Mich made the suggestion that we should have a challenge involving our mini square cake tins. I checked with Denise and Judy and we think it's a great idea.
Our challenge is to make something ( anything) in the mini square or mini rectangle tins. I'll put a photograph of both up at the end. It can be sweet or savoury or even in between. ;D
If you are going "phew I don't have them," then you still can't escape. Your challenge is to make something that could be made in either of these tins. Which is basically anything.
Please post your results here and if it's a new thermomix recipe please post that too. One of the moderators will copy the recipe to the appropriate section. Or if you are really wonderful you could post it here AND in the appropriate section. ( you get a hug for that extra effort).

I've been living out of the freezer for the past 3 weeks but I still have at least 2 week's supply of food I'd like to use up before adding anymore meals so I may or may not join in on this one unless it goes on for a few weeks. However, you never know - this thread may inspire me so much that I'll get my mojo for cooking back and want to join in sooner.

I have both sorts of tins, so no excuse not to join in.
I've been hibernating a bit the last few weeks and not cooking much other than quick dinners, so maybe the challenge might inspire me to bake something.

Pistachio and Lemon Loaf
250g unsalted butter, room temperature
250g golden caster sugar (see note below)
4 large eggs, whisked
Zest of one large lemon
Seeds from one vanilla pod
120g pistachios, ground
100g almonds, ground
40g plain flour
Favourite lemon icing or drizzle recipe and 60g of chopped pistachios for decoration.
Method:
* Preheat the oven to 150 degrees and prepare pan.
* Beat the butter and sugar sp3 for 3-4 minutes until light and creamy.
* Gradually add the eggs into the mixture until combined, then add the vanilla and lemon zest.
* Add in the ground nuts and flour to mixture mix sp 5 for 40 secs.
* Divide mixture and place in oven. For 2 9cm x 18cm pans the time guide was 35 -40 mins. (see note below)
* When baked, remove from the oven and leave in the tins for about five minutes before removing.
* Ice when cooled.
NOTE 1: I couldn't find golden caster sugar, apparently it's very popular in the UK. When I googled, it is a raw caster sugar with a buttery flavour. I used raw sugar and processed in TMX.
NOTE2: My oven is on a go slow today. I set it at 160 degrees and it still took 35 minutes to cook mini loaves. :-))
This recipe was found on The Little Loaf blog and she used a syrup to drizzle over the loaves.

Great idea ladies; I sometimes need a challenge like this to make me do something. Have to cook for a sewing afternoon tea tomorrow so will make the little cakes I use in the rectangle one. Will try to post a photo but if not I might send it to you Cookie to make magic.

Great idea but I'm confused about what you said cookie (not hard to do these days). I don't have these tins, so how do I make something that "could go into these tins"?

Sorry Kimmy. I can be a bit obtuse at times. Your challenge.......should you decide to accept it. ;D ;D
Is to make anything at all that could be cooked in this type of tin, but you will bake it in whatever you have. For example I think a muffin would go in these tins as well as muffin tins. Tonight I made small quiches in my square tins, if I didn't have the tins they could be made in a round tin.
I hope this is a little clearer. ( I fear maybe not though) :P :P

Yes that's quite clear cookie. Good on you Michele for firstly the idea of the challenge and then to be the first to come up with a recipe. It will be interesting to see if sweet recipes greatly outnumber savoury ones - my bet is yes.

I had a container of spag bol sauce out for tea tonight, I knew there was a large fresh lasagne sheet in the fridge so, because it was so easy I've done my first meal for this challenge. All I needed to do was make a batch of EDC bechamel sauce and I ended up with 4 individual lasagnes in my 7 x 11cm mini loaf tin. I also had the garlic bread in the freezer. Only problem is that I won't be able to refreeze them but that's not a problem. I'll eat them over the next few days then won't have lasagne again for a year or two ;D

Thanks Denise. I rarely have lasagne and I really enjoyed it. The serve is big enough for me but a male would need 2 of them. Baked 180o for 25 minutes and used cake release to grease the tin.

