Title: Smoked Salmon Soup

Name of Recipe: Smoked Salmon Soup
Number of People: Makes 2litres ?
Ingredients: 500g Milk
                            250g Cream
                            100g Tomato Paste
                            3 Cooked Potatoes (mashed in TMX) or 30g Cornflour
                            150g - 200g Smoked Salmon
                            1 Tbsp TMX Vegetable Stock Concentrate
                            Finely chopped Dill to taste

Preparation:  Place the milk, cream, tomato paste, potatoes (or cornflour) into TMX bowl.
                             Cook for 8 minutes at 100c on speed 3.
                             After 6 minutes of cooking, add smoked salmon and stock.
                            When cooking time has completed add extra smoked salmon cut into stripes and finely chopped dill and combine
                            for 10 - 20 seconds on speed 1.

Tips/Hints: This is how the soup was made at the Baulkham Hills Festive Cooking Class. Prepared by V. Lemmer, Consultant, Recipe by L Skrinnikoff, Customer. I'm sure you could adjust it to how you like!! But it was DIVINE!!! (And I don't usually like very much Smoked Salmon!!!)

Thermomixer - Think I'd start with a small amount of the stock concentrate and adjust up as needed.

Cookie1 - I wonder what this would be like chilled? I think I'd be very careful with the concentrate too, wouldn't want to ruin the smoked salmon.

JD - We just had this smoked salmon soup for lunch.  I still had the second packet I won from Helene's blog so used that (Wild Smoked Sockeye Salmon) - hope Helene isn't reading this thread, she will have a fit to see I have used it in soup but it was soooooo nice.  I did what Thermomixer said and blitzed the potato to start with (used 4 as I wanted it nice and thick).  It did take an extra 8 minutes to cook though so next time I might try the precooked potato method.  I am going to serve the leftovers over some steamed garlic rice (it is almost a mornay consistency so should work well).  Thanks for the posting terstoo.

terstoo - Glad you liked it. when they cooked it at the demo the lady had cooked and mashed (blitzed) potatoes that she added. I loved it at the demo

Wonder if you could blitz raw potatoes and cook them in milk and then add the other bits as above?

I wonder what this would be like chilled? I think I'd be very careful with the concentrate too, wouldn't want to ruin the smoked salmon. :'(

Cant quite work out how it would make 2 litres? Not enough liquid, is something missing?

500+280+100+(3x350)+150 = 280  roughly.  It is the potatoes that account for half the volume (unless you are using small potatoes.

I would use the cornflour, so no added liquid there?

Yes, there is a big difference if you use the cornflour, but it may pay to add more milk to increase the volume?

Don't know how it made 2 lt's!! I was just at the demo and it filled the thermomix jug when she had finished, and that's a 2 lt jug!!! We had small (about 3 inches tall) cardboard cups of it and there were 22 - 24 people there. It was very creamy and delicious.

Does anyone know if this one would freeze OK? 2 litres is a lot of soup for 2 people.

Judydawn I think it would freeze well.   The cauliflowerr soup in the every day book freezes well and is a little like this salmon one.   I would add the second lot of salmon when I reheated the soup.   Do you think anyone would be interested in Crab Soup. ?  .. I have a recipe that would convert well to T.M.

We would love any recipe thanks Chookie.  Have people seen the uncooked crab meat for sale in packs?  It is available in Sydney Fish Market.  I was given a bag but had to leave it for a friend.

We are going to the Vic. market next Tuesday,  so will look out for Crab meat.   Will let you know later in the week.   Baby sitting again!   The recipe i have is made with tinned crab,  so judydawn you may not like it.

I do prefer fresh Chookie but enjoyed a dip recently at the cooking class which was made with a can of crabmeat. Love the sound of crab meat in a bag Thermomixer.  The days of people popping in with half a dozen freshly caught and cooked crabs seems to be over, haven't had any for over a year now.  Fresh crab cocktail, yum - sweeter & tastier than prawns in my opinion.

Judydawn, I think you will like this soup, It has a WOW factor.   I usually make double, and it is made from the ingredients you have on the shelf.    ( see how I used the"Insert Quote).    Ha, Ha.

Nothing can beat fresh crab Judy. Fortunately we usually get our fix at Monkey Mia. You can get them in the Swan River but we really don't take our boat out in the city.

Not a problem Thermomixer, still a very quick soup to make.  If I know in advance what I am cooking I would make sure I cooked extra potato the day before but I am not very organised at the moment.
