Chit Chat / Good guys thermomix copy

Here we go again!

Our home Internet is down so all I have for the next few days is my iPhone!

Spotted in the good guys catalogue on page  8 - thermofoodpro superchef for $499. Looks like the Bellini. Will try to post a link but it is't so easy to type an iPhone when your baby is trying to grab it!

Spice Mixes / Whole and ground spices

I have a stupid question.....

I have some whole cumin and coriander.  I know when you use them for say, Indian dishes that you dry roast them prior to grinding.
But I have ground spice jars as well for other dishes. 

If I wish to grind my whole spices to replenish my ground spice jars, do I just grind them, or should I roast them as well?

I am thinking that the ground spices are just that......ground only.

Special Diets / Orgran No-Egg

Before I waste my strawberries, I thought I would ask....

Has anyone used the Orgran No-Egg egg replacement for fruity dream, strawberry foam, or sorbet?  Does it give that lift?

One son is allergic to egg, and I am pregnant so sticky clear of raw egg.  I have never actually used egg white in the sorbets I have made anyway!

Bread / Bread-how big?

I have a large bread tin (900g?), and I have made a few loafs to fit the tin, however, it got me wondering what the max capacity would be for the TMX to handle.  Though I guess it might depend a bit on the type of dough you are working with (I recently did a rye loaf which the machine struggled with a little).

I have done spelt loaf were I am using 700g of flour in total, and that seemed to go OK.

Chit Chat / Milk recipes

I seem to end up with a decent quantity of milk closing into the use by date.   We aren't huge milk users in this house.  I have been making custard to use it up, chocolate mostly, but the choco-orange one I made last time (and will be making again shortly) was lovely. 

I'd thought I'd ask if anyone else has something a little different in their stash of recipes for using up 500mL-1L milk.


After watching the Gruen Transfer (Australian TV show about TV advertising) the other night I realise I have conformed to the pressures of advertising and marketing.....and should buy 1L at a time instead!

Made this last night.  Very nice and tasty!

Unfortunately, my husband is traveling for work, so it was just me and the two kids.  I could of fed the whole street with this dish!!!!
With the vegies are recommended in the recipe, the tray of the varoma was jam packed, so I did cook for an extra 5 minutes.  Sauce was really nice, and thickened up to a good consistency after standing. Next time I might put some of the vegies and pineapple on top of the meatballs in the dish, so things have a bit more room.

Questions? Technical Issues? The Survival Guide / Heating question

This came to me this afternoon while I was making a double batch of chocolate custard to use up 1L of milk while it was still good!  Therefore I had to cook for longer, and I think the temperature took longer to get to 90C due to the increased volume.  I also know that in a lot of the recipes I cook, it takes a long time to reach the set temperature (the first heat up anyway).

Is there a standardised method to test the heating function of the thermomix?
I am a scientist and so many things have to be calibrated, that I thought that there should be a standardised test that you could run every 6 months or so to check that the heating is working ok.  Like heating 1L of water on Varoma and recording the temp light readings every minute, or something along those lines. 

I don't think I have any heating issues...just curious.

Tweaking details:  used soy sauce instead of tamari the first time - both good
Review:  might not look the best, but smells and tastes really good
Score: (out of 5*)  4.5/5

Really easy recipe, nice and healthy too.  The first time I did this recipe, the chicken breasts I used were massive, so I filletted them, and we only ate half.  The leftover chicken was really yummy cold the next day on a wrap with left over beetroot salad.   (Coleslaw or moroccan carrot salad would be good too).  I will be cooking extra next time just for the leftovers!

Questions? Technical Issues? The Survival Guide / Greasing the Varoma?

Just took the delivery of my TM last night!   ;D

Read the manual, and it talks about greasing the varoma but it doesn't suggest what with. 

Do you grease your varoma?  Butter or canola spray?
Do you do it every use?  Does it really need it for say steaming vegies?

Hi I just joined the forum!

I would LOVE to get a thermomix soon!  I have been reading a lot of the posts here and on taste, and took myself off to a basic's class the other week.  I am in negotiations with the husband, and am hoping to win him over with some of the great recipes you guys have come up with.