I have a couple of the mini rectangular tins and use them often. Banana bread is fantastic - it is just the right serving size (I have tried many banana bread recipes and can honestly recommend Tenina's version with Choc chips).
I pretty much make any cake recipe in it - lemon and blueberry loaf cakes, spiced apple cake, orange and poppy seed cake and apple, Ginger and honey cake all work out well. They are a great size to take over to anyone who lives by themselves - they can freezes a couple and just defrost one whenever they feel like some cake.
Like cupcakes but much less fussy!
Apple Ginger and Honey Cakes
3 Large Granny Smith Apples
110 grams butter
220g brown sugar
2 eggs
11/2 tsp powdered ginger
225g whole meal spelt flour (or just use plain white flour)
3 tsp baking powder
2 tsp warmed honey
Method
Peel and core 2 apples. Add to thermomix and pulse TURBO twice. Set aside.
Add butter and brown sugar and combine speed 5 / 30 secs. Turn it down to speed 2 and add eggs one at a time through the lid.
Add flour, ginger and baking powder and combine speed 5 / 10 secs.
Add apples and KNEAD for 30 secs. Finish combining with spatula.
Spoon into mini loaf tins (makes 10-12) and place a thin slice of the 3rd apple on each of the loaves. Brush with the warmed honey.
Bake at 160 fan forced for 20 mins or until cooked.
This recipe is converted from a recipe which was in Homestyle NZ a few years back.

Judy, why can't you freeze the little Lasagne slices? If they are cooked again they should be OK.
I just remembered that I gave this cooking pan to my DD to make mini quiches for GC lunches. Not to be put off, and I love a challenge , I made Banana Spelt and Honey cakes in small individual dishes. The recipe is practically the same as Snappy's recipe except that it has banana instead of Apple. I will not post but have another recipe to try.

The bolognaise sauce had already been frozen Chookie, I didn't think it would be safe to refreeze something like that. I don't mind having them every day, a quick meal after I get home from visiting is exactly what I want. I made a pot of soup last night too so it will be soup for lunch and lasagne for tea for a few days. I'm busy 'spring cleaning' my house at the moment, one room at a time so if I'm not having to cook it frees up time to do other jobs.

These are the small Banana, spelt and honey cakes. They were made with wholemeal Spelt and were even nicer the next day.

These are my first contribution. I do hope it works as the last one is up in cyber space. Chookie your goodies look delicious and Ral on the tractor seems to be enjoying himself.
Mini Cheese and Quince Quiches
Serves. Makes about 9 in the square tin
Ingredients
1 sheet frozen puff pastry
100g chopped camembert
1/4 cup chopped quince paste...I used plum paste
1 egg
1/4 cup cream ....I used milk
chives for decoration
Preparation
Preheat oven to 200 degrees
Remove pastry from the freezer and allow to defrost.
Cut out squares to suit the tin. I used a square cutter but you could just use a knife.
Grease the tin.
Put pastry in each space.
Place a small piece of camembert in each.
Place a small piece of quince paste in each.
In thermomix bowl:whisk egg and cream. Speed 4, 10 seconds.
Pour into each square, you will only need a little.
Bake 10-15 minutes.
Cool in pans 5 minutes before removing.
Serve hot or cold, sprinkled with chives.
I based this on a recipe from The Women's Day

Cheese & bacon Hash Browns – makes 12
These are best made in advance and reheated as they become nice and crisp like a large ‘potato gem’ (I’ve never bought frozen hash browns). Crisp on the outside and light and fluffy on the inside. I reheated mine in the air fryer - 20 minutes 190oC.
Ingredients
100g cheddar cheese, cut into chunks
85g eye of a bacon rasher – 5 pieces approx. Cut into 6 pieces.
2.5 tblspns olive oil, divided
3 x 200 – 240g potatoes (peeled weight) See note below.
¾ tsp salt
Ground pepper to taste
Method
Grate the cheese 3 sec/speed 8. Remove from bowl.
Add the pieces of bacon to the TM bowl and chop 1 sec/speed 4. Cut any remaining larger pieces by hand before adding 2 tspns oil to the bowl.
Sautee 5 mins/100o/spoon speed/reverse. Set aside.
Cool the TM bowl by filling with cold water and wiping out with paper towel.
Working with only 1 potato at a time, cut larger ones into 8 pieces (weighing approx 40g). Place the pieces of 1 potato only into the TM bowl and chop 2 sec/speed 5, scrape down sides and chop 1 sec/speed 5. If you are happy with the grate after 2 seconds, then skip the second shorter chopping but for me these times and potato weights worked perfectly. See note.
Place the grated potato into the steaming basket set in water then grate the remaining 2 potatoes the same way. This will remove the starch and prevent the potato going brown whilst you do the next 2.
Rinse the contents of the steaming basket under running water for a few seconds until it runs clear then taking 1 large handful at a time, squeeze out the excess water and place potato into the TM bowl.
Add the bacon, 2 tbspns oil, S & P and the cheese. Mix 10 sec/reverse/speed 3. Tip the mixture into a large bowl as it will be easier to work with, giving it an extra stir if ingredients are not combined properly.
At this stage preheat the oven to 180oC.
Grease a 12 hole 4.5cm x 6cm mini loaf tray.
Fill each hollow with 1/3 cup of the potato mixture. Press down firmly with the back of a spoon.
Bake 30 – 35 minutes. Mine took 35 minutes on the rack just above the centre of the oven. Leave sit for 5 minutes before removing from the tin.

