Today's tipp from Germany :

Bright apple sauce

Apple sauce will not brown if,  before cooking the apples in the Thermomix, they are washed in salt water or lemon juice. 
 

Similar tip for greens like broccoli or parsley - blanch briefly in boiling water then refresh in iced water before mixing with other bits to help retian their green colour.
