Next time I make these I will leave the chocolate out and possibly chop the nuts a bit.
I made these and when they were cooked they were very 'spongy'. I turned one out and it flopped over. I hadn't covered these when I steamed them so I covered the next lot with baking paper, but they were the same. I left them to completely cool and they firmed up and were very easy to turn out. We had one each for dinner with custard and they have a lovely flavour. Not like the usual plum pudding, much lighter. The citrus taste in them is vedry nice. I plan to freeze the rest and have them for Christmas

Thanks Cookie. I was wondering how they'd go. Did you use bottled fruit mince or make the pear one?
I'm on plum pudding duty this Christmas and the pressure's on as Nan is usually the pudding maker so she's going to be one tough critic!!!

I used my own fruit mince, but bottled would be fine. They are nothing like a plum pudding. Very light in colour and tasty. Not a heavy pudding at all. I used figs, apricots and pineapple and also mango in mine. Very different. I thought they had gone soggy like yours did and was very disappointed, but they firmed up. I then reheated a couple in the microwave (while the custard cooked) and Mmmmmmmmmmm.
If people are expecting a traditional pudding this may disappoint. My guests are getting them and hopefully will enjoy them.

Thanks Cookie1 - these comments are so handy. I certainly didn't waste money buying a pad of post its - I am going through them at a steady rate with all the reviews lately.

Thanks cookie1 - they are best left to cool before unmoulding them and they do "collpase" a bit. Don't have the recipe at hand, but leaving out any raising agent makes them more solid if that is your desire.

Use plain flour or breadcrumbs instead of the SR flour.

Has anyone else tried these since Cookie's last post? I'm also on pudding duty this year and had planned to make them...until I read the review. If anyone else has had similar or different results, I'd love to know before i go out and buy all the ingredients!! I plan to make them using the Fruity Pear Mince instead of a jar.

was thinking of trying these out too...i love the fruity pear mince its quite yummy and made it last year to make mince pies for chrissy...the pear mince recipe makes alot though...filled up a 1L jar so next time will probably half htat recipe :)

I made these puddings a couple of days ago & mine were the same, they seemed a bit soggy, so the next day I put them in a hot oven for about 10 - 15 mins to try to firm them up a bit and now they are perfect. They deffinatly need to be cool before you take them out of the moulds, the flavour is really good :)

They freeze well too.

Are we all talking about the steamed puddings from Festive Flavour? In which case, I made them this week and definitely think the chocolate was too much.

Yes Cecilia it is them. As you can see from my comments on tweaking in the first post I would leave the chocolate out completely. I like them better without it.

The book says that this recipe makes "18 little puddings" - what size moulds would these be? I am thinking of using my silicone cupcake/muffin moulds but have no idea how much the recipe will produce.

They seem almost double the size of my silicone moulds so I guess I will end up with lots more.
