French Onion Soup

I've never made it at all (just used the packet stuff *blush*), has anyone got a tmx recipe for it?

Someone will probably come up with a proper recipe Ayla but I just had a thought that perhaps you could use caramelised onions and add some beef stock - reckon this would work?  Go to Starters & Snacks and look for the caramelised onion thread, read the lot but particularly that posted by Tenina which tells you how she does her onions.

I have made it a few times - similar to what JD said - just onions into TM bowl and a couple of seconds on speed 5, then some butter or oil and a little water and sweat at 90 degrees on speed 1 for about 20 mins from memory before adding beef stock and adjust seasonings. 

There should be a more authentic version in the French book - will check the French site also.

Spanish Book recipe is as follows Ayla :-*
Serves 6
Ingredients
130g cheese (to melt on top)
1000g onions
50g olive oil
1 litre chicken stock
salt and white pepper
500g water
6 pieces of toast

- Place in dry jug, the cheese first, and blitz for 10 seconds, Speed 4. Keep aside.
- Place onions in THX and chop 5 seconds, Speed 4. Use spatula to help. Keep aside.
- Place oil in jug and program 5 mins, Temp Varoma, Speed 1.
- Add onion and cook 20 mins, Temp Varoma, reverse, soft speed.
- Then add stock, salt, program further 20 mins, 100º, reverse, soft speed.
- Add pepper, water, check for salt, program 2 mins 100º, reverse, soft speed.
Pour into individual heatproof bowls , and place on each one, toast and cheese and hot grill 1 minute.
Serve immediately.

Has anyone tried garlic soup? This is a similar recipe, very nice, although only garlic and water, bread and eggs. Great recipe when nothing left in fridge! :o :o :o Its a traditional Spanish soup from centuries ago, made very cheaply!! My father loved it! If anyone is interested, I can post the recipe.... ???

Yes please.  I love ajo blanco but a hot version with eggs sounds good.