I like the fact that these can be made in advance then reheated in the oven to crisp up again. You need the second reheating out of the tin to crisp up the bottom of the hash brown.
They are also suitable to freeze once cooked. To reheat, thaw in fridge and crisp up for 15-20 minutes in a 190oC oven.
Potatoes – you must use starchy potatoes for this recipe. I used one suggested which is the brushed potatoes (with dirt on them) called Sebago. The grating time is perfect for my machine. If you have a new machine or new blades, the chopping may be sufficient after the 2 seconds. I tried 2 sec/speed 6 and it turned into pulp!
Next time I make these I'm going to leave out the cheese and bacon and use butter instead of olive oil as I can't see why that won't work. It will be quicker, cheaper to make and have less calories. I'll let you know how I go.

Wasting time on the computer I have discovered that the rectangular tins were often called 'financier tins' as they resemble the shape of a bar of gold.

Lovely quiches Cookie and I love camembert cheese. Will be trying the banana and honey loaves Chookie. What dear little loaves of bread CC - they would be nice for a dinner party. Will give the hash browns a go too, wish I had that recipe when I was making big breakfasts over the long weekend. Thanks for the link to the recipe Cookie, sounds really yummy.

I decided to give these a go today using the No Fuss Bread Roll recipe. Might try some small fruit cakes tomorrow.
I don't have any very small tins but found these small tin foil cups in the cupboard and I have no idea why I bought them. The larger tin I use to send home food with DS when he visits.

I made some little bread rolls in my rectangular tins this morning before my friend arrived for a card making day. We had Jo's chicken and brown rice soup with it. The rolls had zucchini, cheese and bacon. They were more or less the same as rolls in under 1 hour (came from the other site). Most have gone but will try a photo.

You all are sooo inspirational, I am loving all these wonderful recipes and the idea of making them in serve size tins rather than a big one.. I dont have a square tin but do have a muffin tray in which I make Karen's Cheesy Veggie Muffins very often as it is hubby's go-to snack these days...
But now I feel inspired and would like to try something different in my muffin tray, will surely let you guys know how I go :)

The more who join in the challenge the merrier thermilover, we post these from time to time and find it really does inspire people to think outside the square and live up the forum at the same time.

I know you all love Nan's Curried Tuna Slice (http://www.forumthermomix.com/index.php?topic=10715.0) so this was my next recipe for the challenge.
I lined the bottom of the oiled pans with baking paper, some just the bottom and others up the sides to use as a handle for ease of removal just to check which method worked best. Baked for 25 minutes only as I under bake when something is going to be frozen and reheated later. 30 minutes and they would have been nice and brown on top if you wanted to serve immediately. Leave to rest for 5 minutes before removing from the tins.
Those with baking paper up the sides worked best of course but if they were allowed to cool completely, the other method would also work.. Me being a bull at a gate, couldn't wait for that to happen of course so they were quite difficult to remove in a tidy piece.
A perfect recipe for this challenge and that's me for a while as I'm eating out for the next 3 days.

Today I tried out the Thermomix Boiled Fruit Cake (http://www.forumthermomix.com/index.php?topic=8995.msg372433#msg372433) in the little tin foil cups. I did put half a cherry on top of each one but they all sunk.
Thought these might be a good idea for my Christmas hampers only I will make them a bit larger.

