Cakes / Passionfruit and coconut crumble cake (Dan Lepard)

I wanted to make this cake for a long time but the passionfruits just didn't get ready

Ingredients:

75g unsalted butter
25ml sunflower oil
175g caster sugar
Pulp from 3 passionfruit ( I used 6 little ones from my backyard)
25g cornflour
3 medium eggs, separated
100ml double cream ( I used thickened cream)
200g plain flour
2 tsp baking powder
For the coconut crumble
50g unsalted butter
75g plain flour
50g caster sugar
25g desiccated coconut
Icing sugar, to finish

heat the oven to 170 degrees and line a 20 cm tin

melt the butter in the thermomix 2 minutes at speed 3, 70 degrees
add egg yolks, sugar, corn flour, oil and passionfruit pulp
mix one minute speed 4 reverse (if you like to keep the seeds intact, otherwise you can do normal direction at higher speed)
beat the eggs to stiff peaks in a clean bowl, I used my standmixer but you can also do it with the thermomix
add flour and baking powder to the passionfruit mixture and mix with the spatula
add the egg whites and combine very carefully so it stays nice and light.
put in the cake tin

mix the flour butter, coconut and sugar for the crumble, 30 seconds at speed 4 and sprinkle over the cake mixture
bake for about an hour in the oven, or till skewer comes out clean.

Spice Mixes / gestampte muisjes ( anis seed flavoured icing sugar)

In The Netherlands we like sweet toppings on our sandwiches or toast. This is a classic, and I never realised how easy it is to make it yourself

1 teaspoon of anis seeds (just the seeds, not the star anis)
100grams of sugar

at speed 10 for 20 seconds and done.

It tastes very nice on toast or sprinkle it over cakes and cookies.

Introduce Yourself / hello

I'm from Queensland and have been on forum for a while, I have a thermomix since the start of this year and I love it.
The recipes and bits and pieces of advise are very helpful but after being able to download all the recipes into my ipad thanks to the great work from Stacelee I had to register, otherwise I could not thank her for that.
Anyway, I hope I will be able to add some of my favorite recipes to the forum and thank you all for the great info and help here on the forum
