Recipe Requests / Re: Pancakes
« on: August 23, 2009, 02:03:57 pm »
Marmee, there's a Nigella recipe for pancake mix which you make up the dry ingredients in a container and keep in the pantry and when you want to make some, you take out 1 cup of the mix and add to it the wet ingredients and make the pancakes.  It's the same as having those containers of instant pancake mix that you can buy in the supermarkets that you add water to but of course these have no nasties added and it makes nice pancakes.  Let me know if you'd like the recipe and I will post for you.  :)

Jams and Chutneys / Re: Anyone successfully made a nice jam?

This summer I'm going to collect enough raspberries to make jam.  They grow wild on the edges of the forest here.

How wonderful.  :)

Non Food Recipes / Re: Washing Machine Goo (Detergent)
« on: August 23, 2009, 10:59:02 am »
I made the goo about 3 - 4 weeks ago in my processor before I got my TM.

Have been using it all this time and found it worked well, but have noticed just recently that some of our clothes are starting to look a little 'dull'. Probably because store bought detergent has optical whiteners and brighteners that this home made stuff hasn't.  I therefore have started to use it less, inbetween using store bought detergent.

Today I firstly made the beef stock concentrate, or in my case beef stock cubes  :D

My plans for tea were fillet steak with asparagus and hollandaise sauce (TM) and the Chinese stir fried veg (TM) and some baby potatoes.

How good is it to use the TM bowl for weighing, as in preparing the veg for the 'stir fry'.  I got all the veg out that I wanted to use,(cabbage, carrots, red capsicum, snow peas, few green beans and broccoli), cut into nice sized amounts, and just added to the bowl until the 500g was reached. Prepared everything else so when it was time to start cooking, it was easy.

Started cooking the veg first, then the steaks.  I used the suggested 1 tblsp soy sauce (salt reduced) and 1 tblsp honey as the flavourings for the veg.

When the veg was ready I put into a heated thermosaver container, covered and put aside,  while I cleaned out the TM bowl and made the hollandaise sauce (how easy is that in the TM).  Meanwhile the steaks were ready, so put to one side to rest and quickly cooked the asparagus.

Absolutely loved this meal and have enough veg left over as a side for another meal.  Also have lots of hollandaise left over.  Will make half quantity next time.

I should have waited a couple of minutes after the hollandaise was made before pouring over the steaks and taking the photo as it thickened up rather nicely, though it was still very nice.

ILB, thankyou for that link.  Have emailed them to get a price plus postage for the 700g tin.  I can't buy one locally either, but I can see one would be really handy.  Hopefully I'll hear back early next week.   :)

I too made the 5 seed bread today.  I didn't have any linseeds so used a mix I had called LSA which has ground linseeds, sunflower seeds and almonds in it.  I used 2 tsp yeast and put the dough into a 23cm square, deep tin to prove.

I was thrilled with how this turned out and tasted.  I am going to buy a proper loaf tin because this would be really lovely as a regular shaped loaf, beautiful for salad sandwiches.

How quick does the TM knead the dough.  Very impressed.  ;D

Decide it was easier to buy after that - should try to refine it.

LOL Thermomixer, you might be right.  :D

Questions? Technical Issues? The Survival Guide / Mascarpone Cheese
« on: August 21, 2009, 02:16:20 pm »
Has anyone made this from the EDC - page 19?

In the instructions it says to "pour into a large bowl lined with cheesecloth.  Leave the progressing mascarpone in the fridge on the bottom shelf for approx 12 hours before using."

Now do you leave it to drain over the bowl through the cheesecloth or do you just leave it sitting on the cheesecloth in the bowl and later drain, or don't you drain it at all, in which case why have the cheesecloth in the first place?  The instructions aren't really clear to me.

Hope someone knows what to do.

Julie.

Yes I should give another go, but I really don't mind doing it this way as I cook them really slowly while I'm getting everything else ready to add.  I use non-stick frypans so doesn't take long to clean.  I've cut down so much on washing since having the TM that I really don't mind this step, and the added flavour makes it worthwhile.  :)
