We had quiche last night. It was from a BBC magazine Vegetarian. It made a white sauce and then you added the eggs to that, after it had cooled a little. It had zucchini. leek and sp0ring onion in that you cooked before hand. It was very nice. https://www.bbcgoodfood.com/recipes/3046/garden-vegetable-and-goats-cheese-quiche

Lots of veggies, a little mince and some tomatoes, cooked in the oven with tomato paste and served with pasta.

RecipeTinEats has posted a recipe for a chicken pasta bake. I am going to fiddle with the recipe and try using my Cauliflower Chicken and Veggie soup recipe as a substitute for the liquid and flour. Will let you know how it goes.

Last night we had a casserole that seemed as though it may be a bit bland so I added a good slug of red wine and Umami. It had cheesy polenta on the top. It turned out lovely and we brought enough away with us for dinner tonight and DD has her dinner too. Not bad for a dish that was supposed to serve 4.
