Steak Diane Sauce - 4 serves
1 small red onion cut in half
3 cloves garlic
15g oil
50g bacon pieces (optional)
1 tblspn worcestershire sauce (I used the TMX one which is stronger than bought variety, may need 2T of bought one)
3 tblspns tomato sauce
150mls cream
Chop the onion and garlic 6 seconds on speed 6
Add diced bacon if using and saute in the oil on Varoma, speed 1 for 4 minutes, mc lid off
Blitz 10 seconds on speed 6
Add sauces and cream and cook for 2 mins 90o speed 2
Check for smoothness of the sauce and blitz further if required. The sauce is smoother without the addition of the bacon but the bacon does add a nice flavour to the sauce.

A lovely old favourite. I do Steak Diane with mashed potatoes that have had peas folded through. I will try your sauce Judy.

JudyDawn: You can make worcester sauce in the TMX? Really? Is there a recipe on the forum? I searched but I couldn't find one.

Worcestershire sauce is under Jams & Chutneys vivacity. I think we should have a thread for sauces & dressings though.

My diane sauce recipe has brandy in it ;) 2 tbsp worcestershire sauce, and 1 tbsp brandy. Try it ;)

Will add it next time Depome - have plenty of brandy in the house as SIL brings me a bottle back everytime he goes overseas and I'm not drinking it as much as I used to.

Excellent, I was just wondering about Diane sauce. Another one for me to add to my folder. Obviously its been awhile since anyone has commented on this. Now it will be at the top of the page for others to see too. ;D

Thanks for bumping this up to the top dede. I almost completely forgot about Steak Diane - it is an old restaurant favourite. I've had Shrimp Diane which was equally as good (not sure if it has the W sauce though). This is definitely on my 48 page and ever growing TM recipes that I'm madly printing off this forum. :o Thanks for sharing, judydawn.

Made the Dianne sauce tonight, and liked it.
For personal taste, I will reduce the tomato sauce next time :)
I did add the bacon, and used turbo a few times to get it really smooth.

Did you use this recipe? Did you make any tweaks? My DH still reminds me of the one thing I haven't managed to make in the TMX. I want to be able to make him eat his
words sauce.

I did follow the recipe, but I do have a confession......I have never actually ordered Dianne sauce with steak.....ever! I always go for mushroom....so I really can't compare the flavours :P
Not sure if it was the tomato sauce I used, but I found that flavour came through strongly.
Next time I will try 1 Tbsp...and see how we go ;)
As for pepper sauce.....would LOVE for someone to highly recommend one!
I'm afraid I now have a pepper sauce complex, after the amount of attempts trying to make that #@$%#$# sauce! :-[

For pepper sauce, I haven't tried it in the TMX, but this is what I do on the stove and it's yummmyyy, so you could always try in the TMX if you like, but here goes.
I chop an onion and fry in a little butter until transluscent
Then I add some freshly ground black pepper
Then I add some whole peppercorns (depends how peppery you like it but I usually throw in about 2 tablespoons)
Then I add cream (about 600ml, sometimes I do less if it's only two of us but it does reduce quite considerably)
Then I let it simmer away until it thins out and then thickens again and turns a darker colour (kind of like a caramel kind of colour). If it splits and goes oily, just add a little more cream to bring it back together (not too much though).
It's really yummy and tastes a lot like the pepper sauce we've had when we're out.

Had this for dinner last night with scotch fillet steak on the bbq and varoma veges. It was fantastic. We always keep a little packet of steak diane sauce in the cupboard so couldnt wait to try this one out. No fat, sugar or nasties....we were all really impressed. ;D

Hi Debbie,
just wondering if you use black or green peppercorns whole? I have never mastered this sauce and as it is my DHs favourite would love to give it a go :-*

We tried this tonight with bbq'd t-bones and it was delightful. I took advice of others and reduced the tomato sauce, included the bacon, substituted the cream with reduced fat philly cooking cream & it was perfect for us. Thanks JD for a yummy sauce :)

Have just made this to go with some rib fillet steak. I added 2 tbsp brandy and reduced the tomato sauce to 1.5tbsp, and also added bacon.
The taste I have had is delicious.

Made this tonight after a green peppercorn sauce disaster (seems like a few of us are having those?? ;) ). It was absolutely beautiful! I used two Tablespoons of homemade tomato sauce (my sauce is quite mild and sweet), 2 Tbs Worcestershire Sauce and...this is probably a Diane Sauce sin...added a teaspoon of cornflour before the final blitz to thicken it a bit. We did the bacon version.
Made a rather ordinary dinner (steak and veggies) seem rather gourmet, thanks so much for sharing! I haven't had Steak Diane in years.
