Title: Frittatas in the Varoma
Post by: Thermomixer on April 11, 2009, 09:06:19 am
Well, I have said a few times, in various places that you can make an omelette or a frittata in the Varoma tray. This post is to show that, not only can you do it, but it is very easy.

The original post with photos is here http://thermomix-er.blogspot.com/2009/04/frittata-in-varoma.html (http://thermomix-er.blogspot.com/2009/04/frittata-in-varoma.html)

Firstly, take a piece of silicon (baking) paper that will fit into the Varoma tray. Crumple it up and wet it, wring it out, then straighten it back out and place in the tray, which you have sitting in the Varoma base.

Add what ever vegetables, seafood, fish or meats that you wish

Blend up your eg mix in the Thermomix bowl and pour over the contents. This mix had 6 eggs and some milk.

Place 600 ml of water into the TM bowl and position the lid and Varoma. Cover the Varoma with the lid. Set the Thermomix for 15 minutes at Varoma temperature and speed 2.

Check after the 12 minutes has elapsed to see if the frittata has cooked sufficiently. It depends on what is mixed in with the frittata as to how long it may take - so no definite times.

When you have finished there is a moist, delicious frittata waiting to be devoured, and only the Thermomix to clean (which it does itself mostly !!!)

Members tips and ideas

Chelsea - Using the TMX bowl I chopped a handful of parsley quite fine, a spring onion and half a small capsicum semi-fine and then grated about 100g of tasty cheese.  I tipped those onto the wet paper in the tray with 2 sliced mushrooms and some chopped cheddar salami (a local salami - yummo).  I then whizzed up the egg and milk mixture (with some salt and cracked pepper) in the unwashed bowl and tipped it over the top.  Using boiling water in the bowl it took 15 minutes to steam.

Bron - I also use the wet crumpled paper whilst steaming fish above, cooking veg on lower level and soup in THX. It stops the flavours mixing

Wow! Thanks. I would never have thought to even give it a try. Males are very lateral thinkers.

looks fantastic!

why do you have to wet & crumple the paper?

cookie - not my idea - saw it in the "Full Steam Ahead" cookbook (or PSanish equivalent)

Brazen - makes it easier to mould into the tray.

yes, having used the paper un-wet and un-crumpled i can see that LOL

I made this tonight for a quick and easy dinner and we all enjoyed it.  I didn't think to use boiling water though (duh), so it took a bit longer to cook - about 25 minutes I think.  I used the TMX bowl to grate cheese, chop vegies and chop and saute onion and bacon before placing it all in the varoma tray.  I used 6 eggs and 200g milk.  Very nice and easy.

I am looking forward to trying a breakfast fritatta soon - bacon, mushrooms, tomato, cheese etc.  :)

Thanks Chelsea - it may well be that I used boiling water in the TM bowl - sorry.  I do that on occasions without even thinking  :-))

Just wanted to mention that I also use the wet crumpled paper whilst steaming fish above, cooking veg on lower level and soup in THX. It stops the flavours mixing! I assumed maybe you all do that? ??? ??? ???

I didn't know heehee and I'm still too scared to try multitasking (soup, veges, fish) unless I have a recipe to follow!  Although, I did do steamed veges over the mashed potato the other night heehee  Going to have some variation of this recipe for breakfast tomorrow :)

I understand where you are coming from Snoozie - perhaps anyone with recipes like this could post some more ideas for people to follow ie soup or sauce in the TM bowl, meat in the varoma dish and vegies in the varoma tray. With the meal you did the other night with potatoes to mash (in the basket?) and vegies, you could then add some chicken fillets/thighs in the varoma dish and put the vegies on the tray. Hey presto, a complete meal. I use some of the capsicum & sundried tomato dip recipe from the EDC & either place it on top of the chicken or cut a pocket and poke it inside then sprinkle the dip with parmesan cheese. The dip freezes well so I always have a batch in the freezer and just cut off what I need.

