need to be baked for 30 minutes, whereas these only take 8 minutes which is obviously more appealing, especially if I'm making the filling previously, an extra half an hour, on top of filling preparation and cooking, is a long time.

I'm trying to figure out the best option, especially in relation to meals when I forget to take something out for dinner... lol

Title: Re: Electric pie makers and recipe ideas ;)
Post by: fundj&e on June 13, 2012, 06:14:18 pm
jakodai you will need to deforst them 1st in the M/W if you forget to defrost them in the fridge i would still heat them up a little in the M/W, then back in the pie maker or oven, i use the oven only because i normally will have 6 to 8 pies to heat up at the same time. i know what you mean about soggy pies
yuk  ;D

try a few ways until you find the best way for you

what type of pie tins did u buy aluminium,S/S or non stick

I hope this help  ;D

Thanks fundj. They're non-stick ones, but I'm not overly happy with the shape of them. They're round, but they're almost abnormally deep. There's only the 2 of us, so I'd probably reheat them in the pie maker - have you done this? How do they turn out?

judy the eggs were still a little runny when I made egg and bacon pies with pastry, the inside must take longer to heat up. I used bought puff pastry.

I've made egg and bacon pies with pastry before Wonder and mine were fully cooked - they were quite scrummy actually and I found them just as delicious cold.

Thanks for the bread idea Amy.  A while back I bought a new jaffle maker as we both really enjoy a nice runny egg jaffle but the darn thing doesn't work for egg.  By the time the outside is golden and crisp, the egg is hard.  I will try making them like you do using the pie maker and this may be the solution.  I daresay you have to butter the bread though whereas you don't need to grease anything when using pastry.

Mmmm, runny egg pies. Love 'em! :D If I overcook my egg I give the pies to the dogs :-))
I've never actually buttered my bread, Judy. I just cut the crusts off, poke it into the pie maker and crack the egg into it. This has always worked for me but I'd be interested to hear how you decide to do yours and how they turn out :)

I made bacon and egg pies in MILs pie maker and the egg was runny, only the yolk tho - they were absolutely delish!! :-* Tho I hadn't thought to call them 'runny egg pies' - probly cuz I'm not adventerous enough!  :-)) I put a lid on mine JD.  :)

Just my yokes were runny. I like hard eggs so wasn't a huge fan of the pies but they weren't that soft that I couldn't eat them. Maybe my pie maker heats up a little hotter, I dont' think they took 8 minutes to cook to golden brown. i just put chopped cooked bacon in the bottom some grated tasty cheese and then cracked an egg on top. They were very full but tasted good.

I am having to use very storng self control to stay away from them while they cool - already eaten 2, made 16 so he MIGHT get 1 or 2 left!!!  ;D  Miss 17mths who is totally off her food due to teething, temps and now "shore earsh" managed to eat a whole one too!! (Doing happy mum dance!!)  I fried and chopped some bacon and added that to the beef and gravy mix, then mixed a bit of grated cheese through it too. Thanx ladies!  ;D
I know what is going to happen once DH tastes them - he will absolutely refuse to eat shop brought pies! Someone came the other day and brought a box of s.rolls with them, I polietly cooked them up and served them, my kids took one bite and refused any more - I didn't think much about it, just thought they wanted to go and play with the visitor's kids, DH came home and heated the leftover, took one bite and said "YUK, are these brought sasuage rolls?" I said "yep" he said "well don't buy them again, they are disgusting!! Where are your proper home-made ones?" (I never made them pre TM.) I then told him the whole story and that I hadn't brought them, he was all apologetic, but I was feeling pleased as punch that he would rather eat mine than shop ones, so no apology was needed!  :)

Sure does knittercook.  If a man keeps his woman happy, she will keep him happy in return -  a win win situation for everyone but they need to be consistent and not only be this way when they want something ;)

Makes a lot of sense to me...I do exactly the same thing....I refuse to put my kids clothes away but always put my husbands.  I apologise to him if I leave the kitchen a mess when I leave at 6.30 and thank him if he does any housework (very rarely but it does happen :) ).  If we are at my mother's, she always makes me wait on him hand and foot....and I do it....usually muttering under my breath...but I still do it...and yet I am an educated woman who lived in my own house prior to meeting and marrying him.  I wonder about myself at times!

