This recipe sounds interesting, I have made savory muffins before, but the look of your muffins BZB is tempting me to give this a go for dinner.. My DD has all of a sudden become fussy and not eating any vegetables, probably this will be a good way to sneak some into her meal..

Made this yesterday for dinner, forgot to put in salt but even then my fussy lo had 2 muffins..  :-))
Thats a huge hit, will be making more of these to freeze.. Its quick, healthy and tasty !!
Thanks Karen for the recipe...

Just one question, any ideas on a homemade sauce I can serve it with, she had it plain but would like to make it more appealing for her..

Thermilover, there are plenty of homemade sauce recipes on this forum that you could try.   My favourite tomato sauce comes from Quirky Jo's blog Quirky Cooking.  Sometimes I put a couple of tablespoons of the homemade sweet chilli sauce (from this forum) into the batter as well to add a wee bit of a kick.
