Mashed Potato Bake

Hally sent me this recipe and I just had to share it with you all, thanks Hally.

Name of Recipe: Mashed Potato Bake converted from a AWW recipe

Number of People: 4 serves

Ingredients:
60g cheddar cheese, cubed
500g potatoes, peeled & chopped coarsely
100g short back bacon, chopped finely by hand
1/4 tsp garlic paste (optional)
4 shallots, sliced thinly or 1/4 cup caramelised onions
60g sour cream
20g butter
45g hot milk
S & P to taste

Preparation:
Chop the cheese for a few seconds on speed 9, set aside. No need to wash the bowl.

Place 800mls boiling water in the TM bowl, the steaming basket holding the potatoes in place and cook 25 mins/varoma/speed 3.

In the meantime, pan fry the bacon and spring onions until crisp.  Set aside on paper towels to drain.
 
Check that a knife penetrates the potatoes easily, do not mash if they are not completely cooked.  Add more time if not cooked properly.

Remove the steaming basket and potatoes and drain the liquid.

Place the butterfly in place, tip the potatoes back into the bowl and add the sour cream, butter, hot milk, garlic paste (if using)and mash for 10 sec/speed 3. Check that there are no lumps, repeat last step for a few more seconds if necessary.

Remove the butterfly and fold in half of the bacon/onion mixture and half of the cheese with a spatula.  If using caramelized onions, chop them finely and add here.  Add S & P to taste.

Place the potato mixture into a greased casserole dish or individual ramekins.

Sprinkle with the remaining bacon/onion mixture and cheese.

Bake in a moderate oven 180oC until heated through and brown on top.

Tips/Hints:

These can be prepared ahead of time, refrigerated or frozen until required and baked when needed.  I used ramekins and made 2 x 1 cup and 2 x 1/2 cup. The picture shows a 1/2 cup serve. I finished it off in the airfryer 200o for 10 minutes (from the fridge).

JulieO: I made this today to use in "filled sausages" (with some left over).  Really nice and tasty, will make again for sure, thanks Judy.

My DH loved it.  I served it with pan-fried chicken breast I stuffed with pesto & feta, and some broccoli.

Thank you both. It is something a little different in the vegie line and that is always well received here.
