Lazy Friday night here too so it's chicken and mushroom risotto

Oh dear Cookie that is very annoying when your roast doesn't defrost in time

Well it seems crazy to buy some beef when our freezer is full of it, but we just don't have any nice meaty ribs....but these ones certainly are.... and thought I'd give them a try.  You just pop them in the slow cooker for 6 hours on low.

smelling good so far.

You can't get it easier than that maddy.  Will be interested in how they turn out compared to something you would marinate yourself.

The marinade is in a separate pouch, so you don't have to use that one....but it tasted like the Aldi one I buy anyway....probably better really.

Roast pork, smashed potatoes and veggies.

I've also made a loaf of Chookie's no-fuss bread which I baked in my new convection microwave oven.  It looks lovely, so it will be interesting to see how it tastes.

Nothing for me tonight. DH and I had lunch at the pub over looking the water. They have a 10 for $10 menu. Very full.
DH has gone to work and I'm doing a bit of prep for tomorrow nights meal. I was to have 5 days off, although they have asked me to work tomorrow morning. I'll go in, love my job.

Was going to have pizza tonight but DH didn't feel like pizza so we had toasted sandwiches instead. I love lazy Fridays :D

Slow cooked smokey bbq beef ribs, home made wedges with salsa/sour cream dipping sauce & salad.

Suzanne, they are very meaty, flavour good.....but was a tad tough.  I think the 6 hours on low wasn't enough.  I would probably go 7-8 hours on low  ;)
