Diet / Anti Cancer Diet/Foods/Recipes
« on: February 03, 2014, 12:26:25 am »
Following a recent discussion with some friends I am interested in starting a thread relating to Cancer fighting foods, recipes etc, I know there are a few of us here who have had our own battle with Cancer and there must be  wealth of knowledge from so many members.

There have been many books written on the subject with some being practical and helpful while others being of the planet loony tune.  I always think  local knowledge is best. There may be some ideas regarding eating while undergoing radiation or chemo therapy as well as just plain everyday health eating after a diagnosis.

Any ideas?

I may say that while I was undergoing Radiation therapy I had a strong aversion to coffee. The  smell of it made me nauseous and it took me several years to get back to drinking the odd cup after being a coffee lover. I have often wondered if it was a natural crazy preventative!!

In any case I do drink coffee sometimes just to justify the cost of the damn expensive  coffee machine but my new found love of tea (thank you Hally) makes me feel better.

Main Dishes / Haggis Aussie Style
« on: December 31, 2013, 12:24:35 am »
Name of Recipe:

Haggis with tatties and neeps.

Could serve 4 and more depending on size of haggis.

Buy an authentic Haggis at www.pacdon.com.au or make your own from the following ingredients

Lambs pluck
Onion
Suet
Rolled oats
Sheep bung
Salt
Pepper
Cayenne pepper

What I did.

Because I wanted this for New Years Eve and unsure of my condition at dinner time I started in the morning by making mashed tatties in the Thermomix using recipe from EDC. ( actually I already had some cooked potatoes so I chucked them in the Thermomix with Teninia's confit garlic from KIS, lots of butter and cream leaving the skins on.)

As I was unable to find any neeps in Far North Queensland at the is time of year which is  really not such a bad thing but wanting a similiar colour for authenticity I cooked some carrots and baby parsnips in the basket of the Thermomix. When cooked I dumped them back in the bowl with more butter than you need to know and a bit of salt and pepper. Mash as for mash.

Now they are both in separate dishes to heat in Microwave.

Now for the Haggis. As it comes in a suitable sous vide bag that is the go and the Thermomix is the way to do it.

Put two litres of water in the bowl. Heat to 60 degrees ...10 minutes on speed 2. This is a wee bit too hot for a normal sous vide but when you place the haggis in the basket it will lower the temperature somewhat. Now reset the temperature to 50 degrees/speed 2 and cook for 70 minutes for. 350 gm Haggis . It is already cooked so you just have to reheat it without bursting the sheeps bung.

If you buy a frozen Haggis make sure it is thoroughly defrosted  before cooking.

Normally this a a meal for Rabbie  Burns night but certainly can be enjoyed at Hogmanay as well. Reciting the Ode to the Haggis with a wee dram is a must.  http://www.robertburns.org.uk/Assets/Poems_Songs/toahaggis.htm

Here's to ye!

Another absolute winner

Mustard Lamb page 112

The lamb fillit was $55 a kilo so I had had the gal butcher cut the top side from leg and used it. About $11.

Cooked the leeks and mash in the Thermomix. I never peel my potatoes that I why they look a bit dark.

No celery hearts  so used witloff

The sauce is so simple and delicious.

Will make this again.

Put the leeks in the thermoserver while cooking mash then put the lamb in the thermoserver while making the sauce.

Thinking some arrive Thursday. An adventure on Friday. Saturday all day roaming Hobart and the Salamanca markets. MONA . Dinner. Sunday maybe brunch.

Staying at the above hotel.

Any and all suggestions very welcome and anyone in Tassie who can help with ideas would be lovely. If not anyone with any experience in Hobart please raise your hand.  I am going down next month and will be pretty busy but I will at least be able to tell you about  the weather. I will be staying at the Sullivan Cove apts .

There are many wonderful restaurants in Hobart but it is a busy time so booking will certainly be necessary for hotel and eating.  Saturday evening meal booked at the above hotel.

Tasmania is a small place so we would all be delighted to meet as many locals as possible.

Chit Chat / MF'S Travels
« on: September 06, 2013, 07:07:38 am »
MF  has sent me some photos of her wonderful trip. These photos are taken in Italy and she has given me permission to post them so will go over to Tapatalk and put them on.  I hope I get the places correct and if not MF may be able to correct them.

Included are some absolutely delicious photos taken in the brothels of Pompeii but they are really not suitable for this forum. MF it seems spent a bit of time there.  Maybe she will explain herself later. ROFLMAO!

Photos to follow.

I know I could have put this  elsewhere but then maybe no one would see the delicious MF and her equally delicious DH in Cairns with Gert.

Here we are at the scenic railway station.

And a wholly unexpected and richly undeserved prezzie for moi. And a collectors edition as that. A quick look tells me it is more useful to me than the Sally Wise book. I just happen to have some Osso Bucco in the freezer. Dinner any one?

When visiting Helene's blog yesterday [ superkitchenmachine.com] I was inspired to make her one minute bread.  You should also read her latest post  about her trip to Toronto and the Canadian Food Bloggers Conference where she met with Valerie and Tabisile .

It does not rise so much as spread after the first rise.

In the pot.

Lid on.

After 30 minutes.

OMG!

Perfectly perfect . Thank you Helene.

Chit Chat / Gert's snake in a drainpipe
« on: April 24, 2013, 08:03:57 am »
I heard crying in my bar sink. I saw what I thought was a frog down the drain. I removed the drain pipe and out popped the snake which probably was eating the frog which was the crying I heard. The snake retreated back into the drain and is still there.
