Main Dishes / The Best Chicken Nuggets .......ever

Chicken Nuggets:
4 to 6 people:
Ingredients:
300g frozen chicken breast, cut in pieces
100g emmental cheese
Salt & pepper
One egg
Plain flour
2 eggs beaten
Breadcrumbs

Preparation:
Place frozen chicken pieces, cheese, egg, salt and pepper in Thx and program 20 seconds, speed 5-7.
Make small balls, and flatten to make nuggets, dip in flour, beaten eggs and breadcrumbs.
Either freeze or deep fry straight away.

Tips/Hints:
These are ideal for kids, adults, lunch boxes, picnics and finger food at parties.
MUST use emmental, even if you don't like it, its the cheese that makes the exquisite taste. I hate emmental but LOVE these nuggets.

Yes, this time have won the travel bag, so that I can take "Clatter" on holiday with no worry of causing him any damage in the car boot, how fab is that? I am sooooooooo delighted you just cannot imagine! Especially as in August we are going camping, and how could I go a week without. A perfect Prize!  ;D ;D ;D ;D ;D ;D ;D

Tips and Tricks / How to make FROTHY MILK

Just seen this tip in a new Thx book! At last frothy milk for cappuchinos for breakfast!
Thought that I would share this one (Although you may have it down under already!)

The secret is skimmed milk and very very chilled. 0º. Or blitz a couple of ice cubes in with milk before starting.(without butterfly)

200 - 400g very chilled skimmed milk (at 0º)

place butterfly over blades and mix 2-3 mins (depending on 200 or 400g milk) speed 4

then program 3-5 mins/80º/speed 2-3. (again time will vary on amount of milk)

Bread / Vienna Sweet Muesli Brioche

Chookie, for you.........

Vienna Sweet Muesli Brioche (makes 15 individual)

Ingredients
250g milk (I used skimmed) ;D
100g sugar (I used brown) ;D
40g fresh yeast
1 egg
500g flour
10g salt
100g butter
150g fruit muesli (mine has bits of apple and banana in, although bet the chocolate one would be nice! :o :o))

Place milk and sugar in Thx, program 1 min, 37º speed 2.
Add yeast and egg, mix 10 seconds speed 3.
Add flour, salt and program 1 minute speed 6, then 3 minutes,  ::, knead meanwhile slowly add chunks of butter through hole in top.
Add muesli and mix 10 seconds speed 6.
Leave to rise in Thx for about 30 mins, until it pokes out the top.
Preheat oven to 220º.
Then turn out on to floured mat, and I made 15 balls. Then split each ball into two sausage type shapes, and twisted them into a plait, kids helped me.
Place on tray, lower oven temp to 180º and bake for 30/35 mins. I brushed with egg and sprinkled some sugar crystals, but you can just use icing sugar after baking.

Condiments and Sauces / Hygienic Mayonnaise

Ingredients

400g vegetable oil (I use sunflower)
2 eggs
10g vinegar
1 teaspoon salt

Weigh out the oil first into a jug/beaker. Keep aside.
Place eggs, vinegar and salt in  *: Program 1 minute 30 seconds, 80º speed 5.
Then program speed 5 (without temp) and pour oil slowly on to lid with MC in place.
When finished scrape down sides and mix further 10 seconds speed 3.

This recipe is from the offical Thx magazine, but it does state, that although it is lower risk than normal mayo, it is NOT pasteurised.

Desserts / Honey Ice-cream

Although its freezing here, and the last thing on my mind is ice-cream, however I thought maybe you guys might like to try this one, supposedly delicious, although I may have to wait a while before I can try ice-cream again!

HONEY ICE-CREAM:
Serves 4 - 6:
Ingredients:
500g milk
4 egg yolks
1 tablespoon cornflour
300g honey

Preparation:
Add milk, yolks and cornflour, program 4 mins 90º speed 3, then add honey and re-program further 4 mins 90º speed 3. Cool, then freeze for 3 hours, blitz speed 5 and serve.
Sounds lovely!

Thermomixer - How about just halving the honey content and adding a teaspoon of lemon juice?

