Title: Dried Apricot Preserves, tenina's recipe

This is Tenina's recipe with some minor changes. I used 1/2 Australian and 1/2 Turkish Apricots as the Australian ones were very dark. It is delicious and easy.

400g. dried Apricots.
350g water
250g sugar
60g of fresh lemon juice.

Place Apricots into TMX bowl and cook for 10 min.,/ 100o/reverse speed 1.

Add remaining ingredients and cook for a further 20mins./90o/reverse speed 1.

If too thick add a little more lemon juice and cook a further 5 mins.

making this now, i did chop my apricot 1 st the TM was struggling, should MC be on or off

I left the MC on as there didn't seem to be enough liquid.  I felt like chopping the Apricots first but didn't and the jam turned out OK. It is a preserve rather than a jam. Hope this helps fundj.

All done ,smells nice and looks good, i did leave the MC off it was fine nice and thick.
Next time i will add same cinnamon

Great,  thought i might add some sliced almonds next time.  Good to have a basic recipe to build on.  Thanks Tenina. ;D

Thanks Chookie a good recipe to make for gifts at Christmas.I bet it tastes great in yoghurt ;) I found loads of jam jars on top of kitchen cupboard the other day.....must clean more often :-))

I have made the jam, and I don't really like the "whole apricot" look, so I may just chop up a bit once I see what it looks like when its cooled down. This was used in last nights cooking class for the Christmas Ham and it was sensational.

CP,  I have made it twice and the second time I chopped it before cooking.  Think I like it a bit lumpy but not big lumps.

I seethat Tenina's original taste of this used ½ fresh apricots and ½ dried. Seeing apricot season is here I might try it that way first. I love all the ways you can use it and it was delicious in the ham glaze at last nights class.

thanks chookie and cookie. gave it 2 x 2 secs on Speed 4 and it turned out just how I wanted it. made up 2 jars so am going to give one to our nice neighbour along with a bottle of faffa's bbq sauce cos they have given us some beautiful home smoked ham.

I have made this a few times now, i did experiment with it a little i stuffed  some dates and severed  it with gorgonzola cheese

a bit sweet for me with the date ,nice with gorgonzola alone

Just making this for a trading table, how long does it last if sealed properly please. In the pantry OK?

I'm not sure Judy. I've just checked FFS where the recipe is from and it doesn't say. I tend to keep my jams in the fridge. It doesn't say anything on her blog either. It does taste lovely though.

Judy, Treat it just like jam. Sterile bottles and lid on while hot. In fridge when open.
