These treats are so unusual, not rich like chocolate but very creamy and more-ish. I wouldn't call them a dessert as such but probably the best category. Using only a few ingredients and a super quick process of adding all ingredients to your Thermomix setting it to warm and stir - then simply pouring into a tray or moulds to set in the fridge. No clumps or dissolving the gelatin separately or over the stove (although you could still do this if you don't have a Thermy), these turn out smooth and perfect every time.
Makes: 12, depending on moulds or tray used
Ingredients
250g coconut cream (270ml can)
20g (2 tbsp) cacao
20-40g rapadura (to taste)
1 tsp vanilla extract
20g (2 tbsp) gelatin powder
Method
Add all ingredients to Thermomix : 50 deg, 3 min, speed 4
Pour into silicone (or lined) tray or moulds, refrigerate for 30 min or more

Thanks KMW, I'm going to make these at Easter too. I think our local op shop had some Easter moulds, I should have bought them and am going to look again tomorrow, hopefully they are still there!

I've made these and they're in the fridge setting. I found I had a very small dinosaur mould, I think it's going to be too small though and I'll have trouble removing the shape. The excess I just poured into a small ice-cube tray so hopefully they'll pop out nicely. What is your method of a clean removal please.
Having said that Eva, I must admit to only using 1 of the ingredients from your recipe (the vanilla). I substituted the other ingredients with Carnation coconut milk, cocoa powder, raw sugar and gelatin leaves as I had none of the ingredient on your list. I'll give them plenty of time in the fridge and will unmould them tomorrow.

I hope they remove nicely from your dinosaur mould and ice cube tray Judy. I have always used moulds or mini muffin trays made of silicon where you can bend it, and they pop out. The other way I've tried is with a tray and lined with paper, then when set, lifted the whole thing out with paper and sliced into squares. It might be tricky of your moulds aren't flexible but hopefully they will come out fine. I think some people use hot water under their mould to remove if it's difficult but I've never had to do this. I look forward to hearing how it worked for you and also with your ingredient modifications.

Here are the tiny dinosaurs, it's a silicon mould so they weren't too hard to remove. Being so tiny though made it a bit difficult with the legs etc, I think the mould should be a lot bigger. These would be great for decorating a birthday cake or cupcakes and the taste is lovely. I'll unmould the slightly bigger ones from the ice-cube tray tomorrow.

It was so long ago thermilover that I can't remember. For a while there I was buying a lot online but this one is the same mould https://www.cakesaroundtown.com.au/dinosaur-silicone-chocolate-mould-p-6048.html, I doubt I paid that much though. Grandson has passed the dinosaur stage now so it was probably a few years ago.

You could try upp-ing the gelatin a bit to make them firmer hence removing easier from the fiddly legs of your moulds. I've made mine with little people moulds and the arms and legs are fine. Perhaps the sheet gelatin is a little different to my powdered one.

Yes I'll add an extra 1/2 a sheet next time Eva. The ice-cube snacks had to be dipped into boiling water to release so not such a good result. They're only for me so it doesn't matter, I love the taste of these little things. Definitely portion control LOL.

The little dinosaurs looks so cute Judy. I must make these for when my grandson next visits. I only have little heart shape moulds but I'm sure he wouldn't mind. :D

I saw the word chocolate and snacks in this post and decided I would leave it up to the other moderators to check. I gave in today and these look so lovely. I'm fairly sure I will weaken and make them.

Well I made some this afternoon, I put them into heart, chocolate and christmas tree moulds. I made 33 all up. I will admit that I used a bit of cacao and some cocoa, and the full amount of rapadura. The first bite was strange, they were just ... wrong. Looking at them, we expected a bit of chocolate texture, but soon enough we were over that. My youngest didn't like them, and my husband wasn't a fan. My eldest decided she liked them, but they were a bit too coconutty, and not quite sweet enough. I said we can play around with the ingredients and slightly change it to make it sweeter. I think they'd suit a coffee/latte flavour. I put the details into MyFitnessPal and they were only around 30 calories each, so I happily had two!

No Denise, mine aren't firm enough to travel. I'll add more gelatin leaf with my next lot but I'm really happy with the taste.