Hi everyone! Feel like I have been away for years! Missed you all terribly, we went to spend xmas, new year and the 3 kings with our family in Granada, and see the snow in Sierra Nevada, and although we got back 10 days ago, I honestly have not sat down, my emails are almost as bad as the 14 unread pages of topic here! OMG! Pleeeeease let me catch up! Caroline, hang on there, not long now, soups, stews best option, throw it all in, and then blend the soups, you can always spice it up at the end with some chilli/curry to give it a kick! ;D
I can see also that Isi is a fantastic new member....welcome ISI, lovely recipes, look forward to making them, have already printed off 3 this evening!
Now you all have sweltering temperatures, whilst we are freezing in Europe, hope all the ice-creams and cold soups are coming along nicely. Have you all tried the gazpacho? ;) ;)
Nice to be home, back on line, and trying to catch up! Happy new year everyone....may all your dreams/wishes come true!
PS. have put on 1 kilo over xmas, so back to my diet again, hopefully won't take me long to lose it! ;) ;) ;) ;) ;)

1 kilo figs (cleaned)
600g sugar
1 tablespoon lemon juice

Place figs and lemon juice and chop 4 seconds speed 4.
Add sugar and program 30 mins, 100º, speed 2.

1 whole lemon, no peel, pith or pips
400g sugar

Place mango and lemon in  *:, and chop 5 seconds speed 4.

Carrot Jam/Marmalade recipe from my Spanish book

500g peeled and cut in chunks, carrots
250g water
pinch salt
500g sugar
the grated lemon peel of 1/2 lemon (make this first in  *:!)
juice of whole lemon

Place carrots in and chop 4 seconds on speed 5
Scrape down, add water and salt and cook 25 mins, 100º speed 1
Blitz 20 seconds speed 6
Add sugar, lemon peel and juice, program 10 mins, Temp Varoma, speed 1.

This is DHs favourite soup, he begs me to make it, have to admit it is very good. A nice winter soup! Although you guys are all in height of summer :o :o :o
Diet Cream of Tomato soup:
4:
Ingredients:
8 fresh very big juicy tomatoes (only remove stem part at top)
handful parsley
1 big onion
cup of water
teaspoon salt
1/4 teaspoon sambal oelek
3 diet cheese slices
20g EVOO
1 teaspoon sugar

Preparation:
Firstly blitz onion and parsley speed 5, 10 seconds, add EVOO and sauté 5 mins, speed 2, Temp Varoma. Add tomatoes, salt, sambal, and sugar chop on speed 4 for a few seconds, add cup of water and cook 20 mins, speed 2, Temp Varoma.
Allow to cool for few mins, and blitz top speed 1 minute, add cheese and blend speed 5 a few seconds. Serve.

Tips/Hints:
This is such a lovely cream of tomato soup, you may like to thin it down some more but we prefer ours quite thick.
I normally make this as a starter with homemade burgers to follow with grilled mushrooms. ;) ;)

Diet / Diet Cream of Asparagus soup

Hey guys, am finally coming towards the end of my diet and as I am sooooooo happy and have now lost 14 kilos, and DH 10 Kilos! I have decided that I will post some of my lovely easy diet recipes to share with you, if anyone is interested in them! Am Feeling great!

Cream of Asparagus soup:
2 (Can be easily doubled):
Ingredients:
1 small jar/tin asparagus, approx 350g (green or white, have tried both, lovely) with liquor (juice)
some water & skimmed milk
chicken/veg stock (I use half teaspoon of mine)
1 onion
15g EVOO
1 teaspoon cornflour

Preparation:
Blitz onion speed 5, 10 seconds, add EVOO and sauté for 6 mins, speed 2, Temp Varoma.
Add asparagus and liquor in jar/tin, measure water in same jar/tin and add half the amount, add stock and cornflour and program 20 mins, speed 3, Temp Varoma, add half jar of milk and blitz 1 min speed 10.

