Banana Cake

Converted from the Healthy Food Guide, August 2012 issue.
Serves 12.

Ingredients:
80g reduced fat table spread (I used Nuttelex Lite)
100g brown sugar
2 eggs
300g bananas (peeled weight), this was about 4 small/medium bananas
1 tsp bicarb soda mixed in 2 tbsp warmed skim milk
150g plain flour
75g wholemeal plain flour
75g cornflour
1 tsp baking powder
I added 2 heaped tsp Crio Bru grounds but this is not in the original recipe

Method:
1. Preheat oven to 180 degrees. Grease and line a 20cm cake pan.
2. Beat spread and sugar for 10 seconds/speed 4. Scrape sides of bowl and beat again if not yet light and fluffy.
3. With motor running on speed 3, add eggs, one at a time, through lid. Continue to mix until well combined, scraping sides of bowl if necessary.
4. Add banana, in pieces. Mix for 20 seconds/speed 4 or until reasonably smooth.
5. With motor running on speed 3, add bicarb/milk mixture through lid. Continue to mix until well combined.
6. Add flours and baking powder. Mix for 10 seconds/speed 4, scrape sides of bowl, and mix for a further 10 seconds/speed 4 or until smooth.
7. Pour mixture into prepared pan and bake for 30-40 minutes or until a skewer inserted into the cake comes out clean. Cool for 5 minutes in pan and then turn out to a wire rack to cool completely.

Chocolate Icing
Mix:
150g icing sugar
1 tsp reduced-fat table spread
1 tbsp cocoa powder (I used Crio Bru grounds)
1 tbsp boiling water
for 30 seconds/speed 4 or until smooth. Add more sugar or water depending on consistency. Spread over cold cake.

Per serve, this cake contains:
997kJ
4.8g fat
178mg sodium

Compared to a serve of original banana cake which contains, on average:
1846kJ
25.5g fat
385mg sodium

Please note that I used more icing than recommended ;D

Especially if one typically serves banana cake with lashings of cream and ice cream :-)) :-)) :-))

Just personal pref.. I dont like diet or low fat anything... Prefer to enjoy something naturally in small portions than something chemical or made with substitutions...i was amazed how hard it is to find pure butter.. And not some blend of something or another.. Anyway thats a whole other discussion.. Again just my preference..

Looking forward to photos though amy.. Im sure it looks delish 😁

And I value everyone's preferences Kim :D Have you tried making your own butter?

Photos will be soon :) The carpenter is here in the kitchen again and there's sawdust everywhere, so I'm waiting until he's gone before I make the icing and put on the cake ;)

Oh feel for you amy.. Horrible dust anything but at least it gets you closer to a finished kitchen!!

Yes made it often in france but also bought it from local farmers and stores.. Could buy large quantities of pure cream but have only seen small tubs or cartons of it locally.. Willhave to try and source larger quantities from the local dairy maybe..

I hope you can source some pure cream and butter somewhere Kim, surely there must be someone out there who sells it :-\ If you move somewhere else because of job opportunities, maybe you will find a good source there :D

True about our kitchen, but I feel more for you having access to a kitchen but not being able to use it :(

True.. Very frustrating.. Think ill cook for a week straight just to get it out of my system.. Built up frustration but it could always be worse! Such is life..

I can find cream but not in large quantities.. Max 300ml locally.. I havent really searched either amy i mean for the moment whats the point ???

Ah... yes... I see your point about there not being much point ??? :(
Unless you're having a real down day and the only think that would cure it is a 600ml pot of pure cream ;D
Sorry, that was a lame joke :-X

Maybe when you find your new house, buy a couple of chest freezers and cook every freezable recipe you know to fill them up ;D

It was yummy Kim :D Tasted more "real" than cocoa. Obviously cocoa would have looked smoother because it wouldn't have had the little grounds in it, but it was another good way to use up the grounds! ;)

My lemon tree ends up with most of my crio grounds. It gives me good lemons when they ripen though, so that's fair.
