Amazing crumpets Chookie, funny that I don’t miss bread as much as I miss crumpets with my new way of eating.  I recently discovered Atkins crisp bread (like Ryvita but not as hard) and I’m in 7th heaven now.  I recently bought 4 packets when they were on special.  I also picked up a packet of Atkins low carb bread mix at the same time but haven’t got around to trying that yet.

Judy, it is amazing what is available when you look.  The English Muffins that I made yesterday were very easy. Can you eat any bread on your diet? Why I’m asking is that you could probably use this recipe and make small ones in the mini pie maker. They are very crunchy when toasted and therefore very satisfying. I will see if I can work out the carb count from the original recipe.

No normal bread Chookie, anything made with almond flour is OK though.  I tried 1 recipe and didn’t like it so I haven’t bothered but when I get time I’ll try the Keto packet mix to see how that turns out.  No hurry, I’m doing great without bread - I’ve lost 9 kg now and I only wanted to lose 10 kg so I’m almost there.  Maintenance will be easy as I don’t crave a lot of the food I used to eat.

This is not on the subject, but I had to congratulate Judy on her weight loss, well done, Judy.  I've lost 9.5 kg ... going for 10 by next weekend when we have a big family gathering in NZ (then some of it will undoubtedly go on again) - then I will only have another 10 - 15 kgs to lose!  Very happy with the way it is all disappearing - slow and steady.

Cuilidh, that's the best way.  Over that time you get used to eating less and that becomes your norm. 

Congrats to both you and Judy.  That is a great accomplishment, one that will hopefully keep you motivated to keep going until your desired goal weight, though Judy is almost there now.  :)

Judy and Marina, you are both amazing. You have kept at it and both are near your goal.  Excellent.  I think I have a personality disorder as I lose a bit, then hang on to it for a week or so and then lose a bit more. Will keep doing it but it is very slow.  I look to Cookie and Gert who have  also both done amazing things.
No real cooking today.

Thanks ladies, I appreciate receiving lovely comments like this.  I intend staying on this way of eating once I reach my goal weight as I am really enjoying choosing which recipes to try and still having some of my favourite foods.  I guess I will just eat more of everything but I’ll do some research on how to maintain a weight loss in preparation for that day.

Marina you’re going great, enjoy your family weekend in NZ and get back on track when you return home.

I have a rye SD rising, a Classic loaf rising. I made some of my invented Passata/tomato paste and some butter.

Recently I have been a bit slack in using veggies from the garden so last night I made some Tabouli.  Parsley, mint, onion tops, cherry tomatoes, fine cracked wheat, lemon juice and olive oil. It was fresh and delicious.

Thanks, everyone, for your encouragement.  I'm happy with the way my weight loss is going.  I don't stick religiously to the diet, but I am much more aware of what I am eating and it seems to be working.

I lost almost 22kg Judy.. I have sat at this weight for over 12 months now. I find that exercise is important to keep my blood sugar down, and I HATE exercise but I do it daily as I don't want to have to use medication for my diabetes until I really have to. Fortunately it's being well controlled by diet at the moment.