Glad you gave them a go spersephone :D, yep they are nothing like chocolates. It's one of those recipes to tweak and personalise, my diet is really low in sugar but I can imagine they wouldn't be sweet enough for lots of people. I love the coffee idea!

I had an unexpected call to sit the grandkids last night so I took some of these down to see what they thought of them. GD didn't like them but GS did, they both said they taste like mousse.

Julie, if you make them, try the mixture while it's still in the Thermomix before pouring into moulds because this will be what they taste like when they are done - and then you can tweak it to your personal preference before you commit to them becoming firm jellies. I'll be interested to hear how you go and if you modified :)

It tastes lovely though, I used coconut milk instead of cream and cocoa instead of cacao.. I was so excited as I got a new Fish silicone mould from IKEA and kept telling DD that she will be having fish jelly, but unfortunately couldnt even get them out...
I think I messed up the measurements, this time, more focus :D

I made a batch of these yesterday. I used cocoa and reduced the amount a little. I added 35g of caster sugar. I loved them. DH said they were like junket, DD suggested she take them to work, as she returned the half she hadn't eaten to me.
I took some over to some friends this morning. I warned them that they were jelly like and not a piece of chocolate. They loved them and have asked how to make them.
I'm enjoying snacking on the rest.

@Spice of Health : I used the vegetarian version which I found at coles, its called 'Jel it in', not sure if that will make a difference...
Over the weekend, I cleaned up all my kitchen cupboards and came across my heart and star shaped silicon moulds, so it is make-a-jelly day today again ;) Wish me luck!

Ah Thermilover, that would definitely be the issue.
That product isn't actually gelatin ... I've just looked it up and it is made up of Dried Glucose Syrup (from corn), Gelling Agents: Carrageenan, Locust Bean Gum; Stabilisers: Potassium Chloride, Calcium Acetate.
I've only tested my recipe with gelatin so it might take some experimentation with the jelly powder you have. One day I hope to do a vegetarian version with agar as I have that in the pantry and want to use it up 8)
I hope you can get it to work, perhaps take the quantities from their packet rather than my recipe. But you want yours to be really firm so you might need to use even more than they suggest. I'd love to hear how you go.

Just made these as the heart shape moulds turned up today in the post & they are delicious ... my daughter loved them to (had to limit her to 2).
I only use 20g rapadura sugar & they are plenty sweet enough for me. Most of all love how creamy they are & the cacao flavour comes through over the coconut.
Thought I try my Easter moulds as well & worked ok but much harder to get out as not flexible.
Definitely making for Easter :)

Oh wow! I'm loving seeing these made with all these different amazing moulds. I must get some Easter ones like yours Kerry but hopefully in silicone I must go shopping 8), and those mini bundt ones are adorable Cookie !!

They were a gift Eva, as was the large cookie mould. I poured the leftover mix into that one.

So embarassing to say that I failed at my second attempt too, will surely blame the Jel a tin powder and my impatience to do these... Love the taste, probably have to adjust with mousse for today... Most annoying thing, hubby giving that cheeky smile, I will prove him wrong next time by making a good one ;)

Oh no Thermilover !! Sorry to hear this! I hope they turn out as a mousse instead so your efforts (and ingredients) aren't wasted. I don't know if you would ever get the same gelatin 'rubbery' type jelling effect with the jelly powder you are using... I'm keen to try my agar one day to see what's possible as it would be good to have a vegetarian option too.

That's okay Slice of Health, I will surely give it a go again as I love the taste, and this time I had used Cacao and a bit of cocoa, and yes it turned out like a nice mousse, so no regrets, just that I will be eating it off the moulds with a spoon ;)
But not losing hope, will try again especially after such wonderful reviews :)

I have run out and will make some more, but I'd like a gelatine substitute, I feel a bit uneasy using that, although I'm not a vegetarian. It just feels a bit wrong. I want to think of a way to change the flavour of these a little.

I guess you could leave the cacao out and flavour them with almost anything. Perhaps freeze dried fruit would be nice.

Yes sky is the limit with different flavours, pureed fruits, fruit juices (eg lemon/lime), different milks, chocolate, coffee etc. Must try my agar agar when I get a chance, I would also like to create a vegetarian option.
