Chit Chat / Secret Santa 2014 presents

I have a very organised secret Santa!😄😄😄

I think I might be the first person to receive their present - it arrived in the mail today.  If my SS looked at my previous track records I have never been able to wait very long before opening my presents - patience has never really been my thing 😀😀😀. So I'm not sure how long I will be able to hold out before I cave in but I am trying to make it to November at least 😳😳



It's a beautiful gold package from POK - which is very exciting.  I've been doing a lot of feeling and I think it is a cloth or material item - maybe an apron or some lovely linen napkins???  I know POK has a fabulous table linen section so I think it might be something from there!

We are heading off on a well deserved break to the beach.  I am taking TMX with me but I want to also make some good snacks to eat at the beach before we leave (I don't want to spend most of the holiday baking!). Seeing as it's coming into beach season in Australia I thought I would start a topic to get some good ideas for beach snacks - you know food that doesn't melt or need to be kept cold, isn't too effected by sand and can be eaten without utensils.

I'm baking:
Gingerbread cookies
Bliss balls
Muesli bar slice (although these don't hold up so well in the heat)
Banana bread
Cheese and bacon scrolls
Choc chip cookies

If anyone has a recipe or recommendation for cheese flavoured crackers (like cheds) I'd love to hear it.

What are your best tips for beach food?

Chit Chat / Can you recommend a hand mixer

Despite many attempts over the last 3 years I have had no success in beating egg whites in the TMX.  I love my TMX but whipping egg whites for pavlovas is definitely not something it's good at!

I know the stand mixers are great but I don't have the bench space and I only want to use it for beating egg whites.  So can anyone give me any reviews for the hand mixers - Kitchenaid, Kenwood, cuisinart?

Recipe Requests / What's your best Curry recipe?

We are having a curry night with friends next weekend - everyone brings a curry and we all share.  I'm down to do a chicken curry and was planning on doing the Butter Chicken from the Indian book.  But just thought I would put it out there to see if anyone has recommendations for any other amazing curry recipes? 

One of the families is Sri Lankan and the other family is Nepalese so they are both cooking their traditional curries which I am expecting will be sensational!  I don't want to let the team down 😃😃😃😃

Chit Chat / Ideas for shopping in Hong Kong and Singapore?

We've booked a trip to Hong Kong and Singapore in January. 😄 I'm pretty excited because its my first time in both countries!

I know many of you have been to one or both these countries several times so I thought I would ask the experts where are the best places to shop?  I love kitchenware, shoes, clothes for me or the kids, jewellery etc

Do you have any cant miss stores?

Made these for the boys today.  I followed the recipe but used whole meal spelt flour and they turned out lovely.  They are not overly sweet so perfect for the kids.  Boys love them so will definitely be making them again.



Of course because I've got boys the heart shape was out but I did get to use my new cookie stamp!

Cakes / CWA Anzac Biscuits (cookies)

I have used this recipe for a while now and it makes delicious traditional ANZAC biscuits.  It is from the NSW CWA Cookbook called Jam Drops and Marble Cakes and I have converted it to TMX.

The recipe makes 40 x 5cm sized biscuits

Ingredients:
125 grams butter
1 tbsp golden syrup
180 grams brown sugar (recipe is for 220g of sugar but I find 180g is enough)
95 grams rolled oats
90 grams desiccated coconut
150 grams plain flour
1 tsp bicarbonate soda
2 tbsp boiling water
1/2 tsp salt

Method:
Preheat oven to 180°C (160°C fan forced).

Add butter and golden syrup to TMX and melt 2 mins / 80°C / speed 2.

Add sugar and melt 1 min / 80°C / speed 2.

Put the bicarb soda In the MC and combine with the boiling water until dissolved.

Add oats, coconut, flour, salt and bicarbonate and water.  Mix Reverse / speed 4 / 10 secs.

Place spoonfuls of the mixture onto lined baking trays and bake for 10-12 mins.  Allow to cool on tray.



