Bread / Simple scroll

For the last few weeks I've been trying many bread recipes for scrolls.
Today after a quick web search I found a recipe using self raising flour instead of bread flour yeast etc. 
I halved the recipe but the original recipe was

3 cup sr flour
50 g butter ( cold)
Milk
Vegemite
Cheese (200g)

I mixed flour and butter speed 4 till combined ( 5-8 sec)
You then add milk till a soft dough forms, it's a visual not a measurement I'll measure next time.
Mix  speed 4 5-10 seconds then knead interval 1-2 mins
Roll out to a rectangle,spread with Vegemite add 3/4 cheese, roll, cut into 4cm slices, arrange cut side down close together, add remaining cheese and bake  20-22 mins 180d.  (recipe calls for 220d oven but I felt that was too hot)

Result, soft, fluffy scrolls..

Definite fastest scroll I've made,no rise time required!

Cakes / Chocolate cupcakes

Converted from Cupcake book for girls (my first conversion)

Ingredients

Preheat oven to 170 fan forced or 190 conventional
Prepare cupcake tin with papers

1/2 cup ground  almond. (I milled these first with the crio)
20g crio groundS (original recipe asks for cocoa 1tbs)
1 tsp baking powder
110g sugar (I milled this to caster)
110g SF flour
2eggs
110g soft butter cubed
1tbs milk
2tbs warm water
1/2tsp vanilla extract


Mix all ingredients together ( I did 20sec speed 4, wiped down and repeat)

Place into cupcake papers (12)

Cook at 170oC for 15-20mins (mine cooked in 15)

These are soft and fluffy and have disappeared before I could even take a photo.

It made 12 overflowing round based cupcakes.
I didn't have cupcake papers..

12-16 cupcakes if you don't overfill them or 8? Normal sized muffins?

Mine weren't overly chocolately, going to try with cocoa tomorrow instead.

Hi everyone, I joined the forum yesterday after making a snap decision to purchase a TMX.  Sight unseen, no demo!  That's how good the reviews and discussions on the net are,  I'm impatient to get cooking as is my youngest daughter who wants to ae lemon tart ASAP.  I had ths brain wave that all my appliances that will now be unused and I plan on storing them for my kids when they move out..issue being, they will want TMX too!   I'm a bit apprehensive that I've just purchased a very expensive bread kneading machine ( my hubby loves making pasta, pizza and bread so he is set).  I've been searching the kids recipe thread and can see lots of school treats to be made too.   One recipe Im Searching for is coleslaw, without much luck!   Anyway...I'm sitting here in anticipation of delivery which will be post Easter, I have to gab to friends to be wowed by my purchase then I get the thermomix server too..
