I've just discovered how easy it is to make your own coconut cream & milk in the TMX. Saw this in a Charmaine Solomon curry cookbook.
1 cup desiccated coconut (80g)
300gms hot water
Blitz on speed 10 for 30 seconds. Strain through muslin cloth, squeeze as much liquid out as you can.
Then repeat - put the strained coconut back in *: add 300gms hot water, blitz again for 30 seconds and strain through fine cloth.
The first batch will separate & develop a thick creamy layer, and the second batch is thin and milky. Charmaine says both would normally be mixed together, unless you're wanting a thick cream specifically.
600mls for $1 using organic coconut :)

its also on p32 of the EDC, very nice and hasn't got that silvery grey stuff that clings to the canned variety (nasty)

I had a search on forum but didn't think to look in EDC, so a little mortified when I saw your comment CP!! But I now I'm looking and all I get on p32 is Hot Chocolate, Cappuccino & Irish Coffee. Nothing in index either. Mine's March 2011.
Nut milk too, that's what i've been making a bit of lately, almond or cashew with a hint of vanilla & mixed spice, so much nicer on muesli than cows milk I think, and delicious in chai tea.

It is now in the Indian cookbook (pges 11 & 19) instead of the latest editions of the EDC as far as I remember reading.

Helene's blog (http://www.superkitchenmachine.com/2011/13419/thermomix-coconut-milk-recipe.html) also has a discussion and photos of the process described in the Indian Cookbook. Sensibly she warns to use rubber gloves when squeezing the cheesecloth to avoid burns. I find it super quick to make in whatever volume you need at the time. I did find the 'second milk' so watery that it wasn't worth doing, but maybe that was the quality of my dried coconut.