Just had Miss 3s late birthday present delivered - a mini pie/muffin/cupcake/mini quiche maker!!  :D
Yes I know she is only 3 but it is the only thing I could think of for my mum to get her - and she had thought of the same thing herself... ;D
Think self, miss 5 and miss 3 will all enjoy it - and I love it that my girls love to learn to cook.  :)
AND I am very pleased as I just worked out 2-3 of this size pies will fit into the girls' food Thermoses. Happy about that.  :D

I've heard that getting children to help in the kitchen makes them eat better. Its something I'm determined to do when I have kids! ;) :D
I think its also important for them to see how foods come in its original form, like showing them how the potatoes become mash or how an apple is cored and sliced to make it easier to eat. I heard a story of a young child who was given a banana at preschool and didn't know what to do with it because his mum had always peeled them for him :o

Those pies that DH made certainly sound yummy :D

That's what I try to do with DS - get him involved in the hope that he'll be more inclined to eat the food we make. That and I want him to be able to cook a nutritious meal for himself, unlike his father who lives on peanut butter sandwiches or takeaway. Now when I'm cooking DS tells me he wants to cook too. Love it!

Not so much yet... He's only 2 and he can't reach the bench yet. He has to sit on the bench to help, and he pushes the scale reset button for me. He licks the bowl, so I guess that's kind of belong me clean up... Lol. He helps me clean up the rest of the house, though.

I'll take a photo of him helping me when his face clears up - he has some nasty eczema around his mouth at the moment that nothing seems to be correcting so I think we're about to add ANOTHER specialist to his list of doctors. He also has a massive bruise on his nose / under his eye where he fell out of my bed the other morning. I don't like taking photos of him when his eczema's flaring because I know I wouldn't want photos taken of me like that.

Thanks everyone! He's an amazing little guy, but I'm somewhat biased... He's incredibly well-behaved (I don't always feel that way, but gentle when we visit or get visited by other kids remind me very quickly), and given everything's he's been through over the past 12 months he's very happy & bubbly. But his hair! Don't get my started on his hair JD - it grows like no-one's business! It drives me insane. He gets his haircut monthly, very short (number 2 not he sides, number 3 on the top) and within a few weeks it's this long and thick again. He gets that from his Dad - no chance of baldness in that side of the family, that's for sure! It's a pain, because I can't do anything with it to style it, gel won't hold it down for long so he wears a lot of hats... lol. It is nice to run my fingers through while we're snuggling on the couch of an evening though, I must admit.

Started reading this thread this morning, really got my "juices" going, so just had to buy a pie maker (it was already on the wish list after D8yoS decided large pies cut into pieces aren't really a pie.

Already had most of dinner organised but remembered back to my squash tournament days being served vege pies and how good they were.  Gave it a burl and the kids (and I) loved it. DW a bit so-so but the kids and I fought over hers.

No real recipe as such but basically:

Carrot, onion and celery chopped roughly on speed 4
Add oil and cook about 5-7 minutes until carrot tender
Remove to bowl.
Add unskinned potatoes and skinned pumpkin and 250ml milk (may need to reduce), 20mins 100 speed 1 (basically as per tmx book)
Don't do the step with the whisk thingy (tired can't think of the name ;)
Remove the potato and add to carrot etc
Add peas and corn
Add salt, pepper to taste
Add beaten egg and mix
(Note at this stage I also added some shredded bacon so we'd have some protein with this meal - (as we were having vege pastizzis), but I think there wouldn't be an issue leaving this out)
Spoon into bases in pie maker
Sprinkle cheese over the top
Place sheet of baking paper large enough to cover all 4 pies
Cook until base cooked and cheese nicely coloured.

I used premade shortcrust for this. I think that's what I'll probably use in future to keep it quick and easy (but I must say compared to the tmx made stuff it's no where near as "short" - certainly wouldn't use it for my quiche.)

There was enough veges for 2 batches so I'll freeze the rest for a Q&D side vege meal that the kids will fight over.

Would also make a good healthyish lunch  8)

We have a winner!

