Amanda's White Bean Salad
« on: March 19, 2009, 04:10:23 am »
This recipe was in the What are you cooking thread: http://www.forumthermomix.com/index.php?topic=320.msg2000#msg2000 - it was the 2000th post !!!

Name of Recipe: Warm White Bean Salad

Ingredients:

1/2 tsp coarse salt
5 cloves garlic
1/4 cup extra virgin olive oil
1 tbsp chopped fresh rosemary
2 tins white beans, drained

3 tbsp toasted bread crumbs
3 tbsp grated parmesan

Preparation:

Roughly crush garlic then chop with the salt.
Put oil in cold pan, add garlic, place over heat and slowly braise over a very low heat until translucent - do not brown.
Add rosemary and continue to cook over low heat for another minute or 2.
Add beans and heat through, turning very gently so as not to break beans up, for about 3 minutes.
Place in bowl and top with crumbs and parmesan.
Serve warm or room temperature.

Tips/Hints:

I have modified this from a recipe in "The Splendid Table's How to Eat Supper" and made it for the first time yesterday (I got the book yesterday).  It is a seriously divine way to eat beans and the kids loved it, too.  The original recipe added greens at the end, which would make it a meal in itself.
