Help please with a bread recipe

Yesterday I made this bread from the recipe community. It has 500g atta flour in it and the recipe asked for 20g dry yeast. I decided this was far too  much and put 2 teaspoons in. It had 3 risings and the bread crumb is holey. DD called it crumpet bread.
Should I have put the 20g yeast in?
Should I only do 2 risings?
Thanks. I liked the flavour of the bread, it's just a bit airey.
May all dairy items in your fridge be of questionable vintage.

i am no expert, but i think the over night proving could be at fault

i don't need a recipe i'm italian

I agree with you. I didn't prove it overnight just until it had risen. I think 3 risings was just too much.
May all dairy items in your fridge be of questionable vintage.