Term goes back to my old programming/hacking days.

Maybe "Quick and Delicious" would be more appropriate though!

I also forgot to mention the mix should be pretty thick - too thick to eat normally - as you heap it up to make a mound. Basically same shape top as bottom (why you need the baking paper).

If it's too runny to do this add instant mash potato which will thicken it and keep the flavour consistent.

Umm I sorta just made it up this time: foil, spray, beef on then rubbed bbq sauce all over it, sprinkled onion flakes, spicy seasoning etc over then loosely wrapped it, steamed 1.5hrs in varoma (just over 1kg meat), unwrapped meat and let juices run into bowl, make gravy from that.  Slice and ate the beef with the gravy (and the rest of tea). Leftovers were cut smaalish the put in the leftover gravy, fried some diced bacon and added that then just chucked a handful of grated cheese in the mix. They are delicious...we all love them and it turns leftovers into a whole different meal.  ;D

I've been making a really nice pie filling in the pressure cooker. I add some diced onion to the pressure cooker on the browning mode until it's soft, add some diced bacon until it's a little crispy, then add about 500g of diced beef and brown it a bit. Then I add 1 cup of beef stock and cook it on high pressure for 20 minutes. When I'm assembling the pies, I spread some kraft cheese spread on the top pastry piece, and put it on cheese side down. It's really nice - the cheese melts through the pie filling.

The main reason I wanted the pie maker was because the cafe near my place used to sell the most beautiful pies, and slowly they've been getting worse and worse. The meat was getting fattier and the pastry was getting soggy - they were obviously microwaving their pies. This 'recipe' is the perfect replacement for those pies.

I used the mini one on Saturday to make some apple pies then some apple and custard ones - all went in the blink of an eye. Then I used my flat one for beef, bacon and cheese ones (again)  then shredded pork in gravy ones (again.) So so loving turning leftovers into totally new meals, and making pies for DHs lunches feels good too!  ;D

They look lovey.

I find the mini pies great for parties & playovers or kids lunches at home. Great if you have a small amount of left overs, freeze & defrost put in the pie maker when ready. I used to always make my astry but I do keep a pkt of puff in the freezer now at all times.

Uni, it depends on how much time i have available. I just find the pastry isn't as good as cooked in the oven and there is much more of it than if I was making in a muffin tin or individual pie tins. They are certainly quick and easy though. Also our family are all quite small eaters and don't seem to gobble down the food as much as others, the pies always seem to sit in the freezer until I force them on people  ;D

Even better is DD now has a boyfriend - 17 year old boys eat much more after 6 hours of footy umpiring than 17 year old girls do at anytime in the week. boyfriend also has a 16 year old brother and a family who so far seem glad to eat all the left over biscuits that my kids don't eat.

DJ, i make heaps.

From an incident I used the creamy chicken pasta recipe on here before adding the pasta. Ses chicken & mushrooms

You can do so much, pre-cook chicken, use edc whte sauce and add cooked veg, nice

On stove cook up chicken with garlic, onion, any other veg, corn, mushroom, carrot, leek whatever, bit of white  wine & some cream, yum too.

So much choice, have fun :)

DJ, the SOS recipe base (http://www.forumthermomix.com/index.php?topic=11397.0) makes the best pie I've ever tasted. Both Chookie & I have made the filling using this base and then it's just a matter of sauteeing some mushrooms and chicken (or adding leftover cooked chicken or pork).  So simple, so delicious.

I had a pie making day recently.  Made 14 pies.  My pie maker makes Traditional size pies.  I used Uni's  Sour cream pastry recipe for the bases and butter puff for tops.  Uni's recipe is great as I could roll it very thin.  Normally I dislike pies because of the high ratio of crust to filling.  I also rolled and cut additional tops and bases. And froze these with lunch wrap in between.   These were ready to go,  next time I wanted pies.  I also used Uni's pastry for Apple pies.  I did. Not add any sugar to pastry.  I froze the pies in individual bags with a label. And defrosted  then repeated in pie maker.