Tips/Hints:
This makes a delicious cream of asparagus soup, very, very low calorie starter. Whilst making the soup, I steam some fish and veg above for main course! Dessert always a low fat yoghurt! ;)

Cakes / Chocolate Biscuit Sponge Cake (no flour)

Chocolate Biscuit Sponge Cake

Ingredients
150g Dark cooking chocolate
1 packet plain Marie biscuits (mine weighed 210g)
100g soft butter
75g sugar
3 eggs
2 teaspoons baking powder

Preheat oven 180º

Firstly blitz chocolate 5 seconds on Speed 5, so still some chunks, keep aside.
Place biscuits in jug, and 15 seconds speed 5 to 10 until powder.
Add remaining ingredients and mix for 30 seconds speed 7.
Add choc pieces and stir in with spatula. Pour into silicone mould. And voila...straight into oven!
Use a small mould/dish as it doesn't rise that much. Sprinkle with icing sugar.

It makes a lovely small cake, best eaten warm (but NOT hot!) with a cup of tea!

Cakes / Bron's Easy Lemon Sponge Cake

Very easy and light sponge cake. I always make it a round ring type tin (so it doesnt sink in the middle and it cooks to perfection) Never had a flop yet, and I make this weekly as my kids and friends love this one  ;D ;D

Ingredients

3 eggs
200g sugar
100g soft or melted butter
1 yoghurt - 125g (lemon, strawberries or plain yoghurt work best)
170g plain flour
pinch salt
1 sachet baking powder - 2.5 tsps
1 lemon

To make:
Preheat oven 170º.
Firstly peel rind of lemon, no pith, and place the lemon rind in bowl with sugar. Blitz speed 5-10 about 20 seconds. Add eggs and program 2 mins 37º speed 3. Then add butter and yoghurt, mix 15 seconds speed 3. Add flour, pinch salt and baking powder and mix 12 seconds speed 2 and 1/2.
Pour into greased and floured ring type cake tin. I sometimes use a silicone one, which is ever so easy to turn out on the plate, however the colour isnt as nice as when baked in tin one.
Bake 30 mins on 170º

Then when turned out on plate, squeeze lemon juice into a dish, and add 50-100g of sugar. And baste over cake. This is the bit the kids love best as the sugar is crunchy and yummy.

CP  - this cake is just the antz pantz, ohh so delicious --  think I'll skip lunch and have another slice of this instead. I had half a lemon sitting on the bench, so added the zest of that as well at the beginning. This will definitely become a regular. The consensus on the flavour was like having "a crepe sprinkled with lemon and sugar". We all loved it, and it was very moist too.

Caroline J - I didn't have a ring tin (and am impatient) so I have a cupcake version of these in the oven now. Oh wow, divine!!  I used a lemon meringue diet yoghurt, and they are delicious as cupcakes.

maddy - Oh Bron, we really loved this! I think the lemon/sugar syrup really elevates this cake. I did use 100g sugar for the lemon syrup as the lemon I had was exceptionally tart! I used greek yoghurt and baked for 35 mins in my oven. Will definitely make again, thanks.

Berry - It is just fantastic. I've just made it for the second time .... first time was yesterday ..... should I admit there's only 2 of us?  Probably not!

CC - This is a great recipe. I've passed it into friends who don't own TM's because they were impressed by tasting my cake.

Judydg - Just enjoying a slice of this with a cup of tea - divine!

KerrynN -  I've used sour cream and a little milk (about 30g). It's in the oven now. Yummy! Very moist, with a lovely subtle flavour. I hope the kids don't like it.

johnro - this was delicious - as mentioned so easy and suitable to devour warm or cold.  As the pic testifies, the only yoghurt in the house so picked 2 passionfruit and stirred through yoghurt before adding to mixture in thermie. So moorish, thanks Bron for the recipe and all those who brought this thread to my attention! Also made a batch of cupcakes using this recipe.

salval - DELICIOUS!!!!! Thanks for this easy, peasy, lemon-squeezy cake recipe.

Chelsea - I've made this twice now.  The first time I used melted butter and it was lovely but a little heavy.  Yesterday I used soft butter (left at room temperature for an hour) and it was very light and fluffy. Very yummy!

ES - I made this with gluten free flour and an extra teaspoon of baking powder, and it worked beautifully.

Hally - Thanks to thermie, I have this cake in the oven, ready in 20 mins, so all done and cooling before school. Also it uses yoghurt. Yay
