Caramel and Walnut Slice :)

Caramel and Walnut Slice
Converted from the Women's Weekly Baking Day cookbook :D

Base Ingredients
125g butter
150g SR flour
80g desiccated coconut
110g caster sugar

Topping Ingredients
2 eggs
1 tsp vanilla
80g desiccated coconut
150g brown sugar
60g chopped walnuts (chop first in TM if not already chopped)

Method
1. Preheat oven to 180 degrees. Grease and line a slice pan.
2. Melt butter for 4 minutes/60 degrees/speed 1.
3. Add remaining slice ingredients and mix for 20 seconds/speed 4. Scrape down bowl and mix again.
4. Press base mixture into prepared slice pan and bake for 15 minutes.
5. Beat eggs and vanilla for 10 seconds/speed 4.
6. Add remaining topping ingredients and mix for 10 seconds/reverse + speed 4. Scrape down bowl and mix again.
7. Pour topping over hot base and spread evenly. Bake for 20 minutes. Cool completely in pan.

Note
When I poured the topping onto the hot base, I poured it straight into the middle and as you can see in the photo the base dipped quite significantly. Now I think that spooning a little of the mixture at a time and starting around the outiside might prevent such a dip ;)

This looks yummy Amy. Maybe you could pour topping over the back of a spoon to prevent the dipping.