Have the traditional size pie Maker.  I have just made 8 meat pies ,one Baked bean Pie and one egg pie. Ate 3 for lunch , will freeze the rest.  I find them so very handy for a quick meal.  Pop them frozen into Microwave and defrost, while this is happening,  heat up the pie machine and then reheat for 5 mins in the pie maker.  Judy told me that i needed one of these machines,  she was right. ;D ;D

Going to make some fruit mince pies too. I can't believe the gadgets I have been buying that compliment my TM, was t supposd to be that way

Without trawling through 35 pages of info I was wondering if I could get some advice. I've recently seen a pie maker for $40 and am really tempted to buy it. My DH needs a lunch made every day and gets a bit bored of sandwiches and salad and I think a pie would be a great alternative. What sort of filling would be good for it though? It will have to be something that can be taken out of the fridge in the morning and left to sit happily in an esky for at least four hours. He will not be able to reheat it. Would a chicken filling be a bad idea? I know I can do sweet fillings too but I'm thinking more along savoury.  Any ideas would be great. Thank you.

Brumington, I have one (Sunbeam I think). I don't use it all that often but just my comments on it would be they don't hold heaps of filling (so your DH may need at least 2 or 3 depending on his appetite) and also I'm not a huge fan of pies made with the ready rolled pastry as it's a bit thin ! Others I think have made them with home made pastry, but that would probably be quite time consuming on a regular basis.  Saying that, we do use it just not heaps.  If their in an esky with cold packs, it would keep cold enough though I would think.

Title: Re: Electric pie makers and recipe ideas ;)
Post by: judydawn on November 15, 2012, 04:19:50 am
Brumington, the best pie recipe at room temperature I've found is an egg and bacon pie - they are even better served this way than hot out of the machine.  I did some yesterday for a friend and she loved them as we do.  I got the idea on the forum somewhere and have played with that idea, grated parmesan in the bottom (I used bought puff pastry sheets, top and bottom), sauteed bacon with a couple tablespoons of caramelised onion (I make it in bulk and keep it in the freezer, packed flat so that I can just break a piece off whenever I need it), then crack an egg on top, add some pepper.  He might get sick of them all the time though so it will be nice if you can come up with some other ideas which can be served cold.

There are some nice recipes on the bbcgoodfood.com site - here are just 3 that caught my eye.

One which says it's nice served cold the next day - Spiced pork & potato pie (http://www.bbcgoodfood.com/recipes/531644/spiced-pork-and-potato-pie),  It could be quite easily made in the Thermomix.

I think this Chicken & sweetcorn pie (http://www.bbcgoodfood.com/recipes/461663/chicken-and-sweetcorn-pies) would be suitable as well -  no need to use the eggwash for the top of the pastry.

The filling for this spinach & potato pie (http://www.bbcgoodfood.com/recipes/10135/wholemeal-spinach-and-potato-pies) would be another good one - read all the reviews, you always get ideas there.

I think 2 should fill him.  It certainly fills us - 1 is not enough, 2 is plenty.  You'll get plenty of use out of it Brumington, it's the very best of all my purchases of late and so handy when you have a cupful of something left over - 4 pies for lunch the next day.

I am home alone today and playing with my Thermomix and the pie maker.  I just found a great link with lots of great pie maker fillings (pumpkin and feta pie for tea tonight)
www.mouthwateringmunchies.com/?cat=60 (http://www.mouthwateringmunchies.com/?cat=60) and this yummy one for dessert

Plum Cheesecake with Passionfruit Sauce
100g cream cheese
¼ cup condensed milk
1 egg yolk
1 sheet puff pastry – cut 4 large circles
1/3 cup roughly chopped plums
170g can passionfruit in syrup

Combine cream cheese, condensed milk and egg yolk, beat until thick and creamy.
Place pastry in pre-heated pie maker, add 1 tablespoon of plums and fill with cheesecake mixture to the crust level.
Cook for 6-8 minutes or until cheesecake mixture is set to touch and lightly browned. Let cool before serving with passionfruit sauce.

