Strawberry Mousse - serves 6 x 1/2 cup measures (.2g fat per serve, 365kj per serve) - from That's Life Magazine
9g packet sugar-free strawberry flavoured jelly
2 cups strawberries (I used some frozen ones I had), 310g
2/3 cup instant skim milk powder 100g
8 ice cubes 150g
Place the jelly crystals in a bowl and add 1/2 cup boiling water. Stir until crystals are dissolved and allow the mixture to cool slightly. Place the jelly in the TM bowl, add the strawberries and skim milk powder. Process 20 seconds on speed 8. Add the ice cubes and blend a further 40 seconds on speed 8 or until the ice cubes have disappeared.
Spoon into ramekins or small glasses and chill until set. Only took about 2 hours using frozen strawberries.
As long as you can match up the fruit with the jelly, there are endless possibilities with this recipe. I have also done it with mango I had in the freezer and used orange mango flavoured light jelly crystals.

Wow, I love mousse. This looks great Judy. Does it taste sweet and creamy like mousse?? Will get some milk powder tomorrow and will try it.

It is very strawberry tasting Lisa and very light and airy. I like it and will be interested to hear if others do as well. I have a friend coming to stay who does Weight Watchers from time to time so I thought I had better have something to offer other than normal desserts which may be knocked back.

Oh Judy!!! It's sensational. Have just made the dessert and it is in the fridge setting although I don't know how long it will stay there! As we tend to over indulge in desserts and mousse is one of my favorites I made it into 4 slightly bigger serves instead of 6 little serves. I cant believe how sweet it is considering it has no sugar in it. I'm sure your friend will LOVE it! Thanks for sharing.
I have never used instant skim milk powder for anything before. I could only get a woolies home brand one and I was concerned about additives and anti caking agents in it but it says the only ingredient is skim milk which I find hard to believe. Does anyone know if this is something that can be used on a regular basis?

I don't have any ice cubes at the moment, do you think it would be possible to make this without them? And just add some cold water instead?

I haven't made this since the initial posting AliRo but if you have very cold water and are using frozen strawberries, I would give it a go.

I had all these ingredients so I’ve just whipped this recipe up for the first time in many years. I had forgotten how nice it was.

I love this recipe cookie, it’s tastes like a real treat but it’s perfectly OK for diabetics or anyone really.
