Name of Recipe: Cauli & Cannelloni bean soup
Number of People: Serves 6
Ingredients:
120g onion, cut in half
100g celery, roughly chopped
20g spring onion tops, roughly chopped
1 tbspn olive oil
500g cauliflower, roughly chopped
400g can cannelloni beans, drained and rinsed
2 - 3 tbspn vegetable stock concentrate
1 tsp garlic paste
900g water
S & white pepper to taste
1 tsp grated parmesan cheese for each serve
Chopped parsley.
Preparation:
Chop onion, celery and spring onion tops 2 sec/speed 5.
Add oil and sauté 6 mins/varoma temp/speed 1.
Add cauliflower, cannellini beans, vegie stock concentrate, garlic paste and water.
Cook 20 mins/100o/speed 1.
Blend 60 sec/speed 7.
Taste for seasonings, add salt if needed plus some white pepper to taste.
When plating up, mix 1 tsp grated parmesan into each serve and sprinkle with parsley.

JuliaC83 - Very quick, easy and delicious.
JulieO - The only change I made was to use home made chicken stock instead of the veg stock conc + water as I've run out of the concentrate. Was so nice and tasty, we both really enjoyed it.

Made this for dinner tonight as I had cauliflower I wanted to use up. Very quick, easy and delicious :)
Served with the one hour bread rolls ;D

It so wasn't soup weather yesterday, but I really felt like it, so made yours Judy.
The only change I made was to use home made chicken stock instead of the veg stock conc + water as I've run out of the concentrate.
Was so nice and tasty, we both really enjoyed it, even on a hot day! So quick and easy, have definitely kept the recipe to make again. :D
