Armed with my new found bread/bun making confidence I thought I would get started on a practice round of HCB's before I serve them to my work mates. I've seen the reviews and trawled through the many pages on the forum.
My question now is, which is the best recipe to use? they all look divine!

I have made the one in the EDC several times and find it great. I don't bother with the crosses. I haven't tried another recipe. the kids just go crazy for them! It takes a while the first time you do them, after that its a piece of cake (bun).

I use the EDC recipe too LMT. You've read all the reviews so you can adjust things to suit yourself from some of the suggestions given there.

We had a few tweaks on the EDC recipe last year. Love this recipe still though! ;D

I've made 4 separate batches from the EDC receipe. I have found that the mixture can be a little wet so i just sprinkle in some flour whilst its kneading to make the consistency I like.
I have had friends and family ask me to make them to their liking so I have done ones with no peel, ones with sultanas only and, no fruit ones also. Next i would like to try some choc chips thrown in.
Most of the comments from work is that these were the fisrt homemade hot cross buns they have ever had, yet they are so easy to make. Im very impressed and already taking orders for Easter. No excuse for all TM owners not to have fresh hot cross buns for easter!!!

Why not try a few different recipes and see which you prefer? I find I never have a shortage of willing taste testers when it comes to Hot Cross Buns ;)

I haven't had success with any of the recipes I tried other than Bill Grainger's Scrolls (http://www.forumthermomix.com/index.php?topic=3256.0). I'm going to use that recipe this year.

I've checked out both Chookies & mkr's recipes and will be trying a batch of each this year. I bought some spelt flour ages ago and have never used it.

Oh, how I wish I was cooking and eating home made Hot X Buns. This Easter, I will be somewhere between Cape town and Paris. Sounds exciting , but will be watching with interest all the mouth watering comments on the Forum as everyone tries different recipes. Please don't make me slobber tooooooo much on the iPad screen. ;D ;D ;D

I'm with you JD, I have checked out both recipes and they both inspire. I have been trying a few recipes lately with spelt flour and just bought some more. I made my Xmas pudding with spelt flour last year, and it was given the thumbs up from everyone.

Chookie, I'm sure you will find a hot cross bun to buy somewhere in your travels. Glad to hear the iPad is going on holiday too, will look forward to your posts from all the different countries you are visiting.

Had my first try with the EDC ones today after hearing good things in the is thread. The texture was brilliant, much better than homemade (non TMX) ones I made last year. Didn't bother with the glaze or cross but will closer to Easter if friends come around. Flavour good too-worried about the lemon peel as am not a peel fan but it just added to the well balanced flavour, no big chunks!

I've made a few batches of Hot Cross Buns this week and made a few little cheat notes along the way!
I was having trouble with them not rising, even after 2 hours. It looked to me like I could still see grains of yeast in the dough? I kneaded the dough by hand again and then sat the dough over a steaming bowl of boiled water to get some heat into the dough. They were somewhat salvaged but still quite heavy.
2nd batch - I didn't worry about taking the chopped up peel from step 1 out of the bowl, just added warmed milk straight to the peel. I also added the 2 sachets of yeast directly into the warm milk and then mixed it all up for around 40 sec on speed 2, the yeast really activated and started to bubble. I then added everything else as per recipe. The result was brilliant! So fluffy and tasty, I have done this again to check it wasn't a fluke and again perfect buns, very happy!

I am going to make Chookies recipe and Maddy's choc-chip this Easter, as we are divided in this household some like fruit buns and the others don't.

Brilliant minds think alike.!!!!!! A neighbour has asked for some bread making lessons. I thought I would show her No Fuss Rolls and Hot X Buns. I think the secret to the buns is the extra yeast,, that is 4 teaspoonsful. As we like plenty of fruit, it should add up to 300g. This same recipe can be made into a fruit loaf. Make sure you do the double rise. Easy. Love the variations. Make your own peel , nothing like the rubbish they sell in the shops.

CP, true to some extent. Call it a character flaw. But I find it easy when I am teaching people to make bread. Some things work every time. I get my challenge from sour dough. A real test of skill, experience and character. When I find a fool proof recipe , such as your Cream Puffs, why look further.?

Dede, so pleased that you liked this recipe as it is actually mine. It has been changed a little so that it looks different. For example, the yeast measurement of 4 teaspoons of yeast is the same as 1 tablespoon. I am not impressed.

Oh cookie and no mention of being yours. Well they are really yummy if that's any conciliation. If you send Monica a message I'm sure she would be happy to mention that's it's your recipe. The problem is that people copy other people's recipes and place them else where without mentioning where the recipe come from. Well I'm glad I know where it come from now.

I was planning on making the Vienna bread today but I couldn't find bread improver in the shops.
So, I made Chookie's hot cross buns. Fantastic recipe. DH sacrificed himself to be taste tester as soon as I had finished glazing them - before I could take a pic. Thanks for a great recipe Chookie.

MEP, they look fantastic. Hope I can find time this year to make some. I noticed some today in Bakers Delight, I think they were $1.40 each.
A couple of years ago, 2 friends and I made 13 dozen. Most for an elderly citizens club. They were supposed to be for their lunch, but most of them slipped them into their bag to take home.

I have always loved hot cross buns and tried baking some last year ( our first year in the US) as they are not sold in the shops/bakery and they were okay. DH thinks these are much improved. He ate two in five minutes!
