I wish we'd all worn a red carnation so we could recognise each other!  I don't know any forum people in 'real' life other than Jo, but would have loved to have met and yakked.  I don't really look like a black dog.   ;) ;D ;D

Hey everyone,
Surely there is a thread on this somewhere? I was privileged to meet Quirky Jo in the flesh and attend her demo at HO on Friday.  Great dishes and lots of great tips and ideas exchanged between her and the animated audience.  Jo's main course chicken dish with the most delicious coconut, coriander and cashew sauce and with vegetables all done in the Varoma was delish.  Jo handed out the recipe for this dish and said her other demo recipes had just been put up on the recipe commmunity. 

Jo, could you please post the link to those dishes for us here?

Zan, I prefer half and half beef and pork mince in bolognaise, and I would usually use beef mince in chili con carne too.  A nice lamb burger would go down well this time of the year I guess.  I just wondered if there was a dish I could make that actually involved cooking the lamb mince in the TMX.  JD's lamb sauce for pasta sounds definitely worth a try  :)

Ok, the coconut oil experiment has been of mixed success.  I'm very happy to cook with it, baking is fine, it's a great substitute in the TMX for sauteing, and to shallow-fry it gives lovely results.  It has a lovely texture.  The only thing is that the beautiful extra virgin coconut oil I'm using does have a strong smell of coconut.  DH finally said that he is "sick of everything tasting of coconut" - oh dear -  :'( - as he ate his Bacon and Pea Risotto.

What to do?  Is there a version of the coconut oil that doesn't have such a strong coconut smell??

Help!

My consultant resigned the day after doing this demo for me, ie today, and I can't find the recipe in the FSA recipe book.  Help please!

Speaking as a dairy farmer's granddaughter, just remember that cream is milk fat suspended in water and is an entirely natural product from beautiful Australian cows.  Everything in moderation!  ;D ;D

As for carrageenan, it's a seaweed-based vegetable gum.  There was a program on SBS a week ago showing a chef harvesting it by hand from a beach in England, boiling it up in his billy, then using the extract like a as a thickener (like a gelatine-substitute) to make a mussell mousse with it.  I guess if you eat seaweed in Japanese food you must be getting the same sort of products as you ingest from carrageenan.

Jo's gluten-free, dairy-free Choc-Hazelnut Brownies are delicious.  My 10 year old doesn't realise they're 'healthy' food, because they taste so good .... if you know what I mean !   ;)

I'll buy a copy of your book Jo!  If you got stuck in, you could add on an extra profit margin to raise funds for the flood victims  :)
