i haven't been on here for a while but just noticed this - i was excited there may be lots of ideas for recipes combining TM with EXC, but not yet :)

I have a share in an excalibur - so far there are 3 of us but we are planning to find a 4th and rotate it every week or two.

Still getting to grips with it beyond activating nuts and fruit leathers, but always on the lookout for good recipes sp will keep an eye out here :)

yes Judy, thanks it does - though I wish it would also say which option is best for which type of result/cooking.

chelsea i think spelt is also out but most others are ok - i might try grinding up some oats, mix with a couple of others and see what happens there..

thanks!

hi all

we are off eggs and wheat - just wondering what the best substitutes for this would be? i have buckwheat, millet, rice flour etc

and for the egg - i do have egg replacer but would prefer something more real if possible

thanks!

quick question - spelt is a problem for me apparently. no mention either way on kamut and I bought a huge sack of it recently  - any idea if this should be ok or not? Or even at least a bit better than wheat while I make the transition?

thanks :)

I love the healthybake breads, the tastiest wheat free ones I have found

But they are Sooooo expensive!

Anyone feel up to trying to devise a recipe for this one?

Special Diets / Where to start!

Hi guys

just back from the naturopath who has diagnosed DD1 (3yrs) and me with intolerances - not too many but the most difficult ones of course. Esp as I was really enjoying all the baking in the TM

So, feeling a bit overwhelmed esp as DD2 (5mths) had me start the day at 5.30am then not sleep more than a few minutes all day so my brain is fried.

looks like we both need to avoid eggs and wheat/gluten, spelt

oats are ok
buckwheat ok
rice ok

i also need to avoid almonds and peanuts, whereas DD is ok but can't have all that for pre-school where they are nut free

dairy not good for me (though goats milk and likely A2 or possibly raw milk ok) - all fine for DD though

All tips on where to start and great recipes that never fail to please a fussy 3yo with a sweet tooth and a severely sleep deprived mum with no time to herself would be much appreciated. breads, cakes, and general other snacks and suggestions

thanks so much :)

Jams and Chutneys / Re: Anyone successfully made a nice jam?
« on: February 21, 2011, 12:25:11 am »
well it was very hot - prob 10-15 mins off boiling. pleased i'm in good company with maggie beer - i felt so ignorant!

i didnt use jam covers either - just the lids..

i have 3 jars so might look at recipes to use it in baking sooner rather than later :)

would it be worth me recooking my plum and berry jam tomorrow so i can sterilise the jars as i didn't realise that was important before and had only washed them out. is it too late to save it from going mouldy without doing that? i made the jam this afternoon and its been in the fridge since then

i made plum jam today with a few strawbs and blueberries too. so easy and tasted lovely warm, will try tomorrow cold.

made over 3 jars full...now i'm worried as i started looking up how long it would last and see you have to sterilise jars not just wash them out - why is this and what impact will mine not being sterilised have?
