Chocolate coconut fudge

Ingredients

400g shredded coconut
30g cacao powder
200g honey/maple syrup / agave syrup
1/2 tsp vanilla essence
1/4 tsp salt

Instructions

1. Prepare 9 inch square baking tin by lining with baking paper.

2. Place coconut in tmx bowl and process at speed 8 for 2 minutes until it has turned into a thick liquid. Scrape down the sides a couple of times as you process.

3. Add other ingredients and process for 30 seconds at speed 8

4. Spatula thick mixture into tin and flatten with back of a spoon. Cut into squares with a small pizza cutter.

5. Put into fridge to chill for a couple of hours until firm. Recut the squares.

This is surprisingly delicious. If anybody has any tweaks they would like to add please pass them on! Don't overprocess otherwise the coconut oil starts to separate out which is what it did to me! I used honey.

This was delicious! Mine seperated a little, but it didn't affect the taste. Very naughty! Perfect sugar free treat :)

Ok this is my first time on here lol, by shredded coconut do you mean fresh not dried? I can't imagine dry would turn to liquid but thought I'd make sure!

Yes, I was surprised too. But if you have a look around on the forum, you'll find coconut milk recipes made from desiccated coconut!

I'm having a dairy free guest for dinner tonight, so I saw this and made it just now. I didn't have any cacao powder so used crio bru instead. I don't really like crio bru, but it seems to work in this one...but maybe 15g-20g instead of 30. Super easy to make. I've pre sliced it as the recipe suggests, it ooks great, now I'm just waiting for it to set.

I made it and for my tastes I need to tweak it a bit. I'm guessing the crio bru doesn't really work...but I used honey as the sweetener and both my guests and I thought the honey overpowered everything so next time I'll use agave or maple syrup. I think I'll just use maybe a tablespoon of regular cocoa next time too.