OR
Mini Baked Lemon Cheesecakes

A quick and easy dessert

Preparation Time:

Cooking Time: 2-3 hours

Serves: 6

Ingredients:

6 butternut biscuits, lightly crushed
185g cream cheese, softened
¼ cup caster sugar
1 teaspoon finely grated lemon rind
 1 tablespoon lemon juice
 1 egg, lightly beaten

Method:

1. Preheat cupcake maker until ready light goes on. Prepare 6 double lined patty cases for mixture.
2. Using an electric mixer; beat cheese, sugar, lemon rind and juice until light and creamy.
 3. Add egg and beat until well combined. Set mixture aside.
4. Divide crushed biscuits into patty cases; spreading biscuits as evenly as possible over base. Place cases into cupcake maker and cook, lid down for 3 minutes.  Open lid and using the back of a spoon; carefully press the softened biscuits down to form a base.  Divide cheesecake mixture evenly over bases.  Close lid and cook for a further 6 minutes.  Once cooking is complete open lid and turn cupcake maker off at the main switch.  Mixture will still be soft.  Allow cheesecakes to sit in cupcake maker for 15 minutes.
5. Carefully remove cheesecakes from cupcake maker; place on a tray and refrigerate for 2-3 hours or until chilled.

They where great Judydawn!!!!
The cheese cakes where a success also, I left one in for the extra 15 mins and it was better.
I used strawberries instead of plums and strawberry jam heated as the sauce.  I will be making them again although the pastry was a bit different so will try the biscuits next time.

Has anyone got the Sunbeam Traditional sized pie maker as in my link below?  I saw one today at an electrical store and it looked really good.  Makes normal sized pies which I like the idea of more so than the smaller ones. They also had a family sized one too but the individual ones would be more convenient these days.  :)

julieO,  got a replacement and made 20 turkey and seafood pies.  I freeze them in individual plastic bags.  It is just so handy to thaw in microwave and reheat in pie maker.  I use Uni's Sour Cream  recipe for the base which can be rolled very thin, and bought puff for the top.

I just made a big batch of meat pie filling then froze them in silicon muffin cups - they are a perfect size to fit into the pie maker for a quick meal.

What a good idea. I am off to fill my silicon cups with water to see if they match my pie maker. (remembering that the pastry will take up some of the pie maker room) I have several ideas for making pies ahead of Christmas and freezing them. It is sad that my suggestion of my egg and bacon pie which is a great favourite will probably not freeze well due to the whole egg content as frozen eggs go rubbery don't they?

No I don't freeze my egg & bacon pies - like DD, I am just not sure how whole eggs would freeze.  If it's beaten egg, yes.  I usually make them and just leave them in the fridge as I love them cold like English pork pies (not that I've ever eaten an English pork pie but I do know you eat them cold  :P).

Robyn are yours made with whole eggs that you freeze.

Funnily enough Judy, I was thinking of pork pie when considering freezing as we here have pork pie (made in long loaf tins) and these have whole eggs sunk in along the whole length. Yes they are eaten cold. I have found the eggs go a bit rubbery in these kind of pies if they are frozen. Well of course I suppose that I could find out for myself.  It just goes against my scroogyness to waste even a little pie.

Many thanks all for your good wishes. I am well and looking forward to Chrimbo and a better new year than the last.

I had a quick go using my new pie maker today.  Made the filling yesterday (crispy potato & beef pie filling but with no potatoes) in my pressure cooker and then let it simmer uncovered for about 20 mins on the stove top to thicken up somewhat.

I just made enough pastry for 4 bases and used bought puff pastry for the tops.  Was quite happy how they turned out, I just need to pefect my assembling technique  ;D otherwise for the first time they were really good.  Of course the tops aren't the lovely flakeyness that you get baking in the oven, but I think I can overlook that.   Love this size, they are the same as the ones I usually make.

Will play with it more after Christmas is over when I have more time, would like to try different pastry base recipes.  :D

Hally, what do you think of the "Hand held pies book"?  It's available as an ebook for less than $9.  :)

Julie, there really isn't a technique to putting the tops on, you just sit them on top of the filled base and when the lid is closed it does all the work for you.  The bases I pinch together whilst the machine is heating up and have everything ready to go.  I'm basically lazy when it comes to pie making and want things to happen as quickly as possible so I use puff pastry on the top and bottom. It pays not to have the pastry thawed too far in advance as it becomes a little soft for handling, just thawed is perfect.  I couldn't believe how easy it was and didn't think the edges would be sealed.  Your pies look rich and delicious.

