We were just given some fresh eggs from our neighbours chooks, straight from underneath the chickens - so we are having scrambled eggs with grilled ham and tomatoes and fresh basil.

Aren't they the best, Karen! When I've given our eggs away I've always been told how good they were. I didn't pay too much attention to the compliment as I used to think  an egg is an egg..... until a while back I had a half dozen eggs from the local shop. Oh my goodness!! What a difference!! I even had to toss one of them. I count mine getting old when they're over a week! ;D store bought eggs can be 6+ weeks old I'm told.

we are only getting 2 eggs a day at the  moment from the chickens, but I was given 1 doz from a neighbour yesterday.

they taste so good fresh. :D

Probably the heat, Robyn.... Several of mine are doing a mid summer moult and not laying ...but the best has been 7 from 6 when someone managed to lay twice in the one day.... Never thought that was possible!!

I wish we could have chooks. DH is still thinks our backyard is unsuitable. Our immediate back yard isn't suitable but right up the back would be OK although we do have a lot of foxes around.
One good thing is I've found a man close by with backyard chooks and he is willing to sell to me as long as I have my own egg carton - no problem.  ;D

Nothing like a yolk from a backyard chook!

I made a double batch of Pear and Oat Pancakes from In the Mix 2 :) Really yummy!

Until I was about 40+ I had never had bought eggs. Even after we married and were in the city my parents used to supply us with eggs from the farm, as someone was always coming down. I had to check with my neighbour that the bought eggs weren't off as they were so pale in comparison. She thought it was hilarious. When my brother first came down to uni he threw out 2 dozen bought eggs as he thought they were bad. ;D ;D ;D ;D ;D
I'd love some chooks but it wouldn't be fair to them in our yard as it is all paved out the back and side.
May all dairy items in your fridge be of questionable vintage.

I've always had to buy eggs except when friends with hens have given me eggs.They do taste and look better.

I had a smoothie for breakfast this morning using some of the plum puree I made with the un-needed plums from the cooking process for the liqueur recipe.

3 tbs plum puree (sweetened when made)
1/2 cup skim milk
1/2 cup Greek yoghurt
1 tbs sugar
1 tsp vanilla extract
1 tbs chia seeds
1/4 cup oats
8 cubes ice

Blitzed 1.5 mins/speed 8 and it made 2 medium glasses.

For the past 2 mornings I've had Banana Peanut Butter Oats in a jar from http://www.theyummylife.com/recipes/223, it's delicious and 1 serve quantity is enough for 2 serves for me.

1/4 cup rolled oats
1/4 cup low fat Greek yoghurt
1.5 tsp chia seeds
1 tbs peanut butter
1/4 cup ripe banana (mine was very ripe so I mashed it)

Place everything in a jar (I included the banana at this stage seeing as it was mashed), give it a good shake and refrigerate up to 2 days. 

There are lots of variations of this theme on their website.

I will give this a try JD.
I am loving the food in jars at the moment.
I have had my knee replaced a week ago so moving etc is difficult. I can make salads and breakfast in jars quickly and easily with thermomix and I have good food for several days in the fridge .
A bonus is the jars are easy to carry while walking with a walking stick or crutches.!
