Title: Fruit Nut Slice

 ;D Very Easy

Ingredients:
Base:
100g butter, softened
60g brown sugar
190g Plain flour
1 extra large egg yolk

Topping:
2 extra large eggs
160g brown sugar
1 teaspoon mixed spice
50g SR flour (or 50g Plain, 1/2 tsp baking powder, 1/4 tsp cream tartar, pinch salt)
35g cream
80g raisins
140g figs - 1 sec, Speed 5
85g pistachios - 3 sec, Speed 5
120g walnuts - 1 sec, Speed 5
icing sugar, sifted, to serve

Method:
1. Preheat oven to 180oC, and prepare slice pan 28 x 18cm.
2. Chop figs, pistachios, and walnuts either by hand or TM - set aside together.
3. Add butter and sugar to TM and melt together for 4 mins, 100o, Speed 1.
4. Add flour and egg yolk, and mix 20 secs, Speed 5.
5. Press into slice pan and bake for 10 mins.
6. For topping:  mix all the ingredients together (except icing sugar) for 1 min, Reverse, Speed 1.
7. Pour over base and bake for 20 mins, or until golden and firm. Remove and cool in pan. Dust with icing sugar and cut into squares to serve. Store in an air-tight container for 2-3 days.

Variation: Use any combination of nuts, or use sultanas and dates for the fruit.

cookie - CP63 these are really lovely. I made them yesterday and they are nearly all gone. They must be healthy as they have nuts and dried fruit in them.

they were dried. yes another packet recipe...and there wasn't even a recipe on the figs :'(

PS. Margaret Fulton has a new cookbook coming out on 1 Oct yay!

Oh dear, it looks like another cookbook coming to the 100's I alread have. I just love to sit and read them and all the cooking magazines I buy.

CP63, the slice looks lovely. My type of food.