Thanks Hally, I think for $9 I'll just get the book.  :)

Judy, the tops were easy, like you say I just put them on top and the machine did all the work.  It was the bases I was slow at as I just plonked them in un-formed and pressed them together in the hot machine with my fingers.  :-))  I will pre-form them first next time to make it easier and quicker.

That filling I made last time was really good in these and I've taken the rest out of the freezer to make into pies today.  Am looking forward now to using it more especially with left overs.  I will give it a try with all puff at some stage too. :D

You press them out Hally then where the cuts are, you sort of pleat them into a little basket.  Do you know what I mean? You then pick up the 'basket' and place it into the pie maker. Doesn't it tell you to do this in the book or have I just presumed this is the way to do it?  It is so easy.

rather than try and pleat them, I cut from the outside of the pastry circle into the centre of the circle and then overlap it to fit into the required space.

Title: Re: Electric pie makers and recipe ideas ;)
Post by: JulieO on December 31, 2012, 06:15:35 am
I made my own shortcrust for the bases which was just enough for 4 but I think I rolled it too thin as it was hard to form into shape without it falling in on itself, but I managed to get them in there okay and they turned out fine.

I had enough filling for 2 more and had 2 sheets of puff in the freezer, so after cleaning up I used these for tops and bottoms.  How much easier it is to use that.   :o     The thickness of the pastry and getting it at the right time of defrosting made for easy forming etc.

Whether I'd use it all the time as I need one sheet of puff per pie because of the size of my pie maker but it sure made an easier job for me.  ;D

I just scored a $3 pie maker from one of the larger convenience marts, it only does 2 at pies at a time. My only issue is using the store bought pastry. I usually try to buy the butter one, but this time there was only the vegetable oil one :(

I have now got the big thumbs up on buying my family pie maker from DH (who thought I didn't really need it but it was my domain (the kitchen) so I could get it if I wanted...) - Now he is asking me to make him that size pies - and he has them at work cut in half (so half/meal). I did my normal bacon and egg quiche in it on Sunday night, and he was impressed "that machine takes 1/2 the time to cook, and alot less energy - it is a good thing!"  :D :D Yay!! Girls love them too, great for Friday night or lazy meals!!  :)

McMich posted this recipe in another section, I thought it would be a handy one for this thread

Mini dampers in the pie maker.
I used: 290g S/R flour
220g milk
70g tasty cheese grated
About 1/2 cup of parsley, rosemary and thyme.
Put it all in the TM bowl, kneaded for 1 minute.
Divided it into 8, rolled into balls and pressed into pie maker cooked for 8 minutes.
Too Easy

Used my new pie maker for the first time yesterday.  I made meat pies using Tenina's beef and ale pie mixture (FFS) but cooked it in the slow cooker the day beforehand.  For chicken pies I panfried chicken, leek and mushrooms, added Uni's SOS sauce mixture, peas, corn and roasted pumpkin.  A delicious filling for the pies!

The pie maker worked really well, and I was really happy with the pies.

I have a question for others who use a pie maker - what pastry do you use for the bases?  I used commercially bought shortcrust pastry for the bases, but found that I could get only one pie base from each sheet, and there was heaps of wasted pastry.  I tried to put all the leftovers together into a ball, knead it and roll it out again, but the pastry was really tough and rubbery, and I ended up chucking it out  >:(

I was happy with the commercial puff pastry as the top, but would like to do something better with the bases.  Any suggestions??

Karen I use store bought short crust on the bottom and puff on the top. I can get four bases from the one sheet but my pie maker is small pies not sure what size your pies are they must be bigger.

From 1 sheet of pastry. I use puff on the bottom and the top, I get 2 bases and 2 tops. I cut a base circle and top next to each other and do the opposite underneath a top and then a base. So they tops and bases are on the diagonal to each other.

