Title: Banana Cake

Banana Cake

115g butter
1 & 1/2 cups Self Raising Flour
small cup brown sugar ie a flat cup, not heaped or packed down.
3/4 teaspoon bi-carb soda
3 banannas (over ripe)
2 eggs
3 tabelspoons milk
1 teaspoon vanilla essence

Method:-
Insert the butterfly whisk.
Cream the butter and sugar - whisk at speed 4 until creamy (approx 1 min), stopping once or twice to scrape down sides of TM with spatula.
Add eggs and chopped bannanas, whisk till mixed (approx 10 secs).  Scrape sides of TM
Add flour, milk, vanilla & carb soda, whisk at speed 3 until combined.  Scrape down sides of TM

Spoon mixture into greased and lined tin (I use 20cm ring tin).
Bake approx 40 mins 180C or until skewer inserted in the centre of cake comes out clean.

Ice if desired with lemon or chocolate icing when cold.

CP - I must say it's the best one I have ever tasted. It is really soft and moist, and there won't be any left for tomorrow.

Amanda -  I made this cake to get rid of brown bananas and it was just lovely!  I had 4 bananas so I put them all in and I also took out the butterfly and used the blades to process after creaming the butter and sugar. It was light and lovely and devoured by teenagers! Thanks!

rainbow - I made this cake and although it was edible and nice it was quite heavy and stodgy, has anyone else had that problem?

CP - no mine turned out beautiful. It was moist being a banana cake, but not too heavy.

rainbow - yes to SR flour but later I thought that my 3 banana's were very large so maybe just a bit heavy on the banana's, we still managed to eat it and I will try it again. 

brazen20au - made this one today for visitors and also a few batches for the cake stall at school - it's delish! a definite winner!

virgo9 - Yum, it is very light and moist. Didn't put an icing on it, as our usual for banana cake is a sprinkling of icing sugar. Definitely much easier than my normal banana cake recipe. Thanks.

dede - DD made this today, smells so good. She said the cake wouldn't fit in the cake container so she had to cut a piece off and eat it. (good idea  taste great.

Cecilia - love your Banana Cake recipe.  Worked a treat today.

Tan - served with custard. It is actually the "lightest" cake I have made so far with my TM.

thermo18 - Well I have half a banana cake left only, made this morning and it's going quick, another recipe that will be made again and again.  I have also made them into muffins size and will put some in the freezer for another day, love this recipe so light and fluffy. 

deedub - Very nice and light - I didn't bother icing it, lovely just on its own. This one is definitely a keeper.

sue purrb -  it was a big success. So light and fluffy. I iced it with cream cheese with lemon juice and maple syrup added, and just a bit of icing sugar. This will be my "go to" recipe for banana cake from now on. Great recipe, Trudy, and thanks for putting it in your "favourites" CP.

GF - very popular!  Another one into the file of firm family favourites!!

Thanks Trudy - an old favourite the banana cake.  I used to make a cream cheese frosting for them.

It doesn't seem that long ago that we had no bananas - now they manage to go over-ripe  ;D ;D ;D

We were paying $11.00 per kg  >:( >:( >:(

They were just normal bananas - in fact many were very under ripe - but we had a huge storm in the part of Australia that produces most bananas and they were in very short supply.  So the price went up accordingly. 

I stopped buying them more because they became tasteless and too hard for what they expected people to pay.  Many people just kept eating them - but many people prefer them to be firm and tasteless.  (Including my wife  ;D ;D)

Over the past few months the prices here in Adelaide have dropped.  Last week I paid $1.70kg - still not the 99cents per kg that was around pre cyclone but it's a lot better!!!  Now that the north, Coffs Harbour ect ahev been hit by floods I suppose we can expect another price jump!!!!

That brings back memories Thermomixer - Here in WA they got to about $14.00 kg and I was pregnant at the time and suffering my first ever morning sickness with pregnancy number 5 so thought I would buy myself a couple of banana's. My DS (15 at the time) happen to walk into the kitchen and before I could even utter the words you touch them you die, his words were...DID WE WIN LOTTO OR SOMETHING...to which I had to ask...No why?? and the response was... We have BANANAS!!!

DD eats at least 1 banana a day and she ended up having to take potassium tablets for a while as she (and I) were too mean to pay the price they were asking for bananas at the time. :-\ :-\

Went to the local supermarket today, and flashed my best smile whilst asking for some over ripe bananas - ended up with about 8 lovely banana's out of the good pile that had just started to get some black marks on the skin and paid $3. Have to be pleased about that! Made the cake, and I must say its the best one I have ever tasted. It is really soft and moist, and there won't be any left for tomorrow  :-[

Just came back from Far North Queensland and am happy to say that banana production is well on its way to recovery.  The local bananas were soooo sweet - I wish I could have brought them back with me.