Watch out, they disappear quickly!

Note: they also have the 1914 version in the book which is similar but has no coconut (double the oats) and only 165g of sugar so the recipe should work with anywhere between 220g and 160g of sugar depending on your taste.

maddy - they were lovely snappy. I find different recipes can be hit or miss, but these at 10 mins cooking, were chewy how I like them....not break a tooth hard.

Gert - Just made a batch of these for some visitors. Delish.

djinni373 - I made these on Anzac Day and decided to add about 1/3 cup each of dried apricots and dark choc chips. Not traditional but very yummy. Thanks for converting Snappy.

Hi everyone, I am off to friends for dinner tomorrow night and I offered to bring something (thinking she would suggest dessert) and she asked me to bring some starters/nibbles.

I was thinking dumplings but I'm not going to have the time to make them tomorrow.  I need some suggestions for a super quick but yummy starter recipe!

Cakes / Lunchbox Cookies

I have been making these cookies for years for my boys - they love them and I'm happy because they are not full of crap.  I named them lunchbox cookies because I made them for DS's lunchbox when he started preschool.  I've since added crio bru to the mix to get another 'superfood' in there!

Ingredients:
1 egg
150 gram rapadura
125 gram butter
1 tbsp vanilla essence
1/2 cup whole meal flour
3/4 plain flour
1/2 tsp salt
1/2 tsp bicarbonate soda
1/2 cup walnuts (or other nuts) (I use sunflower seeds for nut free)
1/2 cup oats or quinoa flakes
1/2 cup sultanas
3 tsp crio bru
3 tsp chia seeds
Smarties or Choc chips

Method:
Preheat oven to 180°C.

Add egg, sugar, butter and vanilla into the thermomix bowl and mix speed 7 / 20 secs.  Scrape down side of bowl.

Add all the other ingredients, except the smarties or choc chips, into the thermomix and knead for 20 secs until just combined.  Use the spatula to combine any excess.

Place teaspoons of the mixture onto a baking tray about 5cm apart.  Place 5 smarties on the top of each cookie.

Bake for 10-12 mins.

Here's my cookie jar all filled up!

Stella 84 - made these with almond meal and besan flour, still turned out delish! great recipe snappy.

cookie -  I wondered about the tablespoon of vanilla but it really adds to the taste. These are truly delicious. I didn't have any smarties so I added a handful of mini choc chips to the mixture. I love them and DH has just had a couple with his afternoon coffee.
Definitely on the make again and again list.

Bread / Bread making book : Artisanal Bread in less than 5 mins a day

Hi,

Reading some blogs last night and I came across this book.  I am quite interested in it and wondering if any one on here has had any success with it?

The basic premises is that once a week (or fortnight!) you mix up a big batch of dough and let it rise for a bit, then put it in the fridge where it will keep for up to two weeks.  When you want some bread, you just take some out of the fridge, shape it, let it rest for 20 mins and then bake.  Apparently their dough is much wetter than normal?

This definitely sounds like my type of cooking.  Has anyone got this book and if so what do you think of it?  It has over 1000 reviews on Amazon and got 4.5 stars but I would trust even one r review from here more.

So I thought we might start a thread where you can post a bit about yourself so secret santa can learn all about you.  I thought it might be fun to do 10 questions and we can all learn a bit more about each other - if you don't want to answer the question but just want to tell us about yourself that's fine too.

1.  Sweet, Savoury or Spicy?  Definitely sweet, preferably chocolate

2.  My favourite type of cuisine is : Middle Eastern

3.  My favourite beverage is :  Red Wine (alcoholic) or Lemon Lime Bitters (non alcoholic)

4.  My ideal holiday destination would be :  An island in Fiji with a butler and nothing at all to do.

5.  My favourite TV show or Movie is :  Rake (ABC)

6.  Summer or Winter :  Summer - relaxed days down at the beach, picnic food, eating dinner outside in the backyard and MANGOs - what's not to love?