I use store bought short crust for the bottom and puff for the top and get 4 pies from each sheet (so a total of 2 sheets, 1 puff and 1 shortcrust for every 4 pies), there is still a bit of waste but not much.
Title: Re: Electric pie makers and recipe ideas ;)
Post by: judydawn on July 18, 2013, 01:42:11 am
I've used both and now mainly use puff for both top and bottom so that I can get through a packet of pastry a lot quicker.  I find gathering the bits and pieces to make more tops and bottoms isn't that successful either Karen and the pies made with them never seem to brown as nicely as the first lot of cut outs.  You must have the large pie maker if you can only get 1 out of each sheet.  Your pies look lovely, bet your boys enjoyed them.  These are great standbys for the freezer and it's so easy to make a dozen or so individual pies at a time.

Maybe my pie maker does make bigger pies  ??? ???  There is just no way I can get 4 bases out of one sheet of pastry.  The cutter for the bases measures 15.5cm in diameter ....... is that the same size as yours?

Either that, or else I am buying different pastry ...... I am using Borg's brand of pastry.

I dont know if everyone already does this but I freeze 1/3 cup of filling in a silicon muffin tray ( once frozen remove from tray and bag) this is the perfect size for my pie machine. Best to microwave before cooking or take out of freezer to defrost. Very convenient though.

I've never thought of doing that Bedlam, I always make all the pies and then freeze the actual pie.

Pampas puff pastry sheets are 24.5 x 24 cm Karen.  The pie cutter base is about 10.5 cm and the top is 12 cms.

So your cutter is much bigger than mine and is obviously the problem.  What make is your pie machine? Don't answer that Karen, I've just read on another thread that it's a Sunbeam, the same as mine (mine's called the Sunbeam Pie Magic 4).  I wonder why the cutter size is different :o

 .

I've had my Breville Mini-Pie maker for several months.  I've made a variety of items in it including chicken & leek pies (very good), Aussie meat pies (must find a better recipe), mini-deep-dish pizzas (surprisingly good), chocolate chip muffins (fair), egg mini-pies for breakfast (okay), and several other things.

Muffins: cooked directly in pie maker, no liner used, came out fine.

Pie lifter: ordered one just now, over-priced, hope it is worth it.

Pastry: to date have been using store-bought and not too thrilled. As of now I'll be making my own in my Thermomix.

Burnt edges: recently read a tip to raise the top part way through cooking just a tad by inserting a couple of wooden popsicle sticks. Plan to give this a test.

Preheating: after much use I've found it works best to NOT preheat the Breville. As the fillings must be pre-cooked that's not a problem. I let it cool down a bit between batches, makes it easier to put in the pastry, no burnt fingers and results are just as good as preheating, sometimes better.

Changes: detachable plates to make cleaning easier if the non-stick properties wear off in time though at the moment it cleans incredibly easily; a thermostat perhaps, not too sure if this might be useful; and it would be really good if they included a pie-lifter in the box.

The Breville pie maker was an online impulse purchase when I saw it at just $44 with free shipping. I am sure it must have been a mistake because it was much more expensive on the same site the very next day. I would probably never have bought it at its regular price but I am really glad I got it, I use it a fair bit, it's quick and easy, and pies generally freeze and reheat well.

I can't speak for other brands but I would recommend the Breville mini-pie maker to others as a useful and easy to use gadget.

I have the 4 pie maker and the mini pie maker and love them both. Usually I make the bottom pie cases myself (short crust pastry) and top with store bought puff pastry.

After much experimenting, I do the same as mcmich.  I make the EDC shortcrust pastry myself and use store-bought puff pastry for the tops.

I have found it makes it a bit easier to get the bases into the pie maker if I chill my shortcrust pastry circles for 5 mins or so in the freezer.  Just firms them up and makes them easier to handle and get into the pie maker quickly.

That's a really interesting idea about not preheating it Yarrenbool.  How do you know when they are cooked?  Do you just keep peeking inside to check?

Yarrenbool,  thanks for your tips.  I find the best meat pie filling has small pieces of beef and minced beef. The flavor  of the gravy is also very important and is worth taking some time to get just right.
I have made curried Scallop pies and pasties,  as well as Apple pies,  all of which freeze well.

I've made individual dampers in the pie maker. JD posted the recipe on pg 41 of this thread. I can't see the photo with it.
It's here (http://www.forumthermomix.com/index.php?topic=320.msg270534#msg270534)

This thread is ridiculous! So I just had to summarize it and buy a piemaker. Uhh, did someone say something about cutting DOWN on appliances? Oh dear.

