Name of Recipe:  Coconut Prawns with Mango Sauce
Number of People:  MMMM depends they really are very morish; there's 2 adults and 3 kids here and it was a struggle
Ingredients: 

Coconut Prawns:  1kg of large uncooked prawns, Roughly 1 cup of cornflour, 2 egg whites lightly beaten, 140g Shredded coconut

Mango Sauce ingredients: 425g can of mango slices, 2 tbsp mayonnaise, 2 tbsp mango chutney


Preparation:
MANGO SAUCE:
Place all ingredients in the tmx and mix on speed 5 - 6 for a few seconds until there are no lumps. 

PRAWNS:
Peel the prawns, removing the head but leave the tails on. Dip the prawns in the cornflour and shake away any excess. Then dip the prawns in the egg white and then in the shredded coconut.

Deep fry in oil of choice (the oil will need to be thrown away afterwards so don't spoil the oil in a very large deep fryer if you have one, maybe use a saucepan with a smaller amount of oil ?). The oil needs to be quite hot, they should cook quite quickly, and cook until golden.

Tips/Hints:  If you're from Queensland and you've ever been to the Thai Orchard Restaurant (at Mt Gravatt or Springwood), these taste the same, they are sooooooooo yummy and great even as a meal with salad thru summer.

I have these in the oven right now, I so love the smell of bread cooking mmmmm.  We make these regularly now and I usually do a double batch and freeze some for lunches.  Today I did the double batch in one hit, and it handled it all fine. Just couldn't leave it in  the bowl for the first rise. I'm off to get my rolls out of the oven and have lunch !! Yummoooooo.

Hi all, I've been searching thru the forum to see where everyone is buying their spelt grain flour. Just wondering if anyone's buying spelt grain online or locally in Brisbane and getting a good deal ? Russell did you end up buying any at all ? Tis $6.00 / kg from Trumps in 5kg lots.

Did you "chuck it all in" Jennifer ?  Have you tried to make it the step by step way before at all ?  I'd be interested if you thought it turned out any differently ?  I still have the same batch in the fridge, so it's keeping quite well and the kids play with it a fair bit.

Hi Sharona and welcome, I've had mine for a couple of months now and absolutely love it.  It's fantastic when you have small children as you normally can't afford the time it takes to make things, but the TMX just makes it all so quick and easy. We're also in Brisbane (Eight Mile Plains), where abouts are you ? Our kids absolute favourites are the cheese and bacon rolls.  We have theme park passes and quite often cook up a batch to take with us for lunch (I know you're not supposed to but with their ridiculous food prices, we do and they've never questioned us).  Hope you enjoy your TMX as much as we do.

Did your friend pay by Paypal ??  If your paid by Paypal then you have buyer protection and can claim the money back from Paypal. You have to obviously go thru a claim process etc but it's not too laborious.  If she didn't use Paypal, then that was quite silly, especially for that kind of money.  It's like anything on the internet, you need to take precautions ! If you don't take the precautions, then wear the costs !

I made this yesterday for my kids after doing a series of "throw it all in and mix recipes" and anyway I was distracted by kids and hence threw it all in and then I realised that I didn't do it step by step (but it was too late, so I decided to try it anyway).  After I realised I cooked it for 5 minutes as it said and then mixed up on speed 6 for a few seconds to help get it off the sides and then kneaded it a little longer than it says in the book.  Anyway it turned out ! So I say chuck it all in lol.

Kids loved it.  It was very, very smooth and I just turned it out on the bench, split in 2 and then kneaded the colours into each.

Thank you Baf65, I'll be searching for the malt loaf over the weekend and will suprise my parents ! I tend to cook more recipes from the forum than the books really so have to have a think about whether tis worth buying another book.  The one I like the best so far is the Fast and Easy Indian, we absolutely love the butter chicken recipe in there. We usually make it once a week now.

Thank you so much cornish cream, I really appreciate it.  MMM  many of the recipes don't sound too English though lol.  Baf, do you have the Fast and Easy cookbook ? If so, what do you think of it (like compared to the Aussie ones I guess ). 

Now to the malt loaf lol, I think I might try the fruit cake recipe, thank you CC. Baf, which section did you find the malt loaf ? I think I might try and get hold of one and suprise my mum and dad with it.   I wouldn't have known that the best brand even if I fell over it, so thanks for that .

Isn't it funny how you crave the UK food you can't get here. Also Baf, I just made another post under Scottish tablet, re someone in brissie who imports a lot of UK food items.  Hmmmm I should look there for malt loaf (bet Wollies would be cheaper thougth), silly me LOL.

Hey has anyone tried this as yet ? I'd be interested how you went if you did.  I tried to make Tenina's fudge (link above) and ended up with sticky toffee. I will try it again though, once I'm ready for another huge sweet session. Tenina sent me another one to try but I've been battling with sick kids etc so haven't tried yet.  If anyone is on here from Brisbane, have you heard of Syd's Pie Factory at Tanah Merah (Bris south).  He imports a lot of traditionally Scottish / UK food and also makes Scottish Pies (really yummy).  The imports are not necessarily cheap, but not available anywhere else that we know of but he does keep a lot of obscure things you wouldn't normally see anywhere here (like curry sauce like the fish and chip shops use, UK sweets and confectionery, picalilly (sp?) . He also makes Haggis (yuck !), traditional black pudding (yuck too !), potato cakes / scones (yum), gammon etc etc.  Costs us a fortune when we go. My husband always buys tablet from there when we visit, but I will try making this recipe too.  Just thought you may like to know about it.  Here's the website if you're interested.  http://www.highlandflingproducts.com/, not sure whether he does shipping or not either but you can only ask.

Hi All,
I have relatives coming over from the UK in November, and am wondering whether to grab the opportunity to purchase:

“Fast and Easy Cooking” for TM31 with 300 Recipes, 3rd Edition
“Everyday Cooking” for TM31 with 214 recipes

I would get them sent to my Aunty in the UK for her to bring out to us. She's near Blackburn, so hopefully postage to her would be a lot more reasonable than to Australia.

Given our English background, I'm hoping these books may have some traditional UK recipes.  One in particular we'd really like to get hold of is Malt loaf.  My mum and dad looovveeee malt loaf and you don't really get anything like that here.

Thanks in advance if you can help.

Thank you Isi, we made these for lunch today and they were yum yum yum.  They reminded my husband of Scottish rolls that are not easy to get here. He was rapped so I've told him I'll show him how to make them and he can make them from now on.  The thing is, it's easier to make these than nip down the shop for some and they are so much more yummy!  Ohh and they got a big thumbs up from the kids too. Thank you.