7.  Favourite colour :  Red and orange (but not together)

8.  When I'm not cooking I'm :  taking photos - you wouldnt know it from the quick iPad snaps I put on here but I love photography and my next purchase is a Macro lense for my camera - nearly as expensive as a thermomix!

9.  Something I want to make in the thermomix but haven't tried yet is : sourdough - the thought of making a starter and feeding it sounds like more work than my two year old but I love sourdough bread and we buy a loaf from Sonoma every weekend for lunches.

10.  I'm allergic to or really don't like :  seafood and pork

I am taking the boys down the beach for the school holidays tomorrow.  It's just me and the boys, DH has to stay and work.

I am in two minds about taking the TMX - so tell me do you take yours away or do you just make do?

Cakes / Spiced Pear Cake

This cake is divine!

 I had some pears that needed using up before my next fruit box arrived and smh.com.au had an article on the best afternoon tea cakes/loafs.  That article linked me through to Sophistimom's blog - which has lots of fabulous recipes!  I've just converted Sophistimom's recipe for the thermomix but Sophistimom says she was inspired by a Martha Stewart recipe!

I found this recipe will make two small loaf cakes or one square cake.  My boys and DH ate one of these loaves uniced within about 4 hours of it being made - so lucky i had another.  It is the most perfect morning tea or afternoon tea cake iced with some cream cheese icing.

Ingredients:
2-3 ripe pears, peeled, cored and cut into chunks
3/4 cup white sugar
1 tsp lemon juice
110 gram unsalted butter
85 grams brown sugar
2 eggs
1 tsp vanilla extract
100 grams sour cream or yoghurt
3/4 tsp cinnamon
1 tsp ground nutmeg
1/2 tsp ground ginger
1/2 tsp ground cardamon
11/2 tsp baking powder
1/2 tsp bicarb soda
1/2 tsp salt
250 grams plain flour

Method:
Add pears, 1/4 cup white sugar and the lemon juice into TMX.  Cook 100°C / 15 mins / speed 1.  When finished cooking, mash the pears 5-7 secs / speed 5.

Measure out 11/2  cups of the pear sauce and set aside.  Clean bowl.

Add remaining white sugar and grind speed 9 / 5 secs.  Add butter and brown sugar and cream speed 4 / 2 mins.

Add in eggs, vanilla and sour cream and mix speed 5 / 2 mins.

Add spices, flour, baking powder, bicarb soda, salt and knead / 30 secs until it is just combined.

Add in pear sauce and mix speed 1-2 / 7 secs.

Bake in 2 lined loaf tins for 30-40 mins @ 160°C

Stephanie - Yum. I'm about to pull mine out of the oven.  It smells divine.  My mother in law will be here shortly for afternoon tea - she's an award winning CWA cook so I'm hoping to impress. I used tinned pears because I had a random tin in the pantry and I'm trying to eat what we have to hand.  I also used GF flour and allspice instead of cardamon and nutmeg (could not be bothered grinding them).  The batter was delicious!  I found a block of philly and some walnuts in the freezer - mmmmm cream cheese icing.   I also used a touch of stevia powder with the pears instead of sugar and rapadura instead of brown sugar.  That means I can have an extra piece doesn't it ;) Thanks for a great recipe.
Update - My MIL was very impressed.  The cake was so delicious - everyone devoured it and it did not suffer from using the GF flour - I find you have to eat cakes very quickly if you use the gf flour as it seems to dry them out within a day or so.  That was no problem with this cake as it was gone within 24 hours!

ES - I made this into two log cakes, and gave one to my neighbour to take for afternoon tea with a new mum. She said how lovely it was and that everyone went back for seconds. I used 3 pears, but it only made about 1 cup of purée so I added some apple purée I had in the freezer. It was an easy cake to make, I love anything with fruit in it.
