Hello :)
For anyone who don´t like to make or eat caloric recipes this is one should not be done!!!
Okay…. Make it just once to try :D :D :D
Here goes:
ISI´S CROISSANTES

150 grams of cold butter into the Thermomix Speed 5 until it has formed a Creamy mixture
Put aside
WITHOUT WASHING THE Thermomix
put:
200 grams of milk
3 tablespoons Sugar
1 Pinch of Salt (I work with unsalted butter!)
20 g Fresh Baker Yeast............ 3 Minutes - 37º - level 3
put:
350 grams flour 55 ........... 3 Minutes - level ::
Remove the dough from the Thermomix and divide in 7 Equal parts
Form balls and now strech the dough as thin as you can, dusting with flour forming a circle
When the seven circles have been formed (should have more or less all the same diameter) start by greasing the first with a spatula with the reserved butter - overlap the next circle - greasing with butter and so forth until the last round!
(The dough is at the end a little wavy because of the butter - thats normal)
Now just divide the circle into eight (or more) equal parts and roll each triangle from wide to the spout!
Brush the croissant with milk and let them rest for 20 minuts.
Bake in preheated oven at 180 º for about 20 minutes (note that all ovens are different!)
When finished cooking brush them again with milk!
They are very quick to make and I guarantee that they are delicious!

Hi, I don't have fresh yeast yet, could I use a sachet if dry yeast instead?

you can substitute fresh yeast with half the amount of dried yeast bigTcup which is just a little more than a sachet for this recipe (they are 7-8g each generally) - hope that helps

Well Isi, you have done it again ;D ;D ;D. Made these today, and have come to the conclusion that I am not the artist that you are. They taste terrific, very buttery. I had to spread the butter with my fingers as it is very cold here and the spatula kept dragging the pastry. They are certainly very easy to make , with the dough warm, it rolls out easily. I used dried yeast, 2 teaspoon fulls. Next time I will use 3. I will certainly make them again. Thank you Isi.

Mmmm these look great. I made Spanner crumpets for fathers day this morning but these would have gone down a treat. I guess there is always afternoon tea! or maybe not since I seem to be in a forum frenzy after a few weeks of not having a computer :)

To quote Nigella quoting someone 'the triumph of hope over experience'. I am not the pastry roller of the family. Spanner came home as I was rolling these to laugh (generally he rocks in the foetal position if he watches me with pastry). Mine are rising as we speak looking a little rustic. My 'circles' were according to Spanner 'unrecognisable as circles' and I may have been two layers short....but we are all looking forward to them.

Tell spanner he doesn't get any for laughing at them.
DH often takes biscuits up to some of his mates where he does some relief work. The last couple of times one has made some not nice remarks, so yesterday he was forbidden from having any by everyone else. Poetic justice.

That's terrible Cookie. I make some rather odd biscuits at times, but DH's mates never complain (or perhaps they have been warned not too ;)). They are just amazed that I bake all our biscuits and cakes and love anything that is homemade. It's sad really.

It is. This person isn't really a very nice person to start with. My DH has asked me to make him some chocolate biscuits and pipe them so they look like dog poo!

Pleased to report they tasted good. 6yr old review 'these aren't croissantes'. By lunch time she had polished off the left overs and decided they were tops.
I should know better than than to label an experiment lest the family expect it to taste and look precisely like the bought item.
I am a fan of poetic justice.
Spanner did used to take my experiments to work and they were always polished off and adored....now he works by himself. I am considering swinging by his old workplace with my experiments - it is nice to be appreciated. ;)

Oh No!!! Just what I dont need to see when i log on... A new Recipe from Isi!!!! I haven't been around long but to do an Isi recipe is to love Isi 8) Your Portuguese Rolls (i make it as a loaf) are my most cooked thing. It probably doesnt help that my husband is Portuguese ;) Even his picky parents love it. I have a feeling i will be trying these soon as i am a sucker for ham and cheese croissants :-))

Couldn't agree more Sarah. I make the portugese rolls recipe as my 'standard' bread loaf at least once a week, more commonly twice a week. And ham & cheese croissants are a weakness for me too. Looks like this recipe is on the cards this weekend I think...

Lovely to see you back posting isi. Don't fret about your English, I remember when you first joined and your English writing skills started to go ahead in leaps and bounds in no time. isi dont be silly..your english is fantastic especially for europe..ive been in france for over 10 years now and only know a handful of people who speak a decent level of english which is always a plus to speak any additional language..you should be proud of the fact that you can even communicate on an foreign forum!! I have quite a few friends who Id love to introduce the forum to but there is no point as they dont read or speak english !
everyone could also be better in any language..i know i could be better in french too..have to look at the positives!
by the way love your portuguese bread that i make into a loaf..we all enjoy it here and thats saying something coming from the land of bread, cheese and wine!

Is the flour plain or self-raising?

self raising doesnt exist in europe so plain :)
just checked the ingredients again and yes plain as she puts fresh yeast in...most people in europe add yeast or a raising agent to plain flour when cooking whether it be a cake, pastry or other.

I made these this morning for breakfast whilst the kids are still on holidays. They went down a treat. Even some left over for DH for smoko tomorrow. We had them with some blueberries that had been cooked with honey (similar to Nigella's blueberry pancake syrup). Thanks Isi. Love your recipes. They'll be on our menu next time we have friends over for breakfast.

Made these today and they are great.
Croissants are one thing DGS is willing to eat, and he gobbled one down and gave it thumbs up.
So I can send him off to school with them and be pretty sure he will eat his lunch.
DH went back for a second one.

isi, your explanation and photo was excellent! Wish I'd made these ones instead of the ones I just battled with! Much quicker and easier.

They're proving right now. I may change my mind about them when I eat them!

I made these this morning. I don't know what I did wrong but my dough was not sticky at all!
And then as I started rolling out circles, I couldn't figure out why my circles were so small until I realised... I made 8 balls instead of 7!!
So I ended up with realllly small croissants. I think they tasted wonderful though! DH said they didn't look like croissants >:( but tasted like them :P

So this is my entry in the forum challenge. I weighed out the dough and divided it into 7 to try and make sure each of my balls was as close as possible. For me, that meant each ball was 90-95grams.
I found the butter was hard to spread with a spatula (it is winter here!) so next time I will probably use the butterfly when whipping up the butter to try and get a better result.
Rolling out each individual circle was probably the most time consuming part. It took me just under an hour from start to proving. Then another 40 minute to prove and cook so they are not the quickest and easiest of recipes.
I have only baked four and frozen the other 4 (after the proving) and will bake them up on the weekend from frozen. If they work well, this would be a great recipe to make when you have time, freeze and then bake when you want them.
I'm not going to be opening my own bakery soon but they do resemble a croissant

Thanks everyone. Unfortunately they didn't taste as light and delicious as shop bought croissants but maybe I didn't roll my dough thin enough?? I will give this another try though, I'm sure I just need a couple of goes to perfect it!

There's another croissant recipe in the forum I have tried Snappy and the way the layering is achieved is a little different (still time consuming, just in a different way). I think I might combine the two recipes. .. The ingredients from Isi and the rolling/layering method from the other one. .. Thanks for the inspiration, they look fantastic :)
