Title: Iced apple cakes
Post by: Zada on September 10, 2012, 05:16:47 am
I made these last night from a recipe off taste. I converted it to thermomix. Hope it's ok to post it?

Iced apple cakes
Makes 8

Filling: 4 apples, peeled and cut into 8's
           2 tsp cinnamon sugar
           1/2 MC of water

Cake: 1c plain flour
           1 c SR flour
           100g butter
           1/2 cup caster sugar
           1 egg
           2 tbs water

Icing: 2 cups icing sugar
          Water

For filling:
Place apples, cinnamon sugar and water into  *: cook 90 deg sp 2 for 8 mins.
Place in a bowl to cool.
For cake:
Place flours and butter into  *: , mix on sp 4 for 20 seconds.
Add sugar and mix sp 4 for 5 seconds.
Add eggs and water, mix sp 4 for 20 sec until combined.
Place on  *: and  :: approx 30 sec to form a dough.

pre heat oven to 180 deg.
Place dough on thermomat and roll out to approx 5mm thick. Using a cutter or glass cut 8 rounds out of dough and place on a baking tray lined with paper. Place some apple filling in the centre of the round. Using a slightly bigger cutter, cut 8 more rounds out of the dough and place on top of apple to form a dome shape.
Bake in oven for approx 25 mins.
When cold, ice and store in the fridge

KerrynN -  I have these in the oven now but I have way too much apple. Not sure what I have done wrong? The diameter of my cakes are approx 7cm. On the plus side there is enough apple left to make a family sized pie with some ready made puff pastry.
I ate one for lunch today it was fantastic! Just as I remember them being from when i was a kid. I wish I had just made extra cake dough so I had more. I can't imagine the puff pastry apple pie being nearly as good. I do now see the value of having commercial icing sugar in the pantry though. My icing, made with home ground icing sugar from raw sugar wasn't a nice color.

Zada - Depends how big your apples are? I should have written smaller apples, mine were quite small...sorry! Recipe has been amended.

Thank you for the photo. They look delicious - tho I had misunderstood the title of the thread - I thought they had somehow been frozen (iced... Ice... Cold)

I see no reason why they couldn't be frozen.
