coconut cake - gluten free cookbook

Hi,

I made the coconut cake from the gluten free cookbook yesterday and after reading the bit about it being good enough to catch a husband (not that I need another), I was excited it would be delicious.  I thought it was strange that it only had 25g of sugar, but went with it.

It tastes  very odd, not completely gross (although the kids say it is), but very strange - almost salty.

Anyone else tried it?

I wonder if it is meant to have more sugar  ??? ??? I put more sugar than that in my large loaf of bread (only another 10g - but that is bread not a cake!!)

Thanks Judydawn, I made nico's coconut cake last night after reading your post, and it is really lovely.  I used raspberries for the syrup and just drizzled a bit over the top - I didn't do the cream.

Yes, faffa_70 it must be a mistake. it's hardly enough sugar to even be worth putting it in at all.  Maybe it was supposed to have a 1 put in front of it. 

I won't be trying it again as it had 6 eggs, which is a lot to waste if it is yuck.  I will just stick with Nico's.

I was going to suggest trying it with 125g of sugar until I saw it has 6 eggs lol  :o :o