At least it was only $10 at an op shop, but I wish I had a pastry cutter.

Anyway, the summary - for those who are interested:
https://www.evernote.com/shard/s13/sh/c62a9e5e-7002-45d4-9832-7f88b3004311/ac669ad0cb8f4492bff0ef5fd6eba73a

I made some kind of chickeny vegetable improvisation in the thermomix and gave it a test run tonight. It's a success!
I am still building up the courage to make my own pastry in the TM...

I had to get one a while ago because of this thread too (all of $15 for me, also second hand).

Thanks for the summary as I have not been very adventurous yet and need something to inspire me  ;D

Give the pastry a go!  I've only made the EDC one for pies and it's been great.  I've done that for the base and bought puff sheets for the top, but I think I prefer just the EDC pastry for the lot.
I was scared of pastry, and for the pies was my first attempt in years (first ever TMX attempt) and now I make all sorts of pies.

Dustbunny the thermomix saves us from needing rice cookers, blenders etc but now many of us have air fryers, icecream machines, pizza ovens, pie makers and goodness knows what.

Yes, so nice to be coming into Winter - yay for comfort food weather!

It's awesome - Mum ate 3 today... now I have to see if I can find a pastry based on coconut oil, it's supposed to be good for Alzheimers patients. I'm not sure if it's even possible, but I will find out soon.

I'm glad my summaries are helping others too :)

Now I'm starting to wonder if I should have gotten the one that makes 4 pies at a time...

Thanks for the pastry encouragement -it IS scary! I don't know why it is, but I should just bite the bullet and try it.

I hope I haven't missed anyone, I haven't been on a forum in years and I've forgotten how to acknowledge what everybody has said without looking like some kind of weirdo!

I was hoping someone on here could help me.  I usually use bought shortcrust pastry for the base when making pies in my pie maker, but today I thought I would try making my own.  I used the recipe for the rich shortcrust pastry from the UK everyday cooking book (kindly posted by Judy  :))  Although the pastry was really easy to work with, as soon as it went into the heated pie maker it started shrinking down and contracting in size, and when I went to take them out of the pie maker, the "lids" or tops of the pies hadn't sealed with the bases, because the pastry bases had shrunk so much.   When trying to lift out the pies, the tops just came off and the pies stayed in the pie maker.   I never had this problem with the commercial bought pastry.  Any ideas why this might have happened and how I could fix it?  Was the pastry too rich, too short ???  Would another recipe work better??

I'm no expert on pastry Karen but did you rest it or did you roll it and pop it straight into the pie maker?
Title: Re: Electric pie makers and recipe ideas ;)
Post by: KarenH on May 17, 2015, 05:15:39 am
I rested it in the fridge for a couple of hours after making the pastry, but after I rolled it out and cut it into the pie bases I bunged it straight into the pie maker.

Not sure how many times you have to rest home made pastry but I would have thought 1 rest would have been enough.  Maybe one of our pastry chefs can help you Karen.

Karen when I make pastry I rest it in the fridge after making it.I then roll it out cut out the appropriate number of lids and bottom for my pie maker.I then rest these in the fridge too.The bottoms do shrink a little after coming into contact with the hot surface of the pie maker but not too much.

I've used homemade short pastry. I use flour, 1/2 the weight of the flour in butter and then just enough moisture (water) to bring it together. I then push it together with my hands, wrap it in Gladwrap and res t for at least an hour.
I don't rest it after rolling and cutting, but that would probably help.

Karen, I find that Kimmy's quiche pastry http://www.forumthermomix.com/index.php?topic=11982.0 (http://www.forumthermomix.com/index.php?topic=11982.0) works very well in the pie maker. It makes enough for 4 individual pies, and I use a sheet of commercial puff pastry for the lids. Her pastry is very forgiving- I've substituted sour cream or yoghurt for the cream. This week I used pork fat instead of butter when making pork pies.

Thank you everyone for your suggestions.  I will try again using another recipe.  I really liked the UK recipe, but maybe it wasn't quite right for the pie maker.