I made the Nutella Financiers from the forum today. I didn't get the entire tray filled. I reduced the sugar by 30g but still found them very sweet. They were nice enough but not quite earth shattering.

Uhoh, I can see some shopping happening as I don't have squares or rectangles. What an oversight! DH will be pleased (hehehe)
In the meantime, I need lunches anyway so will do my standby risotto cakes in my muffin tins. I love little tins for single serves :)

Bedlam I was just looking at your post and recognised the black and white material in the corner of the photo; I have been given a great length of this for some sewing I do and used a bit to make a gift for the lady who gave it to me. I made her a bag and coloured most of the white leaves in autumn colours; she loved it.

I love this challenge but haven't had a great deal of time for baking. Love what everyone is making.
We have a friend who ran a B and B. She baked as many things as possible in single serves. She said it was more economical , convenient and looked better on the plate.
After next week I will have more time so hope this challenge continues to run.

I also made some in individual pie moulds, but the smaller tarts were nicer. I didn't have flaked almonds, so I used slivered almond instead.

Everyone's food looks amazing! I have been inspired to go and buy the square or rectangular cake tins. So far I haven't had any luck finding any. May have to go to Kitchen Warehouse, is that where everyone has got them?

These are Tenina's Rye rolls. She used Crio in hers but I didn't have a lot left so decided to make a drink from it instead. We had them with Cauliflower Soup.

Yes they are Suzanne. I just used water instead of the Crio liquid and omitted it further on in the recipe. It was so cold yesterday they didn't want to rise, so I ended up putting them in the oven with a bowl of boiling water.

I got my rectangle one in Coles or Kmart and not expensive.
Yesterday I had a guest for lunch so made bread rolls in mine from Bread Rolls in under 1 hour - I just love this recipe and use it so often. I will ask one of our experts to post the picture for me so you can see how they look.

The recipe is well worth trying CC; I let them rest for a bit longer than the 10 minutes it says but it is still very quick.

Mini Salmon loaves & potato bakes - both nice but the star of the show was the potato bake.
Spray pan (I used cake release), layer 1 cm thick slices of cooked potato, S & P, finely sliced spring onions mixed with some garlic paste or crushed confit of garlic, cover lightly with cream and parmesan cheese. Make 2 layers. Bake 180oC fan forced for 25 minutes. Leave in pan for 5 minutes before removing with an egg lifter.

Cookie, Coles had 1 tin left with the 12 squares in it. Still on discount too, $5.60. I looked at BigW, same thing was $14, so glad I went to Coles, thanks for the tip off.

Well finally got into this challenge. Bought the tin for $5 at Coles, reduced from $7. Cooked bread of course . Square bottoms and round tops. Used Cookies Vienna bread recipe.
Tomorrow will make square butterflies for GC, using 'quicker than a packet mix'

Made 2 lots of 'Quicker than a packet cake. '.1 lot plain the other made with Manderin sugar. This recipe fits perfectly into the 12 square pan.

Cute Chookie.
I've made 4 Toads in the Hole in my tin this morning - the toads are hiding ;D & the 2 on the RHS are mashed potato topped with butter which went in when the oil was heating up. For the mash, I lined the holes with baking paper so they would remove easily. I precooked the sausages in the WeberQ for 6 minutes. Onion gravy, zucchini & carrot timbale and pumpkin from my freezer supplies.

Thought I would see how Belgium lemon Tea Cake recipe would go for this Challenge. Surprising well.
The stall holders at the Farmers Market arrive very early to set up their stalls. They usually buy a coffee to warm up. I take a cake for the the stall holders that I regularly buy from. Tomorrow I will take these. The basic recipe makes 11.

Katj, I used the basic recipe and had a little of the lemon filling over. I brushed the tin with cake release and put a tablespoon of lemon filling in each. Although fiddly to make , I will make again but will make glazed lemon slices to place on top. I gave one to a friend to taste. She has a Cafe and wants me to make some for the shop. No way.

Loving all these individual serves of cooking and if you don't have the pans like that you can use a muffin tin, ramekins, mini anything really. :D
Last night made individual sticky date puddings from the everyday cookbook - added 1tsp of ginger powder and 1tsp of all spice.
