Name of Recipe:  SOFT TORRONE from CREMONA

Ingredients:

250 gr. shelled hazelnuts,
120 gr. dark chocolate,  in chunks
100 gr. honey,
130 gr. sugar
1 tablespoon water.

Preparation:

Place the  chocolate pieces into the TM bowl and then set to closed lid position.  Chop for 10 seconds on speed 9.

Add honey, sugar and water and cook for 7 minutes at 90 ° C on speed 4.

Put the mixture into a bowl, add the hazelnuts and mix well.

Pour all into a tray (25x6) lined with baking paper.

Let it cool in refrigerator, cut into slices, arrange on a platter and serve.

Tips/Hints:

To make white torrone replace the dark chocolate with white chocolate.

Tempo di preparazione: 8 min.

 
Ingredienti:(per 6 persone)
250 gr.di nocciole sgusciate,
120 gr.di cioccolato fondente,
100 gr.di miele,
130 gr.di zucchero,
1 cucchiaio di acqua.

Preparazione:
Inserire nel boccale il cioccolato a pezzi: 10 sec.vel.Turbo. Aggiungere miele, zucchero e acqua: 7 min.90°C vel.4. Mettere il composto in una ciotola, aggiungere le nocciole e amalgamare bene. Versare il tutto in uno stampo da plum-cake (25x6), rivestito di carta forno. Lasciarlo ben raffreddare in frigorifero, tagliarlo a fette, disporle su un vassoio e servire.

NOTE: per ottenere il torrone bianco sostituire cioccolato fondente con cioccolato bianco.

riv mum - This was a big hit with the kids. Just a few things I would change next time - It wasn't as smooth as I expected so would cook it a bit longer to give the sugar more time to dissolve. I reduced the sugar to 60g but could be reduced even further as it is still very sweet with the honey. It set beautifully. I used macadamias instead of hazelnuts and it tasted great. The quantity was small and barely covered the slice tray. All in all a great recipe, very easy and only a few basic ingredients needed. It would be great as a gift or part of a Christmas hamper.

Uni -  I didn't use a slice tray just a cutting board then the baking paper. Very easy too, just wet hands with veg oil and shaped.
First chopped the chocolate up then blitzed the sugar with the chocolate about 4 times. I did taste a tiny bit, it's very sweet. I couldn't taste the dark chocolate at all (I'm not a fan of dark chocolate). The sugar needs to be cut back by 1/2 IMO but not sure if it would then work. It doesn't set hard, I can eat it straight from the fridge.

Made this one today and it was a big hit with the kids.

Thanks for trying it - I found another recipe that cooks it for a couple of hours - may be best to do a lot more than the Italians say?

A double recipe would fit a slice tray nicely. I had a few gaps in the corners with a single recipe.

I thought you would be first to make this one, Uni!  I feel almost obliged to make it as Cremona is the only place I have been to in Italy (apart from transitting through Milano).  I guess I will now have to have a go at this this weekend.

It can be great fun checking to see what our users / guests are checking out, they seem to find loads of interesting recipes that we have all forgotten about (or never knew were on here).

i just checked if i have any hazelnuts  :-)) i do, but only for 1/2 a batch. i think i will give it a go today

Let me know how it goes, Uni.  The thought of using macadamias appeals to me but perhaps the taste of hazlenuts would be more distinctive.

I think I would like to try this recipe but I would probably use a different type of nut because no-one here likes hazelnuts :-)) When SD gets a bag of mixed nuts he feeds the hazelnuts to the dogs!

Thanks for bumping this one CC - didn't even know it was on here but another great recipe for our hampers.  I would probably use macadamia nuts too, only because I hate peeling hazelnuts.  I wonder how it would be with milk chocolate, I really don't like dark chocolate.

Its very sweet JD, i couldnt taste the dark chocolate at all. i am not a fan of dark chocolate
