Breakfast 'hash'

Name of Recipe: Breakfast Hash
Number of People: 2-4 on its own or as an accompaniment
Ingredients:
1 large onion, quartered
6 pieces bacon - the eye part only, cut into 3cm pieces
200-230g potatoes, peeled and cut into 2cm cubes
1 tblespn oil
400g very ripe tomatoes, chopped roughly plus 1 tbspn tomato paste  (OR 400g can of chopped tomatoes,1 tblspn tomato paste & 1/4 can of water OR 65g cashew, tomato and capsicum dip instead)

Preparation:

Chop onion for 2 seconds on speed 5. Scrape down sides, add oil, diced bacon and potatoes then saute for 5 minutes on 100oC/ speed 1/reverse.
Add the tomatoes & tomato paste OR the dip OR the can of tomatoes & water if using. Cook 5 mins/100oC/reverse/speed 1 then reset to 30 mins/90o/softspeed/reverse/MC lid off.
Add S & P to taste and change temperature to varoma/8.5 mins/reverse/speed 1/MC off to thicken the sauce. Place the steaming basket over the hole to prevent splattering. Check that the potatoes are cooked and either leave in the bowl or place in the thermosaver until cool as this will help the potatoes soften even more.

Serve with eggs for breakfast, alone on a slice of toast or with BBQ'd meats. It doesn't really look like hash but that is what we have called it for years and the name has stuck.

Tastes so much better the following day.

I have amended this recipe from when I first did it as I felt it could be done in a better way and it was one of my earliest postings.  This looks and tastes exactly as it used to be done when I did it on the stove top. I used the dip instead of tomato paste as I had a few tubs in the freezer and wanted to get rid of some.  It improved the taste IMO.

What does "reverse + soft speed mean?
A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.

Do you have a TM 21 or TM 31 - the TM 31 has a  :-: button and soft is the  ^^ button.

Mine's a 21. I bought it in 2004.

That's what has happened meganjane - there is a link for some information to convert speeds etc from the recipes here - which are mainly for the TM 31

Delighted to find this recipe.  Would never have spotted it if it hadn't been for the EXCELLENT index we have now (makes life so much easier - thanks Brazen)

Would it be possible to move / link to it in the Breakfasts section?
As my picture shows, I've suddenly become younger :-)  DD was of the opinion that her picture should be here, not mine!

I am just bumping this as I have revisited it and changed things a little.  I was a little ripe with some early postings so as I revisit them I will make more knowledgeable changes. This was just as I wanted it to be and I have added a photo - I can see you all rolling your eyes, she's at it again  :D :D

My SIL loves this stuff for his big weekend breakfasts so I will have to teach him to make it now in their TMX. The thing that takes the longest in this recipe is getting the potato to cook - I have noticed in other recipes that they seem to be the last thing to soften.

Thanks JD - I look at some of my old recipes and think I should rewrite them. but then, if anybody wants they can comment and criticize & tweak them. 

Do you have 2cm or 1cm cubes? I make them a bit smaller than you ?

Mine are 2cm TMXer, didn't want them to break up and turn to mash.

I had some sad looking tomatoes, only 3 potatoes left in the basket, no bacon but I decided to make this anyway.   It ended up as a vegetarian version but honestly, we could not taste any difference. This makes 2 serves.

1 onion, halved
240g 2cm diced potatoes
410g chopped fresh tomatoes
20g cube umami paste
1/2 teaspoon virtual bacon dust - optional

Chop onion 2 sec/speed 5.
Add potatoes, tomatoes and umami paste.
Cook 30 mins/100o/reverse/speed 1 adding the bacon dust during the last 5 minutes of cooking.
Check for seaoning & add S & P if necessary.
Place in the thermosaver or leave the hash to sit in the bowl for flavours to develop for 1/2 hour before serving.

I just love the umami paste. It gives flavour to so many things.
May all dairy items in your fridge be of questionable vintage.
