Title: Links and references to cheeses made in the Thermomix
Post by: cecilia on April 28, 2012, 10:42:20 am
Let's put our heads together about how the Thermomix is used to make various cheeses.

I will add links as I find them.  Will you please add others if you find some too?  I am looking for anything on the www, not only recipes on forumthermomix.com as well as recipes in the various Thermomix recipebooks.

Hope this thread helps other consultants and is of interest to all forum readers.  :)

Thank you, Fundj.  Excellent!  They are out there.  I just need to get myself organised with a list before I get back to the person who asked me about this.  There is always so much to learn as a consultant because the Thermomix is capable of so much.  I appreciate your advice.  :)

Not really a cheese as such but there is almond cheese (http://www.superkitchenmachine.com/2010/6606/thermomix-raw-almond-cheese-recipe.html) and then there is paneer (http://www.superkitchenmachine.com/2011/11946/paneer-cheese-recipe-thermomix.html) both from Helene's Super Kitchen Machine blog  :)

I am sure there is more out there too so will link up when I find them  :)

just found Primosale Cheese (http://www.thermomix-recipes.com/2011/08/primosale-cheese-how-to-make-cheese.html)

There is also the mascarpone recipe in the EDC

Halloumi (http://www.recipecommunity.com.au/recipes/halloumi/33784) is on the Recipe Community

Yes Jo does have macadamia cheese I remember now that you say it  :D

Yoghurt cheese is yoghurt that is drained of whey that leaves a soft cheese like consistency (it may also be called labna?? will need to check that though, just something in my mind thinks that...)

Cecilia, thanks so much for these links. I haven't any others to add, but it's great to have them together. Cheese making in the thermomix is something I am really interested in.

Have made halloumi a few times and use the Indian cookbooks soft paneer to make a goats cheese. It turns out really well. Also have made yogurt cheese many times - really it is just further draining when you are straining yogurt to make Grrek yogurt. It is very good to use as a base for savoury or sweet dishes.

Thanks, ElleG.  You didn't realise you were doing it, but you reminded me of the Paneer recipe in the Indian cookbook as well, so that's another recipe to add to our list.  The comments you experienced Thermicheesemakers share (thanks to fundj and faffa as well as you, ElleG) add much value to the page, so it's not just a list of links, although I'm glad it is that too.

I love the cheeses I've made using the TMX. I've made the halloumi, ricotta and paneer.

Thanks for saying that, Cookie.  I must remember to talk about making cheese if I happen to talk to a dairy farmer tomorrow. ;)

Dear Nazar,  I have only collected the recipes, not made them all.  Cookie made this thread about Helene's ricotta.  Have a look.  The discussion and pics would give anyone confidence, I think:

I've just made another batch of Helene's ricotta. I love it with fruit, either fresh or stewed. Actually I love it by the spoonful. ;)
I hope to use some of this batch in a quiche.

I’m just bumping these as I have had a request to do so. With us all in isolation it may be fun to try some. I’ve made ricotta frequently (I actually use Tenina’s recipe as it’s more fattening!)
recipes
I also made some Haloumi the other day which wasn’t exactly slimming, but dairy is good for us, isn’t it?

One way or another I have accumulated quite a few vegan cheeze (as they call them) recipes.  Haven't tried any yet, but if anyone is interested I will try to dig some out.
