Zucchini Pickle

I am very new to making pickles (I have never made one before today!), but I have to admit that I am very proud of my first attempt.  I am even sending one down to my Croation grandmother, who provided me with the fresh produce. 
This is what I did.

Roughly cut and add to TM bowl;
500g Zucchini
1 red onion
1 capsicum (I used yellow)

Add
1/4 cup salt

Cover with water and leave to soak for 2 hours. (don't know if this is entirely necessary, but all the traditional recipes told me to do it, so I did).

Drain.

Add
4 tomatoes

Pulse until desired consistency is reached.

Add
1 cup raw sugar
1 cup rice vinegar (I used sushi seasoning, as that is all I had)
2 Tbsp garam masala (care of Thermomix)
2 Tsp Turmeric

Cook on Varoma on 2 for 20 minutes.

And that's it.

The consistency of the pickle was a little runny (I think it was because I get a little over zealous with the pulse), but I added a couple tbsp of cornflour and cooked it again for 15 minutes until it thickened.

Very proud of myself!  It tasted delicious.  Hope you like it!  ;D

Well done sarsryan - guess you can't wait to see what Grandma thinks of it ;)  I'm sure she will be very proud of your efforts too.

It looks like we'll have a glut of zucchinis so will try this.

Well i did make the pickles but i did change the recipe to suit me
I used a cucumber instead of tomatoes and used about
600 gram of zucchini

My family all love this pickle! Have made it many times now. I have orders for xmas this year.
I'm not bossy, I just have better ideas!

 ;D First time pickle maker here...I don't make pickles because I don't like them; BUT...
my hubby LOVES them...so we had a go..
.Oh my - I am now also a pickle eater! Delicious!
We halved the recipe because we were not sure how much it would make...we ended up with 330 gm jar of pickles. Pulse was about 2 short bursts to keep it fairly chunky and used slightly under the amount of rice wine vinegar...also kept the MC off and put the basket on top to stop splashes and allow steam to escape.
This is a winner recipe - Thank you for sharing...now I will have confidence to have another go...at pickle making and eating  ;D

HESayer welcome to the forum. I'm pleased that the pickle worked for you and that you are now a convert. How are you other experiences with the thermomix?

Thanks cookie1...the TMX has changed our lives - we save time and money, eat healthier and I now LOVE to cook rather than do it out of necessity...in fact I would now say cooking is a hobby and a means of relaxation instead of stress and strain...my family and friends say it's a miracle!  :)

I have attached a PDF doc that I created because my son-in-law wanted to have a go :)

The second time I made it I over pulsed - so added the cornflour as suggested...be light fingered with this bit!

Judy I would cook it on reverse. The veggies will break down a lot even on reverse.

Checked out your PDF, thanks Helen and yes I would probably do it on reverse cookie. I'm not a great chutney eater, only use it if a recipe calls for it but I just wondered how this one looked. It's always nice to see pictures.
