Tips/Hints:
Can be made in advance, refrigerate until ready to place in oven.
Kulsha:These are lovely! I've made them twice with sweet potato. The first time was in the oven as per your recipe and the second time (tonight) we used the recipe as just mashed potatoes rather than baking (impatient). Very creamy, I think the egg yolk must cook when wizzing it through the hot mix (so I don't think we are eating raw egg yolk...)
JD:Yes the egg yolk would definitely cook during the mixing Kulsha, glad you enjoyed them.
Auds: I made these last night. They were delicious. Even before I put them in the oven the mash was yummy. Youngest son didnt like them but he has no taste.
DG: Kulsha, good idea with the sweet potato. DH and DS aren't fans of sweet potato but I love the stuff. Might mix both regular and sweet potatoes when I made this next.
DM: Made this for dinner tonight. Our family thank you, JD!
Wonder: It would be interesting to try this using the piping nozzle.
Judy, you don't think the mixture would be too thick to get through the nozzle easily?
JD: They will look so much nicer with fancy nozzels Wonder.
Not if you use a nozzle with a good opening, even the plain round one would work Wonder. I'll give it a try with some different tips when I receive them all so that you can see which one works best.
I received the 1M Wilton tip from Wonder this morning (thanks Wonder ) so decided to have a go at these potato bites using 3 different tips I have.
In other words, it is a lot of fuss and mess to go to when I think they all look muchy muchy. You need a very good piping bag, the mashed potato goes through the tips quite easily but I split a couple of plastic bags in the process and had to seek out my nylon one. Tips don't always fit in them though as the end which is cut off is too big so I had potato going everywhere. It is best to leave the potato to cool a bit but I haven't ever had the patience to let it cool completely so maybe that would work better.
For me though, the simplest way is spooning a dob onto a tray and running a fork around it before spraying with olive oil.
Astarra:You sure did put a smile on my face Judy... you are a champion!
The girls will love them I'm sure, but it was DH who has been telling me I just HAVE to keep trying to get it right, (he has loved all the failed trial runs) so it is really for him that I will be trying them out.
Maddy:I altered slightly
I doubled recipe, added 1/2 tsp garlic powder & 1/2 tsp onion powder. left out the chives
Used my Tbsp. sized cookie scoop, and the doubled recipe made 50 gems.
I kept the 2 egg whites, and in a cup whisked 2 Tbsp. rice flour into whites.
brushed over the gems
And baked for 35 minutes.
The egg white coating made the outside really crunchy, and the mash inside was so creamyThanks for another goodie Judy
Mab19: Made these to go with dinner last night. The GD's gave them the thumbs up.
Kimmy:Made these tonight and they are lovely. Used garlic butter, no chives and piped onto tray. Piped some into initials for the boys. Everyone loved them. Great way of doing mashed potato thank you.
Cookie:We had these for the first time last night. I just used lightly beaten egg white to brush over the potato and I was pleased at the way they turned out. Thanks Maddy and Judy.

Lovely Judy. Sort of like Duchesse potatoes.

These sound good, I hate mashed potato but I think I will eat these.

They are nice Breezy. I had some left over from my last lot so I just sprayed a non-stick pan and reheated them to crispy potato bites once more.
-
Made these Sunday night and they were a big hit. Thanks JD for another great recipe.

No worries Amy...but Judy sort of did it - well she put the link up in the shopping thread (I think it was) so I just clicked...and viola!! Happy happy me!! :D
Now I'm wondering what else is hiding in the depths of this forum... :D
-
There must be so many buried treasures on here..... ;)
Thanks Judy for posting the link that made astarra bump the thread which then ended up in my unread posts ;D
-
:D :D :D Bumping recipes gets things moving again - there are plenty of hidden gems on this forum.

I'm going to say its the middle one on the very left - the biggun :D

Yay CP wins the BMW ;D You must have really studied those bites closely CP.

-
AB if I lived with Maddy I would be 10 times bigger :D
-
Maddy, I found myself salivating at the screen!

Awesome Maddy they almost look like real potato gems. Thanks for posting tweaks. Will try these soon.
-
Delicious Maddy, I can't wait to try these now ;D I want mine to look like yours :D
-
They look fantastic Maddy! ;D
-
Good tweak maddy - that's a handy gadget, a 1 tblspn scoop. What did you do with the leftovers, surely you didn't eat them all in one sitting unless you had visitors ;)

What leftovers Judy? LOL....all went!
You have no idea how much hubby & son eat :P
-
I'm glad it's you feeding them and not me then maddy ;) They must have enjoyed them though.
-
MAde these to go with dinner last night. The GD's gave them the thumbs up. :)
-
Made these tonight and they are lovely. Used garlic butter, no chives and piped onto tray. Piped some into initials for the boys. Everyone loved them. Great way of doing mashed potato thank you.
-
I was going to make mashed potato to go with curried sausages tonight but think I'll make these instead so I can make the mash at lunch time and rice when I cook the sausages at dinner time. Thinking I'll give Maddie's version a go.
-
What could you substitute for rice flour in Maddy's variation ... or if I ground rice into flour would that do the trick?
-
I grind rice into flour for shortbread so I am sure you could do it for these. I think it was 1 minute speed 9 or 10.
-
Thanks, Cookie
-
We had these for the first time last night. I just used lightly beaten egg white to brush over the potato and I was pleased at the way they turned out. Thanks Maddy and Judy.
-
Marina I just ground up rice and mixed it with the egg white and it seemed to work. They were really nice and a change from roast potatoes.
-
I just read through the thread. Sounds and looks YUMMY!
-
I was a bit wary of making these because of so many posts in the past about problems and the pros and cons of mashing potatoes, however, I made them at the weekend and they were delicious. Unfortunately I was a bit heavy handed with Maddy's egg white / rice flour wash and that over-powered them a little (my fault for putting too much rice flour in with the egg white). Next time I will make them Judy's way. Very easy to make and incredibly moreish (good thing that today and tomorrow are my fasting days).
-
We were so greedy that we even liked them cold.
Marina I just used the egg white leftover and brushed them with that.
-
We love these here - having them again tonight (Maddy's style ones) 8)
-
Ready for the oven.... 8)
-
how come I didn't find these, making them now.
thanks Judy :)
-
You're off to an early start Robyn.
-
Yum once again Judy, thanks so many million times!!!
Just in case anyone is interested - I use Nuttelex in place of the butter which then makes this a dairy free recipe :D
-
Glad you and the family enjoy them astarra.
-
I like the look of these, something for the menu this week. Also didn't know about nuttelex ... Thanks Judy & Astarra
-
Have the potatoes for these mashed again now - to find out I had only approx 10cm of baking paper left... :-\
seeing what I can find to use instead cuz I don't want to go shopping....... :)
-
Ah ha - knew I could, found a roll of telfon sheeting in the back of the cupboard, so cut it to size and used that. 8)
Best thing is - it is washable and reusable :D :D
-
I was going to ask you if you had any 'go between' astarra but it looks as if you have found the perfect solution. Very handy stuff to have on hand.
-
Never made these, but just made up,the mixture for dinner tomight.
Has anyone AF these?
