Sour Dough Crumpets cooked in Pie Machine

If you have one of those 4 hole pie machines and plenty of SD starter,  then this is an easy way to make crumpets.  The big advantage over using rings and a frypan is that there is less mess. The disadvantage is that you will have less control over getting even  browning on both sides.  This is important if reheating crumpets in a toaster.  Not so important if reheating in a frypan as you can turn them over.   
Make a lot as these freeze well. This recipe will make 12 crumpets
Ingredients. 
2 cups active SD starter.
1 teaspoon carb soda
1 teaspoon salt
2 teaspoon sugar
1 teaspoon baking powder.
Canola oil spray.

Method.
Pre heat pie machine
Spray with Canola oil
Place dry ingredients into a 4 cup container, stir.
Tip in SD starter and stir incorporating dry ingredients from base of container,  until it starts to foam and fills container.
1/3 fill heated pie holes. ( about 1 full tablespoon )
Cook for about 7 minutes.  They should be mostly set on top. ( lift to see they are brown underneath )
Turn over and cook other side for a few minutes.
Cool in wire rack.

Make sure pie machine is reheated for the next batch. Lightly spray again with Canola oil.
I pop 4 into a sandwich bag to freeze.

Yes, only close the lid to heat up after each batch.

Katie gave me 2 cups of SD starter so I have made half of this recipe Chookie.

1 tbspn seemed not quite enough for my pie maker, the 4 on the LHS were the first made using that quantity.  6 minutes all up for that size.

The middle 4 had a good 1.5 tbspns mixture in them, a much better size.  6 minutes, turned & cooked a further 2 mins.

Only a small quantity of mixture left after that so the last 2 were halfway between the size of both the above, thickness wise. Cooked them 6 minutes, flipped then did 1 minute.

Happy with the colour and method, for me it was much easier than making in a frying pan in egg rings, I will see how the bigger ones toast up in the morning for breakfast. The bases are a nice, even colour.

I’m feeding up my starter to make bread so I will give it lots of food so I can make some of these in my pie maker.
Judy did you turn them in the piemaker? They look very tasty.
May all dairy items in your fridge be of questionable vintage.

Yes cookie, as per Chookie’s instructions, for the last minute or so. The lid is not shut at any time.

Judy and Cookie,  I find it best to ‘ toast ‘ them in a dry fry pan.  You can control how brown they are on each side.
 Also practice will give you the right thickness. Took me a while to get 6 from 1 cup of mixture.

Had egg & crumpets for breakfast. Tried the toaster method first and they heated well and evenly so this recipe is a winner for me.  I will feed the starter up just prior to making the next batch Chookie, that may give me more mixture to play with even if I only make half quantity.

Sweet or savoury - it just shows how different we all think.  I’ve got some cream floundering in the fridge so I’ll try jam and cream for dessert tonight girls LOL.