Just came back from Far North Queensland and am happy to say that banana production is well on its way to recovery.  The local bananas were soooo sweet - I wish I could have brought them back with me.

Very happy to hear that - love my banana's although we are also lucky enough to have Carnarvon here in the west produce them for us  :D

Green and all newcomers, be aware that you can't use the butterfly at speeds over 4.  Others have tried it and disaster has struck - little bits of black plastic throughout your mixture. Just a warning in case you haven't read this anywhere else.

Hi Rainbow,  Sorry you didn't like the cake.  Did you use Self Raising flour?  Plain flour would make it very heavy.

Bought me 7 ripe bananas for 1€ here in Spain so i decided to go for the Banana cake :)

Very nice cake and did not turn out to be heavy. I did not use the TM though and i also changed a bit in the order of ingredients as i think you get the same result with less work if you stir the eggs with the sugar and then sift in the flour and the melted butter.

Also i did not use any milk but i did add some chunks of white chocolate instead  :P

Used normal flour and 1tsp of baking powder and a pinch of salt

Its a 22cm silicone mold with metal on the top to keep the shape.

Im usually not that found of silicone molds as they are always too soft and loses their shape when you bake in them, but this one is very nice and they are very easy to clean :)

When they go brown I throw them straight in the freezer to make shakes, ice cream or cakes.

Silly question... What is a "small cup" of sugar? I was going to make this but I don't want it to be too sweet or not sweet enough. I only have 2 bananas do you think it will be ok?

Yes two banannas will be fine and the "small" cup of brown sugar just means not to heap it up - just a flat cup.

I think I will make this tomorrow as I have some lovely black banana's in my freezer.

I have a never fail one but and keen to try one in the thermomix.

I just have a query on this recipe:

Does the butter have to be softened first, or chopped up quite small? Or will the butterfly power through it regardless?  I've only used the butterfly a couple of times so far for soft things and don't know how strong it is...

in most cake/biscuit baking its apparently best to have the butter at room temperature unless otherwise specified. if you have only cold but have a microwave you could zap for 10 secs at a time until it has softened slightly when you prod it with your finger (but not melted).

20 secs is usually enough, but err on the side of conservative and you'll be fine.

I usually cream my soft butter and sugar without the butterfly (hate that it all sticks to it) on speed 3 to keep it low in the bowl - works well.

our house hold also really enjoyed this. made it yesterday and DH requested it again today - but had to be served with custard.

A couple of weeks ago we had 3 very very black bananas that were just about to be thrown in the bin by DH. "DON'T THROW THEM OUT!!! I'll make a banana cake!" and I did. And then a couple of friends came over for arvo tea and in 2 mins flat the cake was gone, and our friend said that was the best banana cake he'd ever had  :D (I doubt he would have eaten as much as he did tho if he'd seen what the bananas looked like ha ha)

Bananas that are black make the best flavored banana cake, although I never get to leave them that long as the kids eat them so quick they don't get a chance to blacken.

I have 4 bananas that have started turning black very quickly. Don't think the kids will eat them now (one spot of black and they don't touch them) bonus for me cause I will make a banana cake tomorrow or the next day.

I had some bananas to use up so made this yesterday. Very nice and light - I didn't bother icing it, lovely just on its own. There's so many banana cake/bread recipes on this forum, hopefully I'll get through them all! This one is definitely a keeper.

i am going to make this today;.

And if you freeze ur bananas (in the skin) they are suitable to add to cooking ( they will be very mushy and only takes a few mins to defrost ... well in north qld anyway  ;D ).... often by a bag of discounted banana's divvy them up into smaller bags and freeze.... can use them in the custard recipe too.

My kids eat bananas by the truckload.  We freeze them peeled and cut up and they like to add them to smoothies along with the ice. Smoothies come out Boost style.

We freeze bananas too and I find them much easier and cleaner to peel them first.

 In summer, the kids love Likety Sticks - frozen bananas on sticks.

Will never use any other recipe for Banana Cake again! Have made this cake 3 times in last fortnight for home and cake day at work.  My DH loves it and so do I :)

Made this yesterday and froze half for DH to take into work next week. He is always complaining that I take lots of cakes to my work. It's just that I know that that lot will eat anything!  ;D
