Sweet and sour pork with coconut turmeric rice . Rather yummy . Yet again another Skinnymixers, rice Thermobexta. Heaps of sauce , going to put into snap lock bag to freeze . Steaming the pork pieces made it tender as.

Judy and K Atie, all sounds yummy.  We love fish pie.  Best we ever had was at Rick Steins restaurant at Mollymook.  Think I might make one during the week.
Tonight stir fry steak and veg. Leftover rice from last night.
Yesterday I made a sort of Lasagna. Leftover Bol sauce , fresh tomato, frilled eggplant, grilled zucchini and the last of yoghurt and sour cream topped with cheese. Used up all the bits.  It looked good until I served it.  I asked RAL if her knew what Eton Mess was ?  Well I said, this is Invermay mess.  Tasted good Lunch.

Last night we had RTE Corn Chowder, it was very nice.

The Cheesy Pumpkin puffs were rather nice too. https://www.taste.com.au/recipes/cheesy-pumpkin-puffs/kngzb1ui

I am sure it was tasty Chookie .
Chunky Bolognese , oh no another Skinnymixers from Cookidoo. DS was going to make dinner and I had it all ready so just did it myself. Have to let them cook soon too. We had it with fresh twirly spiral pasta that was frozen . A quail shooter use to come all time and in return he would drop off heaps of pasta all shapes and sizes . He has now closed his shop I think , but did the best business ever at the start of the virus.

Made another batch of the crispy coconut biscuits. Most given away.  Posted recipe.  Going to experiment to see if I can make the coconut paste. TMX should be good for this.
Dinner to night chicken some way ??? Fresh fruit salad and yogurt ice cream.

Thanks Julie.  Not the same.  The coconut paste in the jar that was given to me is very white and not roasted.  However that does look nice. Judy also found a similar recipe.
The biscuits made with the one I have is very delicate but with a definite coconut flavour.  The closest I can get to explaining the texture is shortbread, but lighter and crisper.
I have added a note to the recipe as I found that if I mixed equal parts by weight I produced a similar paste. The TMX was excellent to achieve this.
I love the research and detective work that is done in such a cooperative spirit. Thanks.

You know Chookie that you could write your own cooking manual / cook book and it would be a best seller . The coconut paste sounds interesting.
Made date coffee muffins ( with decaf coffee ) . Greek lemon potatoes again and hunters chicken rissoles for dinner . Even have leftovers .

Thanks K Atie,  my cookbook is my blog.  Anyone can use it for free. It is playing up a bit at the moment.  I would rather cook than spend time trying to fix it.  Most of the recipes that I put on my blog, I also post on the Forum.
For Dinner tonight, skinless  chicken thighs, somehow??
Fruit salad again.