Thanks for that reminder Judy. I do remember you saying it somewhere but I had forgotten. e love that dip and I have to fight to freeze some. I think I may make some while everyone is out and put it in the freezeer :-)) :-)).
I often marinade chicken and place it on damp baking paper in the varoma and steam it with vegies and potato.
One of my favourite marinades is equal quantities of soy, balsamic and EVOO.

hehe I finally got around to trying this with leftover veges from the other night... think I overdid it a bit though as I had to double the steaming time lol

I made a frittata in the varoma tonight to use up lefterovers of cooked pork sausage and various vegetables.I followed Thermomixer's advice and used a 6 egg mixture but ended up steaming for 23 minutes as the tray was loaded with all the mixture. The result was yummy and went down a treat with DH and DS.Definitely make this again. :)

Thanks thought I'd bump this as it was so simple and a great easy lunch.  Used left over chorizo and veg left in the fridge.  This will be a regular at our house.  Think I'll pop in a tad of veg stock paste next time....... :)

I just made myself a fritatta (or is it really an omelette?) for lunch using 1 egg, some milk, some chopped ham, zuchinni, baby grape tomatoes and mushrooms, all topped with grated cheese. Because I had only one egg left I used the bottom of the varoma and put three cupcake silicone moulds along one edge before putting the paper in to make sure I didn't end up with a pancake. I probably still had a few too many vegies, and wouldn't use zuchinni again as it is so watery but it was a good, healthy and filling lunch. If anyone else in my family ate eggs it would be a great idea for dinner one day... alas.

I should tell the teachers at school they can make this in 15 minutes... they could take turns in making it for a shared lunch at lunchtime.

Perhaps someone can help me...

I tried this recipe tonight. I pre-steamed some sweet potato and spread it in the varoma tray with some tinned corn and tinned salmon. I poured the egg/milk mixture over, put 700g water in TM bowl and steamed for 15 mins/Varoma temp/speed 4. I checked the frittata at this stage and it wasn't cooked, so I set it for another 5 mins. Still not cooked, so set for another 5 mins. This went on for probably an hour. At one stage, I even had to refill the TM bowl with water. The final product still wasn't completely set on top.

What might I have done wrong?

Hi Amy I've never made this but am wondering if you put boiling water in the jug to start with (cold water would lengthen the cooking time) and if the frittata was in the upper or lower tray of the varoma. The bottom tray is deeper so would take longer to cook.

Just a thought.....

Amy, after the first 15 minutes, did you reset the varoma temperature or did you just reset the time?  I was going to suggest turning the speed up higher but I see you had already done that.  If you reset the temp every time you reset the time, topped up with boiling water when it needed it then I just can't understand why it wasn't set. Did you stick with the quantities as set out in the original recipe or do you think perhaps yours was much thicker.  I haven't done this for a while so I can't remember what mine was like.

I didn't put boiling water in the jug to start, but I still can't see why that would make it take an hour? When I topped it up I did use boiling water though. And I used the upper tray.

I definitely reset the temperature JD. And I used a smaller quantity than the recipe because I was only cooking for two people. I am very confused, and a little bit disappointed because there are so many great reviews about it and I can't figure out where I went wrong... :'(

Amy I make omeletes in the varoma regularly. They cook quickly,

I always use boiling water, thinking maybe your fritata was very tall?

Try making an omelette next time & see how you go.

Thanks... Halex/Hally (?) :-)) It might be the first time I actually manage to cook an omelette! I haven't had much luck in the past using omelette pans on the stove. My frittata was actually quite thin because I used only 4 eggs instead of 6. I prefer a thin frittata. And was only cooking for 2.

I would just like to tell everyone that despite the frustratingly long cooking time, the frittata was not only very yummy, but the leftovers served as a surprisingly good sandwich filling. Just smoosh between some bread and butter ;D Has anyone else tried this?

For a very late lunch/early tea today I thought I’d use this method for a steamed frittata as I have trouble eating anything fried or baked.  Very pleased with it, 5 meals for the freezer. I put in the Varoma dish not the tray, not sure why it would need to go in the tray.
