There is a recipe for the pomegranate molasses here. Looks really easy to make. Might even be easier than trying to find it in a shop. I know it will be here.

I made this tonight from Twitterpated's link and no problems girls - dead easy. $5.69 for just over 300 mls.

1 litre pomegranate juice
110g white sugar
100g lemon juice

60 minutes/varoma temperature/speed 2/MC off.

It is a thin syrup but very tasty and there was no sticking to the pan either. Put this in the fridge and once it cooled down it did thicken to a syrupy consistency.

That's a much attractive option than paying what I did!
Did you find the syrup thickened up on cooling?
The bought stuff is the consistency of golden syrup.

I found an interesting foodie place yesterday, and they were charging $18.95 for a bottle of the juice......so I left it there.

Yes Goldfish, I will be keeping it in the fridge but goodness knows how long it will keep. Might have to google some uses for it or even freeze it in ice-cube trays perhaps if someone tells me it won't last long in there.

Maddy, yes it thickened up more overnight but is not the consistency of golden syrup. I'm sure it will be fine for the beetroot salad recipe though. I ended up with just over 300 mls after an hour whereas the original recipe says you end up with 375 mls with the stove-top method. It was not a costly exercise so I had nothing to lose by giving it a go.  I trusted that the continual stirring would prevent sticking and then having the problem of cleaning it off ;)

Well I would imagine a less thicker consistency would be better actually....easier to drizzle and mix in.
Was your juice 100% pomegranate, and from supermarket?

Yes maddy, found it on the shelf (not fridge) and it is Bickfords 100% pomegranate juice made from concentrate, all natural, no preservatives, no added sugar. They have a recipe site www.bickfordsjuice.com.au with ideas for drinks and recipes using the juice so with this molasses you would use a lot less obviously.

Had a little search and it's suggested for glazes, vinegarettes etc.   I like the simple suggestion of drizzled over cream cheese for a dip.
Lots pf possibilities.

Well even though I bought a small bottle of Pom. Molasses, I did make some as Judy's conversion.
It really is lovely.....and tasting the both, this home made version trumps  the bought one for sure.
I found the bought one too acidic, and the citric acid came through strongly.

Judy, maybe you could post your conversion in the sauces/dressings thread.....it's a good one to share  ;)

I made a salad vinegarette using:
2 Tbspn home made Pom. Molasses
2 Tbspn. Mild olive oil
1 Tbspn. White wine vinegar
Salt and pepper

We had this last night and loved it. It stood (in the fridge) for several hours and I think this improved the flavours. I used the TMX pomegranate molasses.
May all dairy items in your fridge be of questionable vintage.

Hi,

I'm in Melbourne and got Pomegranate Molasses at Leo's Supermarket in Kew. I think I paid under $10 for a bottle of 300ml - just can't find the receipt.  Leo's also have shops in Heidelberg and Hartwell.  Got the rosewater there as well. Apparently lots of the Middle Eastern grocers in Brunswick Street/Sydney Road sell it as well.  When I mentioned it to my sister yesterday she thought that the greengrocer next to the supermarket at Doncaster Shoppingtown had it as well - at the back of the shop.

I bought the book last week and can't wait to try everything.  Looks amazing.

I made the salad tonight and it was a complete winner.  Loved it. It's on my list for high rotation salads now!!  I made the main part a few hours before serving and stored it in the fridge, adding the pistachios and the pomegranate seeds just before I served it.
